Move over, Miss American Pie. Make room for Miss American Cupcake!

Y’all didn’t think I’d go to a party and not bring cupcakes, now did you?

I really didn’t have much time to make/decorate these guys, so I had to abandon my plans for fondant Uncle Sams and Lady Liberties. No one seemed to mind; I went home at the end of the night with an empty plate, as usual. (Both the frosting and cupcake recipes are courtesy of Vegan Cupcakes take over the World.)

Thank you for defending me!!!

Edit: I posted a response to the anonymous comments.

Thank you so much to everyone who defended me in the comment section of the last post. I literally had tears in my eyes from reading all of your wonderful comments; they made me so happy and grateful for your kindness.

    Those cupcakes are stunning!

Katie, I really hope you are not spending one more second thinking about those rude commentors. Anonymous and lonelysound are so not worth your time – especially not since the comments come from someone who thinks eating cupcakes is a way to get healthier!

  2. CeciLiA says

Wow, so pretty~~ my favorite is the blue cupcake with lots of stars on it (on the top left hand corner) … Katie, since you torture me so much with your vegan cupcakes – I went online and bought myself a copy of VCTOTW! ^^

Sigh, I’ve now bookmarked all the ‘must-try’ recipes in all my cookbooks – the problem is getting myself to make them, I’m so lazy .. ugh!

Oh btw, IGNORE those rude ‘anonymous’ comments – I’ve seen such person making rude comments on other blogs out there, I’m pretty sure you notice that as well :0( Those people are usually the ones who have an eating disorder – I mean who goes around blogs to check on how many calories/fat/carbs one is having?! Sometimes they just have to believe that skinny people EAT too, they don’t starve themselves to be one … Sheesh!!

Oh my, sorry for the LONG comment :0P Have a great day!!!

  3. Erin says

Sorry about all the drama-rama on your last post! (I’m a little slow on the uptake these days.) Stay true to yourself and those you love and don’t let anonymous internetters get you down! And keep making awesome goodies for us to drool over 🙂

  4. Allison says

You’ve done it again!~Made beauuutiful cupcakes that I just want to jump through the screen and eat!(but it might be hard since they’re so pretty!) :0) Thanks for the frosting ideas~the raspberry idea sounds perfect for a wedding!

I hope you’re having a great day, girl despite all of those negative comments…I feel like the lucky person to be able to *know* you and have you as my friend!!

  5. Lizzy says

Cupcakes!!! Ha ha, I would’ve loved to see fondant Uncle Sams and Lady Liberties =p

And you’re more than welcome! You’re such a good person and incredibly nice (even though it’s “just” the internet) and I feel fortunate to be able to call you my friend =)
And in general it drives me nuts when people comment anonymously with nothing nice to say. And in this case I was like “Woah, where did that come from???” I mean seriously, LIVE AND LET LIVE! Apparently this person didn’t watch Bambi often enough to learn that “If you have nothing important to say, say nothing at all” (not sure if that’s the exact quote in english) but it pretty much sums up what MANY people of all ages still have to take to heart!

  6. Lizzy says

And I agree with Cecilia about the eating disorder thing. I have the feeling that “anonymous” falls under this category so don’t let it bother you!

  7. Ricki says

Gorgeous baking, as always! Love the little hearts.

Seems I missed the storm over here as well, and sorry for the hurtful comments. Maybe I don’t know you in “real” life, but I can also see just from your beautiful face that you are glowing with health and sweetness . And I wish I had half the energy that you do! 🙂

  8. debra says

Hello – Just another (hopefully less controversial) anonymous chiming in here.

I visit your blog every so often, and one thing I’ve really noticed is how many of your readers say you’ve inspired them to try veganism – just by showing it to be a really positive, easy, tasty, energising and healthy way of living.

Please don’t forget what an extraordinary achievement this is.
As another vegan (and one without much of a vegan community nearby ), it makes me really happy.- Best wishes, Debra

As another vegan, this makes me really happy.

  9. Anonymous says

I think that a lot of the anonymous comments are coming from the fact that this blog is named: “How to Gain Weight on a Vegan Diet.” People (myself, included) find this blog thinking they are going to get tips on how to gain weight, but they don’t. It also doesn’t appear that Katie has gained any weight on a vegan diet. I don’t mean that meanly, I’m just observing.

