After brainstorming all sorts of possible uses for the peppers, I decided on something I’ve been wanting to try for a while– Gumbo. I found a recipe in one of my mom’s cookbooks and set to veganizing it. I substituted black-eyed-peas for the meat and added extra okra, because I adore that squishy green vegetable. The result was a delectable, hearty veggie gumbo.

Ingredients

  • 2 cans tomatoes
  • 4 sliced bell peppers
  • 1 onion
  • 1 lb okra (I used frozen)
  • around 1/2 cup chopped celery
  • lots of garlic
  • 6 cups veg broth
  • 2 sliced zucchini
  • 1 lb okra
  • 1 or 2 cans black-eyed-peas
  • 1 tsp salt
  • 1/4 tsp cayenne (or hot sauce to taste)
  • 1/2 tsp liquid smoke
  • 2 bay leaves

Instructions

Bring all ingredients to a boil in a large pot. Cover and simmer until veggies are tender. Or make in a crock pot. Makes a large amount, and it’s twice as flavorful the second day.
