Wacky Weather/ Comforting Cooking

It’s official: Mother Nature has lost her mind.

Yesterday it was 70 degrees here in Dallas, bright and sunny, and I was wearing shorts.
Today? Why, today it is 39 degrees and snowing (just a few flakes, but still…). Yup, Mother Nature’s really lost it this time, the poor dear.

When I got out of class today, it was raining, so my best friend and I decided to go for a nice, long walk and jump in puddles! We were thoroughly soaked by the time we came back… but sometimes it’s really fun to pretend you’re six years old, without a care in the world ;).

Cold weather calls for comfort foods, and there’s nothing more comforting to me than roasted veggies. So this afternoon I roasted up a big ole batch of brussels sprouts. Not only did they make me nice and toasty, the oven made my apartment quite warm as well.

I don’t know why the little guys get such a bad rap when they taste so delicious!

To roast b-sprouts:

  • Wash the sprouts, cut off the ends, and then chop ’em in half (or more, if they’re super-huge).
  • Drizzle/sprinkle with your favorite oils, herbs, spices, and/or sauces (I like Italian seasonings, salt, and garlic powder)
  • Roast at 400 degrees for 15 minutes
  • Toss/mix, then put back in the oven for another 15-20 minutes (or longer if you have a ton of sprouts to roast or if you like them extra-soft)
  • Eat warm or cold, depending on the season.
  • Call your mom and brag about the fact that you LIKE brussels sprouts!!  (Then call a doctor to come retrieve poor Mommy off the floor.)

    I know exactly what you mean about the weather. Ours is as crazy as that, if not more. I think last year in the middle of may it was hotter than a Summer day… and the next day it snowed!

    I’ve never had roasted brussel sprouts, unfortunately, but they look SOOO good.

    My hubby told me about the drastic change in weather (I’m in cold calgary right now)… how crazy!! But that’s Texas I suppose. Glad you get out and enjoy both extremes.

    I was afraid of brussels for all of childhood and only discovered them maybe a year ago… wish I had long ago!

    I LOVE Brussels sprouts. They are so delicious! The only reason I can think of as to why they have such a bad reputation is maybe people only remember the canned, overcooked junk that was served in school cafeterias??? If you lightly steam or roast them, WOW! So flavorful. Yours look really great!

    brrrr, I agree, this has been some crazy winter weather! Snow in dallas – wow! We’ve had the same thing – we’re nice and way down south like you, and yet we’ve had snow t-h-r-e-e times… I’m still in shock. This is not supposed to happen. :-p

    Your brussel sprouts look like the perfect way to warm up, though! Yum! I agree with you – they’re an undeservedly underappreciated veggie. Yours look so gorgeous I’ll bet you could convert quite a few people, though! 🙂

    roasting veggies is the best. it took me more than two years of veganism to find this perfect way of perparing veggies. and brussel sprouts are particularly yummy when roasted. yours look great 🙂

    Yum!!! You know, the weather here has been the same….it was 70 degrees this weekend, and this morning, I saw the first snowflakes we’ve had all year. Crazy! At least, we didn’t have tornadoes this time.

    Brussels sprouts are the BEST comfort food! Your roasted sprouts just turned out to have the most gorgeous colors.

    Ooh crazy weather for you! I hate snow and getting dirty from jumping in puddles, but it sounds like you had some silly fun. 🙂 It snowed here today too and my last class was cancelled – score! But my feet got completely soaked from the slushy snow, which is reason #1 why I hate it.

    yep mother nature is a bit schizoid lately, poor dear. but those brussels sprouts look AMAZING!

    I haven’t ever tried sprouts that I actually liked but I suspect it has less to do with the vegetable an dmore to do with the fact that I have never prepared them myself (ie they were mercilessly over-cooked by my mom).
    I REALLY need to get aroudn to those one of these days…