  10. Green Eyes, Green Heart says

Those cupcakes are nothing short of stupendous! (Not that I expected anything less, of course…)

It’s easy to defend/stand-up for other vegans, because it basically goes without saying that we’re all compassionate, kind individuals.

Roll with the punches, kiddo. 😉

    ~Erin @ “Vegan & the City”

  11. Katy says

Those cupcakes look amazing as always!

And I totally missed the completely rude and uneccesary comments made last time, but PLEASE do not waste a single second being upset by them. You know that you are very healthy and take great care of yourself. So what one stupid (and anonymous and ignorant) person thinks doesn’t matter at all. That person was very wrong and we all know it.

You’re beautiful and don’t deserve to be told otherwise. Have a great day!

  12. ChocolateCoveredVegan says

    Anonymous–
Yeah, I don’t like my URL. I initially made it up as a joke (I never expected so many people to read my blog), but now I don’t think it’s funny. I’ve actually wanted to change my URL for a while, but I’m afraid of losing readers. Still, I think I will get around to changing it someday soon.

  13. ChocolateCoveredVegan says

    debra–

Thanks for the wonderful comment!!! You are so sweet :o).

Like you, I love the blogging community because I don’t have a very big vegan community around me either in “real” life.

  14. Lauren says

Your baking is always so cute! Great job on the cupcakes! 🙂

Oh, and I didn’t know what you were talking about so I looked at your old post comments.. and from one skinny vegan to another, I know exactly how that feels..I get that almost everyday wherever I go.. and its even harder to deal with in person..it’s really sad but we’re tough vegans and i know you’re better than their silly pointless comments! 🙂

  15. Bianca says

Cuteness and a half! I just love all your fondant cupcake cutouts. Someday, I’ll get around to trying that out.

BTW, just went back to see what the issue was (I must have missed the original anonymous comment), and wow…what bitches. You are not too skinny. You are adorable. And I just marveled yesterday about how huge your servings sizes are. You’re obviously supposed to be a petite girl.

Just ignore those crazies. They’re probably like 300 pounds and just jealous!

  16. ~randi~ says

omg!! Katie these are so cute and precious. You are a talented baker my dear. The blue icing is most amazing shade I’ve ever seen. Is most food coloring vegan? Or do I need to look for a certain brand?

  17. aTxVegn says

Man, I miss one post and all hell breaks loose! First of all, the cupcakes are so patriotic and festive! Secondly, about that last post. It’s almost creepy how “concerned” Anonymous is about your health and looks. You are such an amazing and accomplished woman and I’m sure the envy of many. Don’t give those negative comments a second thought.

  18. Traci Anne says

You’ve done it again, K – these are gorgeous!!!

Also, I totally missed the drama in the last post! As for anonymous, it’s hard to tell if they’re being condescending or if they have good intentions, you know? You express right at the top of your blog that you are thin because of genetics, not veganism – clearly you eat healthy, balanced meals and exercise regularly! A person’s weight does not necessarily reflect their health, and that goes for ALL sizes! Anyway, I adore you! (And thank you for your recommendations of mock meats!)

  19. Binx says

These cupcakes look soooo yum 🙂

Just to pipe in about the rude comments:
Most importantly, you know that you are healthy, active, happy, and are getting plenty to eat (and somewhere that coward knows it too). When I was younger and somewhat struggling with my weight I would sometimes see thin girls and assume they starved themselves, because that gave me an excuse to not be that thin. My guess is that is exactly what ‘anonymous’ was doing. In some way I think she/he was trying to be helpful, but what an insult it ended up being. You look and are very healthy.

  20. Jenn says

Aw, those cupcakes look so delicious. I may have just eaten lunch, but now I could totally go for one of those. Right. NOW!

I must have commented before the anonymous rudeness began on your last post, but I just went back and read through it all – I know others have said it, but we all love your blog and your incredibly kind personality, Katie. The blog is filled with healthy and indulgent recipes that make my mouth water every time. You’ve got nothing to worry about :o)

  21. Jenny says

Katie, as usual, the cupcakes look adorable!

I just got caught up on the drama, and have to agree with all of your wonderful faithful readers!! You are beautiful, sweet, kind, and compassionate. Stay that way!! We love you!

