Love Muffins!

Yet another recipe I’ve been promising to post for-ever.  I don’t mean to be a tease; I’m just forgetful (and I have too many posts I want to write!).

Love Muffins

(Makes 10 small muffins)

· 210 grams (1 3/4cups) whole wheat pastry flour

· 2 tsp baking powder

· 1 ½ tsp Ener-G egg replacer (i.e. for one egg)

· ½ tsp salt

· 4 tsp unsweetened applesauce

· 1 cup almond milk (or other non-dairy milk)

· ½ cup sugar of choice

Instructions:

1. Preheat the oven to 380 degrees F.

2. Combine all the dry ingredients (this can be done ahead of time), then add the wet ingredients right before putting the miture into the oven.  Stir until just combined—don’t overmix.

3. Scoop muffin batter into non-stick (or oiled) muffin cups, and cook for 8-10 minutes, or until they’ve puffed up (I take mine out after about 8 ½ minutes, because I’m strange and like the muffins a bit gooey.)

4. For optimum freshness, freeze all the muffins you aren’t planning to eat within two days.  To reheat, microwave for 20 seconds.

Love Muffin Variations:

These muffins are delicious as-is, but they also act as perfect “blank canvases” to jazz up with one of the following ideas:

  1. Powdered Jelly Doughnut Muffins (Add a dollop of jelly to the middle of each muffin when you’re putting the batter into the muffin cups. After baking, dip the warm muffins in powdered sugar.)
  2. Larabar Muffins (add dates and chopped nuts)
  3. Tropical Pina Colada Muffins (Add pineapple tidbits and coconut shavings to the batter)
  4. Mounds Bar Muffins (Mix cocoa powder, chocolate chips, and coconut into the batter)
  5. Raspberry-Marzipan Muffins (add almond extract and raspberries to the batter)
  6. Chocolate Chip Cookie Dough Muffins (Mix in chocolate chips, and undercook the muffins so they’re gooey like cookie dough!)… If you’re feeling reeeeeaally decadent, you can always eat ’em with Chocolate Chip Cookie Dough Oatmeal.  Would that be cookie dough overload?  Is there such a thing?
  7. Elvis Love Muffins (Stir in peanut butter and mashed banana.  “Ice” muffins with more peanut butter.)

And then, of course, there are all the usual suspects: Lemon Poppyseed, Banana Nut Bread, Cinnamon-Raisin, Blueberry, Apple-Raisin-Spice, Pumpkin… The Love Muffins are so versatile!!!

    I’d totally go with the Elvis Love Muffins 😉

    Cause young and old, who doesn’t ADORE Elvis?! And bananas + peanut butter, of course. Always a winner.

    I think it’s an amazing idea to bring them to the nursing home. You could ask the people there what their favorite desserts are, then make them using ideas from that approach 🙂

    I’m sure any kind you make they will absolutely love!

    All of the muffin variations sound great, but I’d go with either the Elvis of Pina Colada variations to bring to the nursing home. It’s so sweet of you to not only volunteer, but bring food!

    I wish I could eat the kind of well-balanced meals that you do! I’m always on such a rush throughout the day though, and never seem to pay enough attention to when I’ll be hungry next…maybe in my next life.

    Anyway, I think raspberry-marzipan would be great for the nursing home. At least, my grandmother loves marzipan, ha, and it’s like an old school combination that might be a popular hit among that crowd.

    The Powdered Jelly Doughnut and Raspberry Marzipan sound so interesting! More emphasis on the doughnut version 😛 Those folks will totally appreciate them. Although Ive encountered one too many older people giving me lip service about being meat free. *sigh, it’s really hurtful especially when they tell you it’s rude to turn down the food they prepared.

    Mmmm, muffins. I think the powdered jelly ones would be awesome. Although, maybe messy for the care home? Probably a good idea to avoid anything too crunchy, since it can be hard on the teeth (which is why we only give my grandma chocolates with soft centres now). The Elvis ones could be fun, if there are any Elvis fans!

    i love the under-baked cookie dough muffin idea!!! slightly under cooked baked goods = my favorite! but for the nursing home, i bet they would go crazy over the elvis ones 🙂

    As for the help you requested…coconut, almond (or almond butter), & chocolate chip is a flavor combo I’ve been loving recently! Add coffee flava, and then you’ve got the new Mocha Almond Fudge kind of coconut milk ice cream!

    Tropical piña colada muffins sound great! And you can “ice” them by putting some jelly or honey on them and then sprinkling shredded coconut on top!
    yum!!

