Intro!

by Chocolate-Covered Katie on September 1, 2007

Hello blogging world! There are so many great vegan blogs out there that I hesitate to start another one… but I’m going to anyway lol.

I’ve been borrowing ideas from all the other vegan blogs for so long that I figure it’s high time I start my own. So here’s an intro to me: I’m a college student who’s lived around the world and currently goes to SMU, in Texas. (I transferred from Bryn Mawr in Pennsylvania.) I’ve been a vegan for about 7 years (vegetarian for a year before that). I am an avid animal-lover and became vegan whilst living in China, which was easy to do because they don’t eat much cheese and ice cream there (my favorite non-vegan “foods”).

I am trying very hard to gain weight by eating lots of healthy (and oftentimes not-so-healthy lol) high-calorie vegan foods. I am super-skinny, but it’s NOT a fault of veganism, as my omni mom and grandma also had amazingly speedy metabolisms and struggled to gain weight growing up.
I’m happy to be part of the blogging community!!!

Hello! I’m not sure how I stumbled onto your blog, but I’m glad I did. I look forward to hearing about your adventures, and stories from all the places you’ve lived (I’ve also moved around a lot in my life).
Cheers!

You are adorable Katie! I love your blog! Initially I was “forced” into becoming vegan because I found out I was allergic to dairy products and eggs. I was already vegetarian. And, I was diagnosed with breast cancer in 2009. I changed my lifestyle and beat cancer! It is with the help of blogs like yours that I have become a creative cook with healthy foods. It goes to show that you can eat ultra-clean, enjoy food, and restore health! Keep up the good work Katie!

I’d probably die if I could find my first post. It was on Diaryland or something, hahaha. Your first post rocks, though. You’re too cute!

Oh, wow! I’ve been on a quest for gluten-free, dairy-free baking that is within the resources of a college student. (In terms of expense, yes, but also just prep time, equipment needed, practicality of storage, etc. – so single serving desserts? Revolutionary.) Your blog is a convenient resource and it looks like you have so much fun with it, that I’m now dying to try some of your recipes! So thank you. I also wanted to say that it’s uncanny how perfect this is for me. Case in point: I just transferred from Bryn Mawr.

That’s so cool! (Well, not cool that you had to transfer… but cool that I know someone else in the same boat ;) .)
I loved Bryn Mawr, but I never regret my decision to leave. Hopefully you’ll feel the same way!
