The Butternut Tales, Part One: Little Miss Butternut Returns!

Did you ever have a favorite food you ate every day, but then, for some reason, forgot about? That’s exactly what happened to my poor butternut fries. The Way We Were (circa 2005):

So strong was my love for the fries that I made a scrapbook page in their honor!

I gave my dad the official title of “Fry-Cutter.”

I’ve never tried butternut fries! I have sweet potato fries quite often (or ’rounds’ since I’m too lazy to cut a fry shape.. 😉 I must try them! You’re so gorgeous missy – lots of love, xxx

  2. Animal-Friendly says

I love butternut squash in all forms and I can’t believe I haven’t tried fries yet- they sound delicious and I can’t wait for part 2!

  3. I ♥ puggies says

Ooh, how wonderful! I laughed soooo hard when I saw your “naughty picture.” You are sooo hilarious! Thanks for always having the greatest blog posts.

  4. shelby says

I’ve tried b-nut fries but I have to admit I like SweetP fries better! Well I’ve only had b-nuts once…maybe I should give them another shot!

  5. Jen aka Jewbacca says

butternut squash fries sound really good! i imagine they would taste just like sweet potato fries, perhaps softer.

thank you so much for your compliment. you are really sweet. i wanted to let you know i also read the part of your blog where you explain your weight and it made me smile. you write really well.

i’m so sorry anyone would harangue you about your appearance. boo hiss and a big ol’ piss on anyone who is mean. body size is not an accurate indicator of health. people who are obsessed with the sizes of others be it thin or fat are the ones who have a problem. the truest most amazing beauty comes from within.

some people forget that true veganism is more than just refraining from animal products. it’s also about being kind to each other.

You looked so cute back then.. love your hairstyle!

Mmm.. butternut squash! I’ve never actually had them as “fries”, I’ve always eaten them cubed or straight up. Your dad got mad cuttin’ skills, haha.

    Can’t wait for part two..

  7. Kate says

Those fries sound good. I need your Dad to come up here and help me out.

I loooove that you have a whole scrapbook page devoted to the fries-that’s the kind of foodie I can appreciate. Yum Yum!

    Hey Katie!
Your posts always make me smile cause i have the same quirky sense of humor. anyway, i was just wondering- how do you cut the butternut so the fries are so even and the same size? I tried making butternut squash fries the other day and some were too big so they were mushy and some were too small so they were burnt! so i was wondering if there was an easy way to size them better. Thanks!!

  9. sassy stephanie says

You are so cute. I love that you scrapped about them! Love, too, that Dad wore such an appropriate shirt for the job!

Hi there! I’m planning to be a vegetarian, but I don’t know how to maintain it. I tried to be lacto-ovo-vegetarian but my sschool and social events do not permit me to be one due to a lot of social eating with friends and family, so I can’t be too picky with what I eat. As a vegetarian, what suggestions could you give me to cope up with this? I hope you’ll take time to repond to this, because I admire people like you who can resist meat without the hassles. BTW, I changed my blog address to http://www.justsweeterthansugar.blogspot.com./ Feel free to visist ir anytime 😉 Thank you and keep posting 😉

Butternut squash is my very favorite! I have an intense craving for b-nut squash fries now. It’s cool that you scrap book!

  12. snugglebunny says

Now that sounds like a great way to eat butternut squash. Unfortunately, I find it difficult to find where I live, if you can believe it. It is here for a few weeks in the fall and then gone.

  13. Chelsea says

Yum! I just made butternut squash fries last week! I’m stoked to see your recipe… the one I used was tasty, but they were a little limp 🙁 haha

And yes, Jewbacca is all that!

  14. Heather McD (Heather Eats Almond Butter) says

A scrapbook page for butternut squash fries? You are quite the fan. I love it…and your dad even got in on the action. I don’t think my dad would even know what a butternut squash looks like, much less how to cut one. 🙂

Can’t wait for the recipe as I love the fries as well. Have a good weekend Katie!

  15. lighterportions says

I was just chatting with my mom earlier today about how much I love squash and about how upset I was at the fact that we were AT the grocery store and I completely forgot to grab some squash! So we have no squash in our house. And now that you wrote this post I want squash more than EVER!

I love that you scrapbooked about squash. That’s some hardcore squash loving right there. Your pa is clearly a squash fry pro.

  16. Marianne says

Ooooh…can’t wait for your squash fry recipe. I have me a b-nut in the cupboard just waiting to be transformed into some blogland fries!

  17. Vegetation says

Yay! I can’t wait for the recipe! I love butternut pumpkin!!! (If only I could get my husband to do some of the cutting…….)

  18. Rina says

Ahh, you’ve inspired me to buy butternut squash FOR THE FIRST TIME today!! How does your Dad cut it so well? I tried to cut it in half and almost chopped my hand off! I’m having my Dad chop it for me tomorrow. I also think that’s a good way to use his Ivy League education (my dad’s a grad. of Columbia)..which ivy league did your dad go to? Anyway, LOVE your BLOG and you look absolutely gorgeous AND healthy!

  19. Becks - Not a Rabbit. says

  22. Kiersten says

I looove butternut squash, it’s one of my favorite veggies. It’s cool that your dad used to cut all those fries for you, although he’s probably glad you don’t eat them as often anymore. Can’t wait for the recipe!

  23. laci says

OOO I <# the play on "fries" from the original white potato, to the amazingly sweet and camamelized organic winter yam, to the fabulous orangey, perfectly cut (by your pop) butternut-squash fries! That pic of you 4 years ago os adorable… you have a movie star grin Katie! 😀

  24. River says

That picture of you with your lunch is the cutest! Your dad is awesome, what an excellent fry-cutter!

Jen has a nerd crush on you! I think there are a lot of us that do! 🙂

I’ve seen these on the blogs lately and I must try them soon!!! I love butternut squash! Your daddy is just too cute with his little fry-making self. Dads are the best!!!

  27. herbivore says

I love this. It makes me happy. I have never had butternut squash fries. I can image they must be something like sweet potato fries. They look good!

  28. ChocolateCoveredVegan says

Rina—I totally hear you about the “almost chopped my hand off” comment! I’ve done that too; those squashes can be DANGEROUS! My dad uses a fry-cutter (I’ll blog about it in my next post). Oh, and he went to Columbia too! (Brown undergrad, Columbia business school… maybe our dads were there at the same time!)

  29. Shani says

I just recently came across you blog, and I’m loving your delicious recipes. I’m not a vegan, but I am playing around with some vegetarian and vegan recipes lately and I’m loving all your different recipes.I have celiac disease so I have to make some adjustments, but over all you make me want to stay cooking lots more now.

🙂 keep up the good work, I will be checking back!