    Those muffins look great, but do you ever bake with oil or any fats for them? Best way to create a tender crumb, and if you really want to get more calories, an easy way to incorporate them. Also, it seems to me you could make some really easy other subs to take in more calories (tried and true…by yours truly :)): add some higher-fat granola to your snacks and cereal, use regular tofu (cheaper) instead of silken, and mmm extra virgin olive oil.

    If there is anything that I know about in this world, it would have to be muffins. If you are looking for some inspiration or new ideas, well today is your lucky day. =)
    Now I haven’t tried all of these, but I’m sure they should taste fine. So some good combos that I can think of are:
    Caramel Apple, Blueberry “Cheesecake” with crumb topping(mmm just saying it makes me want one..or five), blueberry/or raspberry lemon,cherry chocolate, chocolate raspberry mocha, maple pecan, chocolate walnut,
    pumpkin “Cream Cheese”, chai tea, cappuccino/espresso chocolate chip, cranberry orange(yum), Chocolate filled with a)peanut butter or b)chocolate pudding.
    Oh there are so many, but I’ll stop my rambling.
    I like your ideas for the pinapple and coconut one. I think it would be really good with coconut milk as well. 😉 And of course the jelly filled ones are always a hit. Its like a jelly dougnut, but as a muffin. haha.

    Gotta be marzipan and raspberry – two of my favourite things combine to create a truly winning flavour. It’s a no-brainer. Love your love muffins – and love baking with almond milk, too, keeps everything so moist!

    I just came across your blog and I wanted to send you a quick shout out!

    As I was reading through some of your posts, I quickly realized how I can fully relate to your life in many ways. Although I am not a vegan, I am very small, eat very little meat, a healt-nut, a runner, obsessed with food and devoted blogger!

    I definitely understand what its like being so small in such a big world, and having to constantly stand up for yourself in a society that thinks being tiny is an obvious disorder. I eat all the time, I run, I work out, and I practice a normal healthy lifestyle, but I feel that I am having to defend myself to people because of my stature. Do you ever feel that way?

    Anyways, I just wanted to let you know how much I apprecaite your inspiring words. I am so happy to see that there are other girls out there who are able to stand firm on a fully healthy belief in living life for all that it is worth and being completely true to yourself. Thank you for giving me that reassurance because honestly, sometimes I do become discouraged with the way that I look. I wish I could gain a little more weight and not have to shop in the kids section, but I know that I will in time. I know that I am healthy and happy and that is all that truly matters. So, truly, I want to thank you for being an inspiration to me and to so many other young women.

    YUM! The Jell Donut Sounds very good! Perhaps try crumbling choc. cookies in them and drizzling with icing….cookie and cream cupcakes! 😀 You goods always look delish though!

    Awww love muffins! They sound so cute. They look so cute. Everything about them is cute! I think I might try making some with a lemon or lime or orange glaze, since I’ve been obsessed with citrus lately.

    I think it’s a great idea to bring some to the nursing home! I’m sure any flavor would be appreciated. But I really like the sounds of elvis muffins!

    My vote would have to be for something standard – like the Elvis recipe or a traditional Blueberry. The other ones are way more creative, but when you are serving other people, sometimes simple is your safest bet!

    The Elvis variation of these sound really good. Maybe mix the tropical pina colada with the elvis. Add the banana and coconut then ice with peanut butter. I may have to try that. You can’t go wrong with peanut butter.

    Chocolate chip cookie dough sounds like an instant favorite for me! If I had to come up with my own flavor, I would substitute the applesauce in the recipe for pumpkin puree, yum!

    When it comes to muffins I am a banana lover, so Elvis sounds good, but i’d probably skip the PB and add some cinnamon, nutmeg and sprinkle with brown sugar and walnuts on top!

    hi katie! i think a new variation could be the Red Velvet Love Muffin! Maybe add a little nooch for that cream cheese taste and top the muffin with some of your awesome soy based frosting?

    I love muffins that have both chewiness and crunchiness. I would make a batch with dried tart cherries and almonds (and maybe a few chocolate chips too :-)).

    The Elvis version sounds the best! I just LOVE peanut butter with everything!

    My variation would be this:

    Add a little bit of lemon juice and zest to the batter.
    When the muffins are done, poke a few little holes in them, not all the way to the bottom!
    Mix some milk of choice with some stevia and lemon zest until sweet to taste and pour a tiny amount of it onto the muffins.
    Let the warm muffins absorb the milk.

    Frost with icing sugar mixed with lemon juice or just eat plain. 😀
    (put some sprinkles on the muffins to cover the holes)

    They should be moist and delicious!

