I’ll start off with a picture of my amazing afternoon snack today– apricot cheezecake! I bought a slice at a restaurant about a 1/2 hour away from my house; it was so reminiscent of “real” cheesecake that I had to call the place to make sure it really was vegan! Once assured, I happily gobbled it all up :o).
Next, this was dinner:
Going clockwise, we first have kale sauteed with olive oil, garlic, tomatoes, and other spices. Next up is a mass of refried black beans, followed by curried cauliflower (it’s from Whole Foods) and quinoa made with veggie broth. Finally, in the middle is some peach jam, because I like it on my quinoa (odd, I know).
