I’ve blogged before about my dad’s past penchant for making me pancakes.
(And my own penchant for eating them in a very strange manner…)
Back to the subject. This Fathers’ Day, I turned the tables: Instead of Daddy Dearest cooking me pancakes, I whipped some up for him. But these weren’t just any old pancakes. Nope, I decided to put on my extra-special chef’s hat thinking cap and have a little fun! (With dear old Dad’s permission, of course)

Uh-oh… this could be dangerous. What’s she going to create now?
German Chocolate Pancakes, that’s what! In the end, it was between that and Pina Colada Pancakes. But German Chocolate eventually won out because– let’s face it– chocolate always does

For the topping, I covered each pancake in Chocolate-Coconut Heaven, then sprinkled on chopped pecans and shredded coconut.

I based my pancakes off of this whole-wheat vegan pancake recipe, which is my go-to recipe for perfect pancakes. (I made a few modifications, such as using more egg replacer and less liquid, because I wanted plumper pancakes. I also added some maple syrup to the batter. My dad’s love of the stuff rivals Will Ferrell’s!)
Someday, I’m going to have to do something about those Pina Colada pancakes. They’re just begging to be made…
Challenge Time!
Remember when I asked you to think of your favorite dessert and then turn it into oatmeal? Well now I want you to do the same thing—in pancake form!
I challenge you to a Dessert Pancake-Making Bonanza.

All you have to do to participate is whip up a truly-decadent pancake recipe and blog about it sometime in the next two weeks.
There might just be a prize for a random winner at the end of the month: from PB&Co, Artisana, or even a personalized Photoshopped picture. (For example: perhaps you’d like to be transformed into a bumblebee?) I’ll let the winner choose the prize. But the real prize will be all the fun we can have by getting ideas from each others’ crazy pancake creations!
Unfortunately, this challenge is just for bloggers… but that doesn’t mean you blog-readers are off the hook. I still want to hear your dessert-pancake ideas. Leave me comments!!

Oh, my Katie. You are the queen of decadent and mouth watering breakfasts. I just made my mom blueberry pancakes for Mother’s Day (I’m even later than you!), but they were nothing compared to those beauties above. I’m putting on my thinking cap for a seriously delicious pancake recipe now!

Ahhh…. you are making me crave pancakes. Wonderful creation. I’ve recently had some awesome pancakes at the Original Pancake House. Their German Pancakes and Swedish pancakes are awesome. Never knew there were so many different varieties until I visited the Original Pancake House.

Those pancakes look amazing! Do you really eat them all in a stack like that? I have wondered this before when pancakes are served in stacks. I have always spread mine out on a big plate to eat one at a time. One of those silly personal preference things.
OMG! Those pancakes look amazing! They made my mouth water. German chocolate cake used to be my favorite before going gluten,egg, dairy etc. free.
