Stop by for Pie!

Lately, many vegan bloggers have been incorporating pumpkin into delicious-looking recipes; I was beginning to feel quite jealous… Then I realized– Hey, I can enjoy a yummy pumpkin recipe too! All I needed to do was stop lazily coveting OTHER peoples’ foods and get my butt into my OWN kitchen!

Behold the autumn-y goodness of a warm, freshly-baked, crustless, vegan pumpkin pie (you think there are enough adjectives in that title?).

So now YOU can be jealous of ME ;o).

Don’t worry, I am plenty jealous right now!! Pumpkin is just so versatile, I love it…
Now I can’t wait to get home tonight, I’ve got gingerbread cookie dough in the fridge just waiting to be baked!

yum!!! that pumpkin pie looks incredible!!! although, I must say, I DO like a graham cracker crust on my pies – it looks rather naked without it ;0)

I LOVE all things pumpkin! And I’d definitely stop by for pie…if I was in Texas, of course. ;-)

I AM jealous. I’ve been so busy, I haven’t had time to properly plan a Halloween/autumn recipe!

Instead, I will look at this delicious pumpkin pie and dream . :)

Ooh, crustless pumpkin pie.. I never really eat the crust anyways, it just seems like a waste of space to me. That pie looks fantastic! (Love the purple fingernails, by the way!)

Oh pumpkin… yes I am jealous and do need to buy some pumpkin and start making some pumpkiny goodness. (For some reason I’m really craving either pumpkin soup or pumpkin bread).
