By now, I’m sure you’ve all bought Happy Herbivore’s new e-cookbook, right? Well if you haven’t, what are you waiting for? With recipes for foods like mojito cupcakes and citrus-glazed chickpeas, how could you not want to get your hands on this gem of a cookbook?

I’m not the best photographer, so my snapshots can’t do justice to Lindsay’s recipes. But just for kicks, I’ll show ya some pictures of two delectable recipes I tried out. I made a few changes in both recipes, as you’ll see below (because I just can’t seem to follow a recipe!), but I still attribute each recipe’s success to Lindsay, since I followed the basic gist and only used her listed ingredients, for the most part.

Recipe #1– Chana Palak Masala
The first time I tried this recipe, I decided to make it into a soup, and I used pinto beans because we had no garbanzos in the house. (Since then, I’ve made it many more times, and it’s equally delicious with the garbanzos.)

Quick and healthy, with the perfect amount of spiciness.

Recipe #2– Mojito Cupcakes (well, sorta)
My family wasn’t in a cupcake mood (shocking, I know). So I cut back a little on the sugar, omitted the icing, and baked the recipe in a cake pan. Voila– magnificent mojito bread! It made a great dessert, and my mom even enjoyed a slice with vegan butter the next morning for breakfast.

    It’s hard to believe anyone’s family not being in a cupcake mood!!!! Even if I’m not in the mood, just looking at a cupcake will make me want to eat it. Mojito cupcakes sound really interesting… mainly because I’ve never had anything with Mojito. haha

    The mojito bread looks awesome! Brilliant things are created when CCV and HH put their cooking heads together. This post actually reminded to buy her cookbook, so I read the first sentence, went to her website, bought the book, and then went back to reading your blog. 🙂 Hehe. I love that you made the Chana Palak Masala into a soup! Mmm. HH sent me some awesome muffins in the mail one time for winning a contest and they were scrumptious, so I really can’t wait to try out her e-book recipes!

    And that’s really awesome how you can change recipes and not end up with a disaster! Every time I try to follow a recipe, I mess up and end up with large gingerbread cake-type things instead of cookies. But those were still yummy so it was okay. 😀

    These look so yummy. I wish I could cook Indian food. My Mom would love it but I usually just get frozen or those things in the vacuum sealed packages.

    Yea! I bought the book but I haven’t tried anything yet. The Mojito cupcakes are up high on my list though. Love the bread idea! But I can’t resist a good frosting…of course, I’m sure you’re on cupcake overload after those last lovelies!
