Are you getting sick of Pancake Posts?
(Or sick of me talking about the Pancake Challenge?) I promise, later this week, to take a break from said posts. But before I do, there’s one more pancake post I must publish: my own submission for the Pancake Challenge. Of course it will feature chocolate! Any guesses? Hopefully I’ll have it up tomorrow.
The pancake posts are getting insane! Just since yesterday’s Pancake-Update post, so many more of you have posted delectable-lookin’ pancake creations: Coconut-Orange, Apple Pie, Nutella, Gooey Strawberry, Cinnamon Roll, Blueberry-Almond Torte… but you’ll have to wait until the next Pancake Update for the links to these creations

Pancake Sundays
When I was a little girl, my mom did all the cooking during the week. But on Sundays, it was Daddy’s job to take care of breakfast. Sunday mornings always found us eating like royalty– crepes, waffles, French toast… but there was no doubt as to my dad’s specialty: Pancakes.
Fast forward many years.
CCV is sitting at the table, grey hair framing her face, doing crossword puzzles while her grandchildren play by the fire.
Uh oh, you fast-forwarded a bit too far!
Rewind some.
That’s better.
Now, back to the story.
Although my younger sister and I are both grown, on many Sundays one can still find our dad in the kitchen, cooking up a pancake feast for Mom and himself. Last Sunday, I decided to join the flapjack fun by making my own vegan pancakes to give Dad’s a run for their money. (Actually I made my pancakes on Saturday so they’d be ready to eat Sunday morning. I hate cooking when I’m hungry, especially right when I get back from working out.)
I know there are some great pancake recipes out there (my apple-raisin one included!). But since I hadn’t made pancakes in a while, I opted to keep things simple, using Hodgeson Mills Buckwheat pancake mix and just adding water and a tiny bit of EnerG egg replacer.
Accompanied by hot Tofu Scramble and a big bowl of Apple Pie Pudding, this made for a beyond-perfect post-run breakfast. Plus, my parents (who had just woken up) joined me, with their Aunt Jemima pancakes and syrup. If only Little Sister had been there, it would’ve been like old times. 
I ended up spreading some of the pudding on top of the pancakes, to the delight of my taste buds. 
After finishing the tofu scramble, my chopsticks were conveniently right there; it woulda been silly to walk all the way over to the drawer to get a fork, no?
So…

Oh yes I did!

Ooh, and on another day, I put the pancakes straight into the apple pie pudding. Voila! Apple Bread Pudding!

Yum! Apple pie bread pancake pudding sounds delicious! And how cute that your daddy makes pancakes. Mine would certainly burn down the kitchen!
BTW, I made my pancake sausage roll-ups for breakfast and I’ll post ‘em tonight….I’ve decided, however, to call them sausage pancake tacos…cuz that’s what they look like.

Oh my goodness this look delish! I think it is so cool how you use chopstick to eat, I have always wanted to learn how and I can never figure it out. You should do like a tutorial or something!

I love banana pancakes and I love blueberry ones so finally, I had the *brilliant* (ha!) idea of putting them both in one pancake ’cause I couldn’t decide between them..and thus my favorite was born..banana blueberry! Hope you are having a great time on your vacation!!

Mmm… my uncle used to make the best pancakes. Well, we called them “flapjacks”, but they are basically the same. He would flip them and spin them so high into the air that they almost hit the ceiling several times. Hahah.
I am a pancake chick all the way! I am FOR SURE going to enter the contest! Oh, but Katie, do the pancakes have to br vegan to qualify? It’s no problem if they do, I was just wondering so that I don’t enter something that won’t be considered. I have LOADS of different pancake recipes that I’m dying to share!
I will never be sick of pancake posts! But I probably won’t be able to take part in your cahllenge after all. Too busy! I have some pancake recipes on my blog though.
