Sweet chocolate Valentine
You make me smile…
On Valentine’s Day, you don’t have to choose: you can be kind to your sweet tooth and to your heart! You can have your chocolate (mousse) and eat it too. And the best part is that you can whip up this sumptuous chocolate dessert in about five minutes flat!

My chocolate mousse recipe came about one day when I had extra time on my hands (always a dangerous thing) and extra tofu in my refrigerator. In an attempt to rescue the tofu from going bad, I threw it into the Magic Bullet, added a few other key ingredients: healthy, five-minute mousse for one!
Chocolate Mousse for One
- 110 grams silken-firm tofu (such as Mori-Nu; about 1/3 of the package)
- 1/8 tsp vanilla extract
- 1 tablespoon dark cocoa powder (dutch-processed cocoa or Hershey’s special dark)
- tiny dash salt
- up to 2 tsp liquid (such as water or milk of choice)
- sweetener, to taste (sugar, stevia, agave, etc)
- optional: almond or mint extract, instant coffee or espresso, peanut butter, flakes of coconut, or another fun flavoring– be creative!
Blend in the Magic Bullet or food processor. Then eat like there’s no tomorrow! Or make it into a pie!

My husband and I are actually celebrating Valentine’s Day on Friday instead of Saturday at one of our favorite little restaurants. We waited too long to make our reservations, and they were all booked for V-day. Oops. Oh well, I’ll still enjoy it just as much. We’ll celebrate Friday the 13th instead. 🙂

Yum… I just had PB smores oatmeal for dinner, and now I’m eating this for dessert. 🙂 Made it with Morinu silken soft tofu, skipped the water, and added instant coffee and a bit of sugar. Delicious! It’s more like pudding than mousse since I used the soft tofu, but I’m not complaining. So glad I tripled the recipe so I have more for tomorrow!

Made this today (snow day, yay!!) with actually silken soft tofu (what I had) — so a little less like mousse. I used something you might get a kick out of trying if you hadn’t already — chocolate extract! I can get it in my grocery store, but you can make your own (directions are different places online). I used it instead of the vanilla extract and there is a chocolate KICK! 🙂 Just thought you’d like to know 🙂

I’ve been meaning to try this recipe for ages and finally got around to it tonight! I was feeling a little hungry after my run this evening and figured something with protein and a bit of sweetness would be perfect. I used 1/4 package of mori nu because I didn’t trust myself to make/like the recipe, a few drops of vanilla, 1 tbs of cocoa powder, 1 tsp almond milk, a couple pinches of instant coffee granules (definitely recommend!!), and a tiny splash of maple. Topped with a pinch of mini dark chocolate chips, 1/4 sliced banana, and a few shakes of cinnamon. Then I stuck it in the freezer for 10 minutes to firm up a little more. I was so pleased with the result!
