Mousse on the Loose!

On Valentine’s Day, you don’t have to choose: you can be kind to your sweet tooth and to your heart! You can have your chocolate (mousse) and eat it too. And the best part is that you can whip up this sumptuous chocolate dessert in about five minutes flat!

(Teddy bear sold separately.)

My chocolate mousse recipe came about one day when I had extra time on my hands (always a dangerous thing) and extra tofu in my refrigerator. In an attempt to rescue the tofu from going bad, I threw it into the Magic Bullet, added a few other key ingredients: healthy, five-minute mousse for one!

Chocolate Mousse for One

  • 110 grams silken-firm tofu (such as Mori-Nu; about 1/3 of the package)
  • 1/8 tsp vanilla extract
  • 1 tablespoon dark cocoa powder (dutch-processed cocoa or Hershey’s special dark)
  • tiny dash salt
  • up to 2 tsp liquid (such as water or milk of choice)
  • sweetener, to taste (sugar, stevia, agave, etc)
  • optional: almond or mint extract, instant coffee or espresso, peanut butter, flakes of coconut, or another fun flavoring– be creative!

Blend in the Magic Bullet or food processor. Then eat like there’s no tomorrow!  Or make it into a pie!

    I love that new banner!!! And it’s funny how the teddy bear’s shirt is kinda covered up so it says “I Love Ugs”, which made me laugh because I thought about how funny it would be if his shirt said, “I Love Drugs.”

    My husband and I are actually celebrating Valentine’s Day on Friday instead of Saturday at one of our favorite little restaurants. We waited too long to make our reservations, and they were all booked for V-day. Oops. Oh well, I’ll still enjoy it just as much. We’ll celebrate Friday the 13th instead. 🙂

    i don’t really have any plans for valentine’s day, how sad is that? i have plans for friday though, im running my ass off and then we’ll bring heart-shaped lollypops to homeless kids 🙂 i’ll spread the love anyway haha xD!

    Mmmm, mousse. Love that it's so easy to make, and so versatile. I think coconut extract & coconut on top would be excellent, maybe with a few berries as well. Must acquire some silken tofu stat!

    Glad you have great weather, although I don’t think I could bare tornado warnings. Our floods and fires here have made it a very wacky summer.

That mousse? Holy chocolate fabuloso. I’ve never really bought the Mori Nu tofu much because I had no good ideas for it but you alone have just given me a whole new outlook! Onto the grocery list it goes!

    I’ve just made this with a teaspoon or two of xylitol, half a ripe banana, and almond milk. Blimey it’s insanely gorgeous!!! I want mooooore!!! And I can have it too! Ha!

    Katie, I discovered your blog about a month ago, after I decided I needed to break my sugar addiction once and for all. Your recipes have been a lifesaver, as I did not know how I was going to live without chocolate desserts! Thanks to you, I don’t have to. So far, I’ve tried about 5 of your (chocolate centric) recipes and have loved every one! I eat the chocolate banana oatmeal everyday for breakfast now :P.     Yum… I just had PB smores oatmeal for dinner, and now I’m eating this for dessert. 🙂 Made it with Morinu silken soft tofu, skipped the water, and added instant coffee and a bit of sugar. Delicious! It’s more like pudding than mousse since I used the soft tofu, but I’m not complaining. So glad I tripled the recipe so I have more for tomorrow!

    Made this today (snow day, yay!!) with actually silken soft tofu (what I had) — so a little less like mousse. I used something you might get a kick out of trying if you hadn’t already — chocolate extract! I can get it in my grocery store, but you can make your own (directions are different places online). I used it instead of the vanilla extract and there is a chocolate KICK! 🙂 Just thought you’d like to know 🙂

    I’ve been meaning to try this recipe for ages and finally got around to it tonight! I was feeling a little hungry after my run this evening and figured something with protein and a bit of sweetness would be perfect. I used 1/4 package of mori nu because I didn’t trust myself to make/like the recipe, a few drops of vanilla, 1 tbs of cocoa powder, 1 tsp almond milk, a couple pinches of instant coffee granules (definitely recommend!!), and a tiny splash of maple. Topped with a pinch of mini dark chocolate chips, 1/4 sliced banana, and a few shakes of cinnamon. Then I stuck it in the freezer for 10 minutes to firm up a little more. I was so pleased with the result!
