I still don’t know whether to call them muffins or cupcakes, but the 24-Carrot Cakes taste so good, it doesn’t really matter what they’re called

A few weeks ago, blog-reader Lauren sent me this email:
Hey there Katie,
I’ve been a reader of your blog for only a few weeks now, but I am so glad I discovered it. It is one of my favorites and I now check it every single day. Recently I had a party to attend, and I wanted to bring carrot cake but I needed a recipe. I knew exactly where to go! I searched on your blog and sure enough I found the perfect recipe for carrot cake cupcakes that sounded delicious. Katie, these were some of the moistest, softest, fluffiest cupcakes I’ve ever tasted!
These cupcakes were the hit of the party! Everyone was asking for the recipe. They went really well with all the beer. Hahaha! I iced the cupcakes with your cheesecake mousse recipe, which tasted like real cheesecake icing! I’m trying to be a vegan but my friends aren’t, and they all loved it too. I was a little scared to serve vegan cupcakes to non vegans, but I shouldn’t have worried at all because they were all gone by the end of the night.
Plus all the girls loved the fact that they were less than 80 calories per cupcake. They couldn’t believe it!

Haha Lauren, the cupcakes are also quite high in fiber, thanks to the whole wheat flour and the carrots. You might not want to mention that at any parties, though

The super-sweet blogger Katharina also just made 24-Carrot Cakes. But she didn’t need to worry about whether to call them cupcakes or muffins. That’s because Katharina made the recipe into Carrot Cake bread!

The scary thing is that I made a batch of these cupcakes/muffins the very same day that Christina did!

I still think it’s pretty cool that we decided to make the same recipe on the same day. It’s like we had twin-sense going on. Have you ever experienced that? It happens to me all the time– like the other day when I was *just* about to dial my friend (with whom I hadn’t spoken for about a month), and she calls me! Supposedly, it happens a lot to twins and old married couples…
Anywhoos… Go make some carrot cake cupcakes/muffins/bread! You won’t be sorry, and your house will smell amazing

Mmmm I love carrot cake so I will definitely check that recipe out Katie! I actually don’t think I’ve ever baked carrot cake before–gasp! As an avid baker, that is quite a disgrace!
I get the twin thing all the time with my sister. At least once a month we end up wearing the same outfit (color scheme, type of shirt, etc.). Other times, I say something vague like “You that what thing” and she goes “Oh yeah!”, and she totally knows what I mean. Haha, we not only look like twins (we aren’t), but we have that twin-sense thing going on!

Those look worth getting some carrots for! I’m usually not a fan of raw carrots, but I love carrot in baked goods.

I’m so glad you posted this today! My daughter is allergic to milk, so I keep a stash of homemade cupcakes in the freezer to bring along to birthday parties, and our current stash is almost gone. I’ll definitely be making these! And I’m going to try out the cheesecake mousse too, because I haven’t been able to find a quick, tasty frosting recipe for her yet but that sounds delicious!!
What’s in a name, anyway? They look delicious–and they’re carrot cake!! No-brainer.

Old married couples! That made me laugh, my boyfriend and I do stuff like that all the time. I’ll pick up the phone to text him, but it will ring when it’s in my hand. Or we’ll both tell each other about the same thing we both watched on TV at the same time on our own without knowing the other was watching it! It’s weird lol

Just wanted to drop a quick note that I made your carrot muffins (well in bread loaf form) this morning, and I was so delighted/surprised how wonderful they turned out for such a healthy recipe! Mine were super-moist and dense almost like gingerbread. I did make a few little substitutions, since I start recipes before looking what I have on hand first. Basically, I did a mix of yogurt and soy-milk for the liquid and used just a few tablespoons of blackstrap molasses instead of sugar. Wonderful! This will be a regular in the household as I love carrot stuff. Thanks! And, been enjoying all types of fudge babies too…happy to have stumbled upon your blog. -s.