    Definetly the carrot muffins! I’ve already made them and they’re absolutely my favorite! I believe that the sugar makes them a bit too dense though, so some stevia will lighten em up! No body likes to feel groggy all day! 🙂

    hey katie! what about making them maple glazed? yumm you could use a bit of maple syrup maybe to ice them with and add maple extract to the batter!!!.. (sorry im from canada, cant you tell? lol)
    on the other hand, old people seem to love their prunes and dates, so you could always make a banana-date version, or a “chocolate-prune-digestive” version.. haha

    Yumm… I would deffinetly make a strawberry shortcake muffin for valentines day… and bake them in the shape of little hearts! All you’d need to do is just add a tiny bit of vanilla extract to the batter, while increasing the baking powder to 3 t (in order to achieve the fluffiness of a shortcake!).

    Then, make a strawberry sauce, by combining strawberries and stevia in a sauce pan until melted. Pour the sauce over top your love muffins, and top with some vegan whipped cream… you can by “soy whip” from this website…

    Or, knowing your creativity, I’m sure you could just make your own whipped “cream”.

    Anyway, that’s my take on the love muffin… strawberry shortcake flavor in the shape of a heart, to make it even more “loveable”!

    Raspberry marzipan sounds sooo delicious. I am a sucker for all things almond-flavored. I’d probably add some dark chocolate chunks/chips to the batter as well, just to put it over the top.

    I’d make pumpkin pie love muffins – add some pumpkin, raisins, maybe walnuts, pumpkin pie spice…
    or coconut pineapple – add in pineapple, coconut shavings, use coconut milk instead of almond milk, and maybe even fill the middles with coconut milk yogurt… 😀

    Frankly, hazelnut — the king of nuts IMHO — never disappoints! I would go with cocoa, hazelnut butter and vanilla extract (or vanilla NuNaturals alcohol-free vanilla stevia drops =] ) for a nutella-like love muffin.

    I think the Raspberry Marzipan sounds best, it just seems more “lovey” to me haha. Also, there’s 18 inches of snow on the ground and I’m enjoying chocolate mudslide oatmeal! It’s better than hot chocolate.

    MMM raspberry marzipan sounds good. I’ve actually never had marzipan, but i love the smell of almond extract, haha.

    I love this basic recipe! I make muffins all the time and never make the same variation.
    I still need to try the powdered jelly donut one, and I might sub in some garbanzo bean flour for a cake donut texture.
    I also think maybe an orange zest coconut combo would be super amazing…oh man I might have to go in search of hard to find ingredients here soon!
    I have found some great natural food stores and vegan restaurants here. My new faves are an oatmeal puff cereal (envision puffins) but pb filled! I also got a quinoa flour vanilla cake mix I need to try. I’ve stocked up on vegan empanadas from a few places too, and some squash bread from a vegan bakery. LOTS of yums to be found if you really look in this meat and potato loving country 🙂

    I wonder how they would taste if you used spelt. Next week I think I will give them a try and post back with my results. Spelt is my new favorite flour and I have been using it in everything.

    Hands down… Chocolate Chip Cookie Dough!!! My Goodness that looks delish!!! I haven’t eaten chocolate, dough, cookies, etc in SO LONG… Instead I just use Nunaturals Stevia everyday on my more breakfast of pureed pumpkin & roasted butternut squash cubes! SO DELICIOUS – you should try this out some time!!! 🙂

    Its really hard to make this Muffins better then they are. I tried this using half coconut flour/almond flour variation and threw in some dark choc chips and cashews. It was AMAZING!!!! Thank you so much for the original recipe.

    Elvis and cookie dough come together in my Love Muffins (somehow I don’t think Elvis would’ve objected). They get a generous dose of nut butter, oatmeal, and chocolate in some form. I’m getting hungry just thinking about it : )

    The chocolate chip cookie dough muffins and Elvis muffins both sound amazing. You could also mix them together and form a tasty mutant Elvis chocolate chip cookie dough love muffin! Yum!

    The Elvis muffins sound amazing! I think I would carmelize the banana first (either by just melting it in the micro or by actually using earth balance and turbinado sugar on the stovetop) and then let it cool, mash it up, then add it to the batter. I think it would give the muffins a nice, deep carmel-y flavor. Yum!

    How about a brownie love muffin? Sub pureed sweet potato for the apple sauce and add some cocoa powder, maybe a couple of chocolate chips for a double chocolate brownie.

    Nigella Lawson does Christmas Morning muffins which contain dried cranberries, cinnamon, and the juice of a clementine. They smell divine when cooking, perhaps you might have to wait a while to try those. 😉

    I would quite fancy mocha ones with some choc and some dark coffee added as part of the liquid.

    Or carrot cake muffins – grated carrot and some raisins, and a cream cheese like frosting (guess you could blend tofu for that).

    Or finally, banoffee… melt your bananas a bit more and something that kind of gives it the toffee taste.

