Muffins and vegan cheese and brussel sprouts… Oh my!

Although the plethora of cake posts on this blog may suggest otherwise, I am actually a very healthy eater.

Above, dinner from the other night. I marinated a bunch of seitan in Jamaican Jerk sauce, then served it with quinoa pilaf, steamed broccoli, and a salad with tahini dressing. Healthy and delicious; no crumbs left.

Dinner last night was Portabella Pizzas.

Here they are cooking. Next time I’m going to try ’em in the toaster oven.

The finished product was served with garbanzo beans, sauteed Brussels sprouts, and three oat bran muffins, hot from the oven. Again, no crumbs left.

I go to that veggie garden lot’s because I am up in Richardson pretty often.

I like how the new start veggie garden has some stuff that isn’t Asian food… because while I like it.. I get sick of Chinese and Indian.. which is just about all we’ve got(Until Spiral opens soon!!)
