As visions of chocolate bunnies danced in her head…

Fondant did indeed make an appearance at my Easter. Saturday night, we went to a neighbor’s house for a pre-Easter gathering, and Blushing Bunny Cake tagged along.

bunny cake

My mom and I worked together to make the Bugs Bunny Carrot Cake.

She cooked it, and I decorated. Without a good vegan vanilla icing recipe, we came up with our own. It’s ridiculously-simple!

Fat-Free Vanilla Icing

Whip it all up until it’s thick. Then you can use it as-is or even color it .

I made this and it just tasted like powdered sugar

  46. Kristin says:

i realize your a sugar free blog so i was wondering have you ever found a sugar free powdered sugar or know of a recipe for a sugar free powdered sugar?

  47. Brandi says:

Stumbled on your blog googling fat-free vanilla icing. I am making cupcakes for my Sunday school class for Easter. There is a sweet 8 year old in my class battling pancratitis and can only eat fat free foods. I knew angel food cake was fat free. With your recipe for fat-free vanilla icing, she gets to have a cute cupcake with a Peep on top like the rest of the class. Thanks a bunch.

  48. Emily says:

    This was awesome, awesome, awesome!

  49. Lindsey says:

I made the frosting today but it was runny and would not stay on the cupcakes. Did I add too much milk? How did you get yours to firm up and make the green edges? Thanks

  50. Mary K says:

how much is a little milk?

  51. Rachel says:

this turned out to be more of a glaze; though i added more sugar and vanilla (still pretty thin).
also very sweet for my taste; added fresh lemon juice to subside the strength.
    great base recipe!
