Fondant did indeed make an appearance at my Easter. Saturday night, we went to a neighbor’s house for a pre-Easter gathering, and Blushing Bunny Cake tagged along.
My mom and I worked together to make the Bugs Bunny Carrot Cake.
She cooked it, and I decorated. Without a good vegan vanilla icing recipe, we came up with our own. It’s ridiculously-simple!
Fat-Free Vanilla Icing
- 2 cups powdered sugar or Sugar-Free Powdered Sugar
- 2 tsp vanilla extract
- a little milk of choice
Whip it all up until it’s thick. Then you can use it as-is or even color it .

Stumbled on your blog googling fat-free vanilla icing. I am making cupcakes for my Sunday school class for Easter. There is a sweet 8 year old in my class battling pancratitis and can only eat fat free foods. I knew angel food cake was fat free. this turned out to be more of a glaze; though i added more sugar and vanilla (still pretty thin).
also very sweet for my taste; added fresh lemon juice to subside the strength.

hey, I am making a cake for a little girl with a disease where she cannot have fat. She has never had a decorated cake before, complete with fondant and I just wanted to check if you thought this frosting could be piped and would be able to have fondant adhere to it. Does this recipe make an frosting, or more of a glaze? Any time I’ve tried making a frosting with just powdered sugar and milk, I get a thin glaze that works great on sugar cookies, but not as a cake frosting. Maybe I’m not whipping the mixture long enough? All I have is a hand mixer with regular beaters attached. I would appreciate any thoughts you may have!
