Creamy, Cozy Harvest Oatmeal

by Chocolate-Covered Katie on September 24, 2008

Another recipe that uses the blender/food-processor/hand-blender technique:

Little Vegan Harvest Oatmeal

Ingredients:
1/2 cup uncooked oats (or one serving of your grain of choice; the photo is of whole-grain Cream of Wheat)
Up to 1 container applesauce (the little 113gram containers, not one jar LOL!)
½ tsp cinnamon
Non-dairy milk of choice (I use almond milk)
Tiny dash salt (optional)

Other optional ingredients that might be nice:
raisins, dates, nuts, chocolate… oops, how’d that last one sneak onto the list?!

Cook up a serving of oatmeal, using non-dairy milk in place of the water. Add the applesauce and cinnamon to the cooked oatmeal, and mix together. You could stop here, and it’d taste delicious… BUT if you *really* want to experience oatmeal nirvana, take this next step: Using a hand-blender (or transferring the mixture to a regular blender or food processor), blend all the ingredients together. The resulting oatmeal is so super-creamy it’s amazing!

Cream of Wheat was one of my favorite cereals when I was little – I’m so bitter I didn’t bring some back to France with me!! It’s so yummy!

Yum! I need to try the whole wheat CoW too. And I have a quart of homemade applesauce in the freezer – maybe it’s time to put it to good use…

Believe it or not, after all the oatmeal I’ve eaten, I still haven’t tried applesauce oatmeal. Yours looks so good, now I’m going to make some!

Katie, you will become addicted to GG! It is so girly and mindlessly fun to watch!

I’m going to try your harvest oatmeal (only with oat bran) for breakfst tomorrow. It sounds so perfect for fall! I can’t wait to make it with homemade applesauce, but that will have to wait until I pick apples :)

Cream of wheat is my favorite as well and recently I have switched from dairy to rice milk. Your bowl of goodness is beckoning me to prepare it! I have a hand held blender so all I need is the whole wheat COW and I shall set your plan into motion!!!

I gotta get one of these hand gadgets again! I had one when we were living in Scotland because I used to puree all my soups like that. I think your idea to use it with oatmeal is brilliant! Yummy…and coming into cooler weather (hopefully)..I will be eating a lot more hot breakfasts.

While I like Cream of What – I just am not feeling this one. Though it is funny to imagine you with your hand-blender – I know how fun those are – I just want to blend everything when I get mine out!

A whole container of applesauce? Like, a whole jar? Or do you mean those little single-serving cups? In any case, it looks so yummy and comforting :-)

Hey! Wait! I got a new complaint. Forever in debt to your priceless adviiiccceee…your adviiiicccee…sorry your nirvana comment got Smells Like Teen Spirit stuck in my head.

Anyway, I love how so many of your recipes start with “Little Vegan.” You should make a Little Vegan cookzine. It’d be so cute.

Andrea–

Hmmm, yeah, chocolate just seems to somehow sneak its way into lots of areas of my life, especially where food is concerned! I wonder how it’d taste in spaghetti…
No, don’t worry; I’m not going to try it!
