It takes someone Special to be a Daddy

by Chocolate-Covered Katie on June 21, 2009

Happy Fathers’ Day to all the Handsome Dinner Dates out there!

No time for a new post, as my attentions are needed elsewhere (a certain “breakfast in bed” needs to be made!).  So I’m going to cheat and give you last year’s post.

Last Year:

Remember that one person from high school who seemed to have it all—the looks, the brains, the popularity? Well, if you went to a certain high school on Long Island, New York, then the person you’d be remembering is my dad.

Voted most popular and most athletic in high school, he holds two Ivy League degrees, speaks five languages (although my family isn’t so impressed by this feat—his own dad spoke SEVEN), and is so gosh-darn friendly that you can’t help but like him, despite all of his enviable qualities.

Such an extra-special guy deserved an extra-special Father’s Day breakfast. So, that’s exactly what I made for him.

I dug out my copy of the Voluptuous Vegan cookbook and, with a few modifications, whipped up some light, airy vegan crepes fit for a king… or, at least fit for the guy who thought he had it all!

Look at those gorgeous crepes– Now he really DOES have it all!

(The whipped cream on the crepes is Redi-Whip, not Soyatoo. After all, it was his day, not mine.)

As an after-dinner treat, Daddy Dearest requested we make his favorite cake (definitely not vegan– it has mayonnaise!). I let Mom handle the baking, but the cake-decorating was done by Yours Truly.

(My dad, a former college soccer star, is obsessed with the sport, hence the fondant soccer-playing bear.)

Daddy’s Little Girl :)

The greatest gift I ever had
Came from God; I call him Dad!

Hey Katie – I just came across your new blog since you moved from blogspot! Very nice! I dropped off the face of the earth with busy busy life syndrome for awhile. Also moved my blog to wordpress – and have moved to Alaska! haha. Anyway, CUTE cake! You’re such a sweet daughter. Look forward to reading your blog regularly now. :D

Cheers,

Hmmm… I’m so sorry! Thanks for letting me know the link’s messed up. I’m making a note to change it as soon as I get a chance. In the meantime, here’s what I do for GC Pancakes: Make a batch of regular whole-wheat pancakes (or any pancakes, really), and ice each pancake with this: http://chocolatecoveredkatie.com/2010/05/20/homemade-artisana-cacao-bliss/
Then add chopped pecans and shredded coconut to each layer.

In any case, the link ought to go here: http://chocolatecoveredkatie.com/2009/07/06/a-german-chocolate-pancake-feast/

UGH!!! What is wrong with me? :(
Thanks so much for letting me know… I don’t know how that happened. Here’s the REAL link, which I’m fixing right now: http://chocolatecoveredkatie.com/2011/01/05/banana-pancakes-for-one/

Once again, thank you so so much for letting me know it was wrong! (And if you find any others, please do tell me about them too!)

Love,
Katie
