Wind Power

Chicago may be called the Windy City, but Dallas is the real Windy City! Every day, I ride my bike from my apartment to campus, and usually I love the 15-minute ride. Yesterday, however, the wind was so forceful that, on my way back from class, it actually lifted my bike (and me!) into the air! Later in the day, the wind took down a power line on my street. But anyways…

I don’t have much time to write a big, elaborate post today, as schoolwork is calling me. So here’s a picture of my dinner last night– I threw it all together really quickly before heading back for another class.

Above, maple-marinated seitan (with extra maple marinade for dipping), steamed asparagus, mashed cauliflower, a Luna bar, and the world’s tiniest apple

After dinner, I had a lab class, which meant another windy ride to campus!

Yum! Your dinner looks delicious. I’ve been craving asparagus lately but it’s so expensive these days =(

Oh, is that just the sweetest apple …

I must have polished off at least five or six apples last week (I went on a binge). I figured that was enough for a while. But now, well, I seem to want another.

You are, of course, to blame!

Yep, that cold blew in last night here too!! Sounds like you need to add some more calories if the wind lifted your bike :-)
OH, and a grea sub for mashed potatoes… mashed cauliflower, sounds delicious!

At least you had a healthy and yummy looking meal! Hopefully it filled you up and kept you from blowing away on your ride back to campus!

Wow. That sounds kind of frightening. I’m terrible with bikes to begin with… I think that would have caused me to stick to the bus.

Is that a cookies and cream Luna bar? I’ve haven’t come across that one yet. It sounds good.

Green asparagus is heaven. I should really buy it sometime soon. I’ve never mashed cauliflower, but it seems like an obvious idea. I love how every entry people post one automatically gets so many ideas what to cook next =)
Ohh and tiny apples, I love them! I just bought an 8-pack of apples no bigger than my fist <3

Ohh and about the windy bike ride. I’m very short and skinny and everytime the wind blows a little harder I get so scared that I might get blown away, ha ha =p That actually happened to me one time(I was only 6 though). But luckily there was a pole I could hang on to.

If you want I could send you the recipe for the Banana Chocolate Pudding Brownies. Just not online, you know the deal, copyright la la. But I always think to myself “You can’t expect people to buy a whole cookbook because of one recipe and when someone already has the book, why not share it?”
I’ll try the Pear Cranberry Tart today and make the brownies on the weekend I think.

So true about the boyfriends ;)
Thank you SO much for the links. Muahaha, now there’s no more denying for him!
Oh and he might have type 2 diabetes(he’ll get the result today) and supposedly veganism can help to improve ones fettle considerably. Is that true?

It’s probably not very nice, but I giggled at the image of you being blown away on your bicycle! Load your backpack up with heavy books and Luna bars when you head out to class today, we don’t want you disappearing!

After reading that the wind LIFTED you into the air, I am glad to hear that you survived your bike ride. Sounds like it was a scary ride, so thank goodness you’re ok.

I would take your dinner any day of the week! Everything on your plate is 110% Ruby Red Vegan approved. I like how you have an extra dipping cup of maple syrup for your maple seitan. I do love maple-glazed tofu, but I want some of your seitan!!

Hey, I just ate that same flavor Luna bar for breakfast! Be careful biking…we wouldn’t want the wind to carry you away. :)
