Fall’s Favorite Curry: The Recipe

One of my favorite things to eat 🙂

Fall’s Favorite Curry

  • 1 cup milk of choice
  • Imagine No-Chicken broth
  • 1/4 cup tomato paste
  • 2 tbsp good curry powder (make sure to use one you know that you like; once I bought a different brand, because they were out of my favorite, and it was horrible! I really like Kroger brand or SmartSpice)
  • 1 tbsp minced garlic
  • 1/2 tsp salt, or to taste
  • 1 1/2 cups roasted sweet potato or butternut squash, mashed
  •  1 large onion, diced
  • 2-4 bell peppers, diced
  • 1 bag broccoli florets (about 340-425 grams)
  • 1 bag green beans, about 8 oz
  • optional beans, for protein

Combine milk, tomato paste, curry powder, garlic, and salt in a small saucepan until well-mixed. (If you like a really saucy curry, you can double the sauce.) Meanwhile, steam the broccoli and the green beans until tender.
In a different pan from the one with the sauce, sauté the bell pepper and onion in oil or oil spray. Now add the sauce, broccoli, and green beans. Stir in the squash or sweet potato. Feel free to add beans for a protein boost. Finally, add 1/2 cup to 2/3 cup Imagine No-Chicken stock and mix it all up. It’s especially good cold… but my predilection for a cool curry might change once the winter weather hits.

What can you do when you’re sick of curry but still have some left? Throw it in the Vita-mix!I added spinach and more broth to make a Sweet Curry Soup.

Random Thought for the day:

Before I end this post, I want to leave you with a Barack Obama quote I heard on CNN last night: “Our preference is to get a shelter dog because obviously, a lot of the shelter dogs are mutts like me.”

I hugged the tv screen. No, seriously, I did. How great would it be for raising dog-adoption awareness if the president of the United States rescued a dog?! Here’s hoping…

Saw your comment on my blog (sorry I’m so late getting back to you!). RE: the bowl, I think I got it at a dollar store, believe it or not! I tend to pick up anything cute whenever I’m there and save it for the blog. I got 3 bowls that day, in 3 different colors. I’m sure you’ll see the others make their appearance in due time. . .! 😉

I love love love curry in pretty much any form! But I usually go nuts and add 2-3 tablespoons of mild (not spicy hot) curry powder. Mmmm I need to make some soon!

I love your curry recipe! Aren’t curries so very heart warming? A sweet taters in curry is to die for.

Special K, I don’t know what’s going on with my reader, but I can’t seem to read your posts or something- like I can see your new post, but I can’t get to it. It’s weird.

Haha and the food sounds delish!

  14. ChocolateCoveredVegan says

    Sarah–
It’s not spicy at all, but sweet (thanks to the winter squash). But you can always add hot sauce or chili powder if you’d like :o).

  15. Maggie says

Delicious looking curry! That is a great Obama quote. We have two shelter dogs and two shelter cats. All are mutts and great animals.

  16. Anonymous says

Just pointing out for your other readers, I think you have a typo in this recipe, as I think you mean 1/4 tsp salt–I put in 1/2 tsp the first time and all I could taste was salt!! When I remade it with 1/4 tsp it was delicious, as always 🙂

  17. Julie M says

I just made this and am also making some brown rice. . . . Eating in a few minutes. . . Getting hungry typing! It smalls sooooo good!

    Hi Katie,

I love you and your blog. I live in Southlake. Wish we could meet someday. Inspired by your post, I googled a lot and contacted dog shelters to adopt a dog. But I let it go because I was not sure if I could do it with a 21 month old around. Do you have any suggestions or inputs? I think I should get one. I am very new to dogs. My son is very sensitive to noise. But he loves them. And I would want him to grow up with one. Please help me.