    Hope that is enough ideas for one day. 🙂

    Sounds amazing!! I’d want to try a PB&J version though. Dried tar cherries & roasted peanuts… yum! I’ve been reading the larabar website and experimenting with their flavors and I think it’d go great. I’ve actually gotten the fiance to eat vegan for almost two weeks now… and during the super bowl too!!!! I never thought I’d get him off wings and he actually suggested a no meat day.

    How about a berry explosion? Chopped cranberries, blueberries, raspberries, strawberries and maybe a few diced apple pieces…with some lemon zest?

    yummmm! These all sound really good. I think the mounds bar ones sound extra delicious, but I am a chocolate fiend. Agree with an earlier commenter that I’d probably stay away from nuts and possibly peanut butter because of allergies and difficulty eating.

    I also think a raspberry muffin or sweet potato muffin would be good, too.

    Powdered jelly doughnut muffins sounds sooooo good. And so much healthier than the kind at Dunkin 😉 I also think a variation on the Elvis with chocolate chips instead of banana would be delish!!

    My creativity is lacking but I don’t even think I need to come up with another version of my own, you’ve covered all of the most amazing combos out there! I can hardly choose but I’m a sucker for ANYTHING ooey gooey so love muffin a la chocolate chip cookie dough sounds about incredible to me!

    Oh I would definitely add a flavor! Pumpkin-pecan (with a touch of flax)! I think the stevia would be perfect over sugar for this flavor because pumpkin often needs a bit of extra kick…

    The Elvis is definately my favorite. But I always love peanut butter and banana. It is definately the most genius food combination out there in the world!

    I think I’d go for banana chocolate chip. Or “banana split” which would include banana, chocolate chips, small bits of strawberry and walnuts. I think you could fit that all in, right?

    Hmm, I think I would have to go for the Elivs PB/Banana combination! Lean protein AND complex carbs all in one muffin. 🙂 Not to mention, pb/banana is a classic and I’m sure the residents of the nursing home haven’t had it for a few years. Just my opinion. 🙂

    I know I already posted, but what about pumpkin pie muffins with canned pumpkin or even mashed roast butternut squash and then cinnamon, nutmeg, cloves, ginger and perhaps even some chopped hazelnuts! Yummers!

    Iv never tried the infamous lara bar cos you can’t get them scotland, boo hoo!so I’d love to try this kind to get an idea what a lara bar is like xxx

    Mmm, the mounds bar muffins sound delicious, especially warm and topped with coconut butter!

    I actually recently made some pretty similar muffins, only they were gluten free and I added banana and blueberries. I baked them with stevia and they came out great! Check it out at my new blog sexyceliac.wordpress.com Also featured is your banana blender cereal!

    and my own would be chocolate and peanut butter…

    or maybe if there was a way to caramelize them???

    EVERYTHING is better with caramel.

    OR, although it’s not vegan… i bet you could make them cheeeeeeesy too!?!?

    I would sub the applesauce in the muffins to change the flavor! First thing that come to mind if using pumpkin puree and adding chocolate chips to the batter, making pumpkin chocolate chip muffins!
    If you sub applesauce for mashed bananas and add raisins and walnuts you will have a yummy Banana Nut Muffin!!
    Another thing you can sub applesauce with is Mashed Butternut (or kabocha, or other squash of choice) squash, it makes for delicious muffins! As do mashed sweet potatoes!!
    Another idea? Sub applesauce for grated zucchini, add walnut pieces and make Zucchini Nut Muffins, have you tried that? Zucchini muffins are really yummy too!!
    Hope those ideas are fun for you and that I win the stevia drops, so exciting!!

    I’ve been looking for vegan baking recipes lately. I’m so glad I found this. I love how you can varry it to whatever you are in the mood for. I love pumpkin, so I would add pumpkin puree, pumpkin spice, ground flaxseed and pecans. Yum!
    Or grated carrots, raisins, nuts and a little cinnamon.
    Or zucchini, nuts and a hint of cocoa.
    But the powdered jelly doughnut muffins sound yummy. What a cleaver idea. Kids would love them.
    I just might need to make one of these this weekend! Thanks.

    LOVE the muffins! I think all of the creations sound scrumptious, but i thought i’d create a new varitety for you!

    The Tripple Theat: Crunchy peanutbutter, wihte chocolate chips, and butterscotch chocolate chips.

    I’ve been wanting to make this recipe for so long and now that I finally have the ingredients, I realized I don’t have muffin pans (dorm kitchens suck!) Have you ever tried to make them into balls and just bake like that?

    I just made these, except I used a flax egg and added in 2 T each of cocoa and carob powder. I also mixed some liquid stevia in with the almond milk instead of sugar. My family loved em 😀
