I’m a long time lurker, first time commenter….I love your blog and all of your innovative recipes!! I am not vegan, but I have been many vegan things for my whole life because of a milk intolerance…anyway I had a question about the Kuzu…does it thicken in a similar way to Agar? Or is it more of an arrowroot type of consistency? thanks for writing such a great, informative blog!

and second..I’ve never had polenta in my life. I sometimes want to try it when I see it at the store but I’m a little scared for some reason. What does it taste like and what is its texture?? I feel like I would like it b/c it looks like oatbran. Do you ever have it for breakkie?
