When is a Snickerdoodle not a Snickerdoodle?

When it’s Snickerdoodle Oatmeal!

Serves one hungry CCK or one and a half normal people.  No, I do not recommend taking to the streets in search of a “half” person to eat the oatmeal you cannot finish.  Now if you want to cut your roommate in half…  Ok, no I don’t recommend that either!  So what, then, would I suggest to someone who only wants a recipe that yields the standard serving?  Alter the ingredient amounts, sillies.  Your roommie will thank you.

Snickerdoodle Oatmeal

(Or sub another grain)

  • 1 and 1/2 servings oats (or other grain) (60g)
  • 1 tsp cinnamon
  • a little over 1/4 tsp salt
  • ½ to 1 tsp pure vanilla extract (I use ½ tsp)
  • 2 tbsp milk of choice (plus extra if you cook your cereal in milk)
  • Sweetener to taste (sugar, stevia, agave, etc.)

In a large Pyrex-type measuring cup, combine the flakes with about 1 and 1/2 cups liquid. Add a little salt (I use ¼ tsp plus 1/8 tsp).  Microwave for 4 minutes, 30 seconds (watching so it doesn’t spill over). Leave out for around 10 minutes, then stir and put in the fridge, uncovered.  It’s ok if the flakes are a bit liquidy—that’ll evaporate.

The next day, your hot cereal is ready for you to play. Mix in the vanilla, cinnamon, sweetener, and almond milk.  I also add 1/8 tsp more salt. Stir. Now I like to use my hand blender, but I only do a few pulses (like 4 or 5), so the Snickerdoodle cereal will keep its magical chewy texture.  If you like your cereal to be hot, you can microwave it again at this time.  I actually prefer the cereal cold.  Especially after a run, the coolness is very refreshing.

    My girls love snickerdoodles, but don’t love saying it. They are simply known as “doodles” in our house. I want a “doodle” for breakfast. One day without blended grains is one day too many.

    Yum. I did this with a batch of VOT, but added the same quantities of seasonings, and a couple teaspoons of sugar, as I don’t have agave or anything like that, honey on oatmeal and I have a strange and strained relationship, and molasses just seemed out of place. Since this is oatmeal masquerading as a sort of cookie, I thought it needed a touch of sweetness.

    It’s really the vanilla extract that brings the snickerdoodle-ness to this oatmeal. My usual bowl is old fashioned oats + skim milk + honey + cinnamon, but the addition of vanilla made it really awesome with very little effort. Great recipe!

    I thought that eating the oatmeal cold would be a little, well, slimy texture wise, but it wasn’t at all! I was pleasantly surprised…it’s very much like rice pudding!

    I’m eating this as I type, and I must say, while its good, its lacking a certain element.. chocolate! I also added some honey and nuts, because I can’t get past the texture of oatmeal (yuck!). Not bad though; I’m making it a point to make at least one of your recipes everyday…

    Wow! I made this using steel cut oats cooked on the stovetop with unsweetened almond milk. I let the oats sit overnight and am having my snickerdoodle oatmeal now! It is fabulous! (I tried eating it cold but couldn’t do it, so it’s heated to the temp of a fresh-from-the-oven snickerdoodle cookie!) 😉 Thanks Katie, your recipes never disappoint and always amaze me!!

    I’m a huge fan of your new sugar cookie milkshake and add the cinnamon to make it a snickerdoodle milkshake. Would the addition of cream of tartar/baking soda make this oatmeal taste more like a snickerdoodle, like it does in the shake?

    I was inspired by the recipe. I love snickerdoodles but what I love more is eggnog. I have a cookie recipe for eggnog snickerdoodles that I love so I took that idea and blended it with this. All you have to do is add some nutmeg to this recipe and boom! Eggnog Snickerdoodle oatmeal!
