Stir-Fry Sandwich

I’ve blogged before about my love affair with stir fries. They’re so simple and tasty that I find myself eating a stir fry at least once a week. As with most things I make, I’ll usually cook up a HUGE amount at one time so that I have lots of leftovers (you should know by now that cooking is not my favorite activity; I only mention this fact in like every other blog post of mine!). Many of the leftovers go into my freezer so I don’t have to eat the same meal over and over until the leftovers are gone (my freezer is my best friend!).

But what does one do when, after eating a few stir fry meals, one still has a *small* amount of leftovers that isn’t enough to make a meal by itself? One gets creative!

Presenting the Stir-Fry Sandwich! Ok, so I guess plopping some stir-fried veggies on a pita isn’t all that creative… but the name of the sandwich is ;o).
The yummy closed sandwich, with the stir fry peeking out. When I attempted to pick this guy up, though, he fell apart on me, so I ended up eating the sandwich open-faced.


Some stir-fry leftovers (I don’t remember how this particular stir fry was seasoned, but I’m sure garlic was involved!) on an Ezekial 7-grain pita, with a yummy Nectar bar to complete the meal.

Ooh, that reminds me: I still need to do my Energy Bar Post. Ok, so expect that for next time!

Haha, anything can go on a sandwich! Today, I tried putting cubed tofu on a sandwich (cafeteria food…) and it was pretty difficult to keep together. But I’m sure yours was a ton better than mine! Ooh and I’ve never had a Nectar bar– gotta try it!

I love a good stirfry! That looks so good. Sometimes the simplest foods are the best ones. How is that Nectar bar flavor? I’ve only tried the raspberry and blueberry.

Awesome idea! I definitely have a stir-fry AT LEAST once a week. It’s more like 3-4 times. Bobby loves them, I love them, and they’re so freaking easy.

This looks yum, but I’m very much excited about the energy bar post!!

(*laugh* And the JKO comment IS a compliment, but Court told me the guy’s a real jerk, and he was clearly trying to poke fun at her – she’s working on a movie and came dressed to work in the production office like she was told, and they had her working on set stuff, and she wasn’t dressed for it at ALL!)

Love the sandwich! That nectar bar is one of my favorites. Sometimes the nectar bars are a little too sweet, but it doesn’t stop me from buying more. My other favorite is the lemon, vanilla, cashew flavor!

Mmm, I lve stir-fries too. Tehy are so easy and perfect when I’m not too hungry or can’t decide what to eat.

I’ve been dying to try those bars…can’t wait to see how you review them =)

Leftover sandwich is the best! I put everything in a sandwich, it’s a great way to pack a meal.
Next time open just a little slit in your pita ;)

I eat stir fry in wraps and love it, although I usually have a little brown rice in my “stirfry sandwich” too.

I think a stir-fry sandwich is brilliant! I always make too much stir-fry and then I don’t want to have the same thing two days in a row. I love this idea.

Everyone is eating those nectar bars I’ll have to grab one sometime. I don’t usually like the clif bars.

Stir-fry’s really are the best, so quick and an easy way to get your veggies and protein in one dish. The best, by far, is with a peanut sauce, don’t you agree?

Hey!!! I totally agree about the wonderfullness of stirfries. You just can NOT go wrong…ok, well maybe you can go wrong…but that’s ok too. I love the s.f. sandwhich idea. Brilliant!!

Good idea. Sometimes I get so tired of eating leftovers, but I refuse to waste food. And I always make big portions since most recipes accommodate four people…and I just cook for little ol’ me.
