Easy Meals

What do you serve on those days when you’re soooo busy with everything else that there’s no time to even think about—let alone make—a gourmet meal?

The following are two recipes I know I can count on; they’re both easy, quick to make, and taste delicious.

(Of course, stir fries and pasta marinara are two other no-fuss meals that every vegan should have in his or her cooking repertoire.)

Easy Meal #1– Fiesta Sweet Potato Burritos

Gather your ingredients together:

  • A can of refried beans (such as Old El Paso Vegetarian)
  • Fresh spinach
  • One cooked yam per person (yams baked in the oven are much sweeter, but you can cook them in the microwave if you’re in a time-crunch)
  • Whole wheat tortillas
  • Salsa, for dipping (optional) (Try peach salsa for a fun variation.)
  • Shredded vegan cheese (optional)

Once the ingredients are out, you’re ready to make the meal. You can either build the burritos ahead of time, putting 2-3 on each plate (or however many you’d like), or you can bring all the ingredients to the table and let each family member construct his/her own: Playtime!

Layer the ingredients onto the tortilla, starting with the refried beans, then the yam, then spinach, and if you’d like, the vegan cheese. Depending on your preference, you can add salsa straight onto the tortilla, put some on the side for dipping, or forgo the salsa altogether. Eat up :).

Easy Meal #2– Chick’n Parmigiana Sandwich

I have a vegetarian friend who adores this super-quick and tasty lunch. All you need is a microwave! Simply heat up a chick’n patty (such as a Health is Wealth brand patty for a minute), then place it on a roll, bun, hoagie, etc. Shred some vegan cheese (such as Vegan Rella) into some marinara sauce (I love the flavor of the Hunts basil, garlic, and oregano 8oz cans) and heat this, too, in the microwave. Pour the marinara liberally over the chick’n patty and bun. Congratulations, you’ve just made a delicious chick’n Parmigiana sandwich. Now eat it quickly so you can get back to stressing out about your day!

    Great entry!

    I like to make Near East tabouli from the box (homemade is much better but takes much longer!). I follow the box directions but add a can of rinsed/drained chickpeas and a diced avocado as well. With some carrot sticks, it makes a good meal!
