Still in the Mood?

(For peaches, that is)

I hope so, because another “Just Peachy” recipe is coming your way!
But first, I know you all really want to hear about my day yesterday. What’s that? You don’t want to? Haha too bad– you’re going to anyway!

Yesterday’s schedule:

Wake up. Eat pre-run snack. Go for long run. Eat breakfast. Bike to class. Write ten essays. Bike back home.

Wait.
Let’s backtrack a little, shall we?

What was that about “write ten essays”? No, you didn’t read it wrong. I really did say TEN. My philosophy final exam consisted of five, paragraph-long, short answers and TEN essays. So basically, I had three hours in which to write The Great American Novel. Not exactly fun. We were given a blue book with 8 front-and-back sheets of looseleaf inside (so 16 pages total) but I had to ask for ANOTHER book because I filled up all 16 pages! Each essay I wrote was AT LEAST a page long. All those poor trees…

But it’s summertime now, so thankfully no more killer exams are looming in my near future. I can concentrate on other, more fun things– like oatmeal!

Peaches ‘n Cream Oatmeal Dream

½ cup oats
1 ripe peach
2/3 cup soymilk of choice (I use Vitasoy Light Enriched)
1/3 cup water
Salt

Optional: 1 tsp of brown sugar (I never need it, but when I make this for my mom, she likes for me to add it in.)

1. Prepare otmeal according to directions on oatmeal container, using soymilk and water as your liquid.

2.Put the cooked oatmeal into the blender or food processor, along with the peach and optional sugar.

3. Give it a whirl!

Ooh, I just had another thought: Instead of adding the sugar to the blender, you could add some vanilla soy ice cream!

(Yes, I am having a little too much fun playing with Photoshop…)

    TEN essays? Are you serious?! I thought that my prof giving me two essays was more than enough (along with identification questions).

    You poor thing! You deserve a nice long break!!

    I’m not a peach fan, so I probably won’t be trying that oatmeal! But ten essays is cruel and unusual punishment. How was your hand feeling??

    Are you kidding me? Is your prof trying to induce mass suicide?!!? I’m so impressed you got through all of that! I get overwhelmed just by one essay… D: That’s totally the reason why I didn’t take any philosopy/history/english classes~

    But at least exams are over now! Oatmeal time for everyone! 😀

    I should go buy some peaches…peaches & cream sounds delicious–especially the ice cream part…-drool-

    And I don’t think there is a think as too much peach, but that’s just me…. 🙂

    I remember my first final freshman year: 6 five-paragraph essays in three hours. Not exactly a good first impression of collegiate examinations! Anyway, I feel your pain.
    The peaches n cream oatmeal sounds delicious. It reminds me of those flavored packets I used to eat as a kid–I bet yours is WAY better:)

    OMG are peaches already ripe there? I am so jealous. Send some to Oregon to get me through? 😉 Peach oatmeal is one of my favorite foods. I add brown sugar and chopped nuts if I want it to be extra decadent.

    Congrats on being done with finals! I have four weeks left. 😛 Blehhh.

    The peachy oatmeal sounds yummy. Ten essays?! Oooh, I don’t remember ever having that many when I was in college…goodness! I bet your bike ride home was exhilarating after all the writing!

    How nice to be done with finals! Hope your summer’s off to a nice start! 🙂 Ugh, that final sounds awful… I have finals coming up this week and I fear they’re going to be a lot like yours, especially my international relations final. We just had a 20 page paper due in that class last week, so I KNOW he will probably give us tons of essays on the final! He just loves to torture us. 😉 But I will definitely celebrate summer with one of your peach recipes after my finals are done! 🙂

    Must say though that I’m impressed and damn proud of you!! =)

    And the oatmeal looks so yummy! I love peaches! Never used to until I visited my relatives in canada in 2002 and had the best peaches in my whole life. I ate them all day long. Seriously, compared to the peaches you can buy in germany the canadian peaches were the fruit from heaven <3 that said, i haven't eaten a peach ever since (except one, the first i tried here after i came back which was such a disappointment). send me some peaches of yours please? =p

    OH my goodness that is just horrible. I thought I had a lot of work to do with all these exams but I’m just going to shut up about it because it’s nothing compared to that. I would never be able to write ten essays (plus the questions!) in a few hours. Congratulations to you for doing that!
    Enjoy your free time, summer days and oatmeal! You completely deserve them.

    not only do ten essays for one final sound horribly wrong and cruel, but to make you sit through a three-hour exam?! that doesn’t sound fun at all, and i can’t believe they made you take an exam on a saturday! you deserve a totally awesome summer now.

    as for the peaches ‘n’ cream oatmeal – yum yum yum! great minds think alike, as usual, and i cooked some frozen peaches into my banana-peanut butter oatmeal this week. but i have a feeling your ripe-peach oatmeal would be yummier!

    Good luck on your international relations’ final! I took that class last year and loved it… but maybe that’s because I am a current-events’ nerd who reads through every single week’s issue of Time and Newsweek. (I DO have a life, I swear!) Of course, I think our longest essay in that class was 9 pages. If we’d had a 20-page paper, I don’t think I’d have liked the class so much!

    Thanks! I really do enjoy the class, just not so much ridiculously long essays… Well, I’m done with the final…and very happy to be done with it. 🙂 It took the full 3 hours and he asked us to bring laptops and type it because he warned us if we tried to write it out by hand we’d get major hand cramps. So I typed it…and in the end it was 12 pages double spaced!! I’m glad I took the class, though…I agree, it’s very interesting! My homepage is BBC News, so yeah…I guess I’m a current events nerd too. 🙂

    I just came across your blog. Wow, ten essays. My hand would fall off after that. Just thinking about it makes my hand hurt. On another note, I have been trying your recipes and so far its turning out good. Hope your hand felt better.