I hate the double standard people have against thin people. They feel they are allowed to comment because they are “helping” you. “You’re too thin, sweetie.” that’s supposed to be helpful? But how would they feel if we pointed out: “You’re too fat, sweetie. Stop shoving burgers in your face and try eating more greens, fruits, and whole grains.” The only person who needs to be concerned with your weight is yourself and your doctor. Not anonymous posters trying to “help.” Anyway, sorry about the long post, but I just wanted you to know you’ve got one more person on your side. You look great, by the way. Beautiful, healthy, and radiant.

  22. talieworld says

Those cupcakes look divine! You actually had me fooled in your last post and left me wondering why you didn’t bake for the party lol

I was just catching up on your comments from your last post and it made me so mad to read what those jerks were saying! You are a wonderful beautiful person with a really big heart! Don’t listen to anything they say we all know none of its true.

  23. VegMomma says

Oh my goodness, I just read all the comments from the last post, and I cannot believe it. You seem like the sweetest girl ever, and it is absolutely no one’s business but your own (and maybe your loved ones) what you eat.
I’m a skinny vegan two, and frequently get comments about my weight (apparently, after having 2 kids I’m supposed to balloon up, haha).
Try to let it roll off your back. You’re beautiful! We all know it, so let’s embrace that!
    xo

  24. Vivacious Vegan says

Oh my goodness, I just read the horrible mess of comments on your previous post and wanted to throw in my two cents.

Katie, I think you are a beautiful young woman. I hope you don’t let that negative anonymous commenter get you down. Sending big {{{hugs}}} your way!

  25. Kimberly says

Just chiming in with the other commenters here, but Katie, you’re fabulous, and clearly radiate both energy and self-confidence. I’m stating the obvious here, but it really does sound like those rude comments are just plain old-fashioned jealousy. LAME.

And now on-topic — those patriotic cupcakes are adorable! They could easily pass as professional. If you do not open that vegan cupcakery, I will be sad.

  26. Caitlin says

Those cupcakes are awesome and so great for the 4th!
Yes, I got awesome pics from my camera on the “fireworks” setting. Although they were not quite what I expected–they were long exposure so they turned out to have squiggly streaks of light–I thought they looked really cool. Did you use your “fireworks” setting and if so how did it turn out?

I went back to read the comments from your last post after seeing your remark about people’s supportive comments. I can’t believe someone would come on here anonymously and accuse you like that! Especially since it seems like you eat a lot (sorry, I hope that doesn’t offend you–I mean “a lot” in a good way! :)) You also seem to have tons of energy and run every day so you must be eating enough. My former roommate was really skinny (76 pounds when I first met her, though after a year in America she ended up weighing 92) and I know all she ate all day was tons of cheeseburgers, Chips Ahoy, Coke, and Reeses peanut butter cups! lol. Just goes to show some people are naturally skinny…oh, and she also NEVER exercised. It was just genetic. Anyway, I hope you’re not letting people’s comments get to you because to me you seem very healthy.
Oh–and I never even noticed you eat all your meals with chopsticks! lol. Maybe it’s because almost all my friends are Asian so I’m used to people eating most of their meals with chopsticks. I happen to think a lot of food just tastes better with chopsticks, but I’m not sure why!

  27. lighterportions says

That’s you NOT having time to decorate? Gosh, raw decorating talent at its finest.

I’m sorry about all the lame drama on your other post. Do NOT let people like that get you down. You know you are healthy and you know you eat right and you shouldn’t worry the least about people’s comments who know absolutely nothing about you or your life even though they seem to think they know it. You are a beautiful person inside and out so just try your best to ignore ignorant people’s negativity.

  28. shellyfish says

Good grief people are morons! I had to go back and see what all the fuss was about (the evil comments began well after I’d commented). You are the Special K, and we love you. If people have nothing better to do with their free time than to harass strangers and to speculate about ways to make said strangers’ lives better, well, they should better use their time volunteering or helping the needy or making food for the poor. Delete the evil comments sweetie- they do not merit the electronic ink with which they were written and you need to get that bad mojo off your blog. I was a classical/modern dancer most of my life, and I saw so many “well intentioned” people harass other dancers who while very thin, were eating. I would often dance 8+ hours in a day, and no, I wasn’t following the standard American diet of crap, crap with cheese, more crap in a bottle, some crappy crap with crap sauce and some crappyness to go, I was eating enough to be healthy. It’s not worth the mental effort to try to process the jealousy and insecurity of others- that’s their problem sweets, not yours!
Oh, and send me one of those cupcakes damn it!! 🙂

  29. Emma says

I read the comments on the prevous post and was so surprised by the rudeness of the comments. It is interesting that such comments are always left anonymously and shows that the people leaving them are cowards. Like others have said, such people are NOT worth worrying about.

