(Breakfast) Cookie Monster… and another New Food

Have you all met Abbie yet?  This girl is a genius.  She took my Snickerdoodle Oatmeal recipe and adapted it to create a Snickerdoodle Breakfast Cookie!

And now, on to Week Three of the New Food Challenge

This week’s new food comes courtesy of the Asian Market.  It’s called “Yaki-Fu” or “Kai-fu” or just plain “fu”… or “bran puff” (leave it to the Americans to call it something boring!).  Below is Wikipedia’s definition of the oddly-textured stuff:

Baked spongy gluten: Similar in texture to a sponge, kao fu (sometimes labeled in English as “bran puff”) is made by leavening raw gluten, then baking or steaming it. These are sold as small blocks in Chinese markets and are then diced up and cooked. This type of gluten absorbs its cooking liquid like a sponge and is enjoyed for its “juicy” character. Chinese kao fu is coarser in texture than its Japanese counterpart, yaki-fu, due to the relatively larger air bubbles it contains. Kao fu is available in fresh, frozen, and canned forms.

While searching Google for a picture (I forgot to take a pic of the package I bought), I came across a photo from none other than the famous Susan!  Along with the photo, Susan wrote a terrifically-informative post about the roasted gluten, highlighting its nutritional benefits and uses.  (She also provides a yummy-sounding recipe, which I’ve bookmarked.)

Chocolate-Covered Meal of the Day

This being my first time with yaki-fu, I was quite unadventurous– I simply employed the sauce from this post (friend #3) to marinate the fun, sponge-y pieces.  It was awesome!  The yaki-fu soaked up all the flavor of the sauce.  I have big plans for this stuff in the future ;) .

Rounding out the meal: 

Zesty Zucchini Fries, with a bit of vegan mayo (first featured in this post) for dipping, the usual best-ever tomato soup, and Eden Grains’ Rye Pilaf (I love you, Eden Grains!)

interesting new food :) I have a rutabaga waiting for me in the fridge, but I’m not sure what to do with it! I’ve never tried it before and am excited.

What exactly should we be doing for this challenge besides posting our meals? Are we limited to the one food we chose or is it any new food?

I like the chocolate covered makeover! It looks great, very chocolately!
That gluten looks interesting, I love the homemade stuff. That snickerdoodle oatmeal, looks awesome, especially in cookie form!

i am having so much fun with the new foods challenge! last night i tried tofu shirataki noodles. those spongey things look interesting, i have never even heard of them.

i love cinnamon so that snickerdoodle cookie is right up my alley! thanks

good new food find! I’m actually having a little trouble finding new ones to try – I’ll have to take a trip to some ethnic market soon.

I tried Ugli Fruit this week and it was really good – I think it gets a bad rap because of its name!

I love love kao fu.. I even made it once from scratch! :) this is a vegan friendly and good source for the protein! so glad you tried it!

Why is it that you always spead out your food groups? Vegetables, grains and protien- and almost never is there any healthy fats (other than nuts) or sugar in you meals…? I know you gve up on gaining weight, but this seems like a wieght-loss diet! :-0

I tried two new things today: Green Juice and Ethiopian food! The Ethiopian food included sauteed collard greens, which I had never had before. A-MAZING!!!!!!!!! Check out my newest blog post!

I’ve seen the roasted gluten before but never knew what to do with it!! It seems so obvious now…

I tried a fresh artichoke this week and loved it. I’m going to a global food store tomorrow and can’t wait to seek out something exotic :)

I DEFINITELY want to try some FU. Makes me think of how I like to dip my bread/crackers in soup when I am eating it so It will get soggy. YUMMY!

Interesting! I have a package of star-shaped fu from Japan and have no idea what to do with it other than soup. Looks very good!