The cupcakes as usual look delicious! I am sure they were enjoyed very much by all who ate them!

  30. Anonymous says

I’m sorry but I have to agree with anonymous posters from the last blog entry. And they weren’t trying to be negative, in fact they urged you just to take care of yourself. You say you are naturally thin, but I look at your family and none of them is that thin. You post all this stuff about how smart you are (perfect score on SATs), but apparently you think your readers are stupid. You’re obviously much too thin and have absolutely no muscle tone or any tone for that matter. You almost look skeletal!

  31. Alice (in Veganland) says

Really, Katie, don’t waste your time with rude anonymous comments. You look great, and I’ve told you already how balanced I think your meals are.
    And nice cupcakes!

  32. talieworld says

Seriously stupid anonymous people just give it a rest! Katie is a very kind, intelligent person and she shows she cares alot about her readers. How dare you say those things about her!
She is a very beautiful healthly person. She dedicates alot of time to making this blog great for her readers and if you can’t appreciate what she’s doing then just stop reading!!!!

  33. oatmeal says

Wow! You’ve really outdone yourself with this baking endeavor! Amazing how you managed to get all the shape outlines so smoothly without making a mess!

And I’m so sorry about the drama in your previous post! 🙁 People can be so quick to make judgements :\ I think you’re doing a really good thing here, so just ignore what those other people say!

  34. Anonymous says

Of course you are anorexic, CCV, because everyone knows that anorexics always eat peanut butter, toast, pasta, cupcakes, chocolate, rice, and all the other foods you eat! Just kidding!

The anonymous commenters are just jealous that you can eat all these things and still look as skinny (and gorgeous!) as you do! Jealousy can make people say horrible things. Don’t pay them any mind.

    Christine

  35. Emma says

Anonymous- what exactly are you trying to achieve with making such a rude comment?

It seems to be that you are merely trying to be hurtful and therefore it would be best if you could keep such views to yourself. You should think about how you would feel to be on the receiving end of such horrible and personal comments. It is not nice for Katie to read and is plainly untrue. The effort Katie puts into this blog demonstrates the care she has for her readers. The vast majority of Katie’s readers are certainly not stupid. Your comment, however, has demonstrated that you are an exception to this rule.

  36. Emma says

Sorry- my post overlapped with yours, Christine. I just wanted to clarify that my comment was not directed at you but at the anonymous poster above.

  37. jessy says

yay! your cuppycakes are GLORIOUSLY AWESOME!!!!!!!!!!!! you amaze me with all this awesome decorating!

  38. Clara says

Those cupcakes are beautiful and scrumptious looking! 😀

you rock Katie, and are so beautiful, inside and out!!!!

  39. chandra says

You make me want to eat more cupcakes. 🙂 LOL

And just because I’m a little behind on commenting I thought I’d mention, I heart you. 🙂

  40. Vegan On Stage says

    katie!!! your cupcakes are beautiful!

I have been MIA lately because of all thats been going on But I want you to know that you are absolutely beautiful… your body is healthy,,, your skin glows.. and your personality reflects your healthy attitude..
    YOUR BEAUTIFUL INSIDE AND OUT!!!!

  41. ChocolateCoveredVegan says

    Anonymous—
I’m curious: why do you want to know this? (And how do you know we’re not friends?)

  42. ChocolateCoveredVegan says

    Caitlin–
Hahaha thanks for sharing the story about your roommmate.

Ooo I have a ton of Asian friends too! (Although I like to joke that I am more Asian than they are because I lived in Asia and man o them were born and raised in America.)

  43. ChocolateCoveredVegan says

    Clara and Kimberly–
Thank you both so much for your kind, supportive words. Getting such kind comments definitely makes blogging worth it!
