Sending out HUGE thanks to everyone who left words of wisdom on yesterday’s running/feet post .

I’m truly grateful that so many of you took the time to leave me advice (although, by now, I’m no longer surprised by the amount of kindness y’all show again and again).  If you missed the post, more suggestions are always welcome :) .   

 

 

Every time I hear the word “brilliant” I think of the Guinness commercial from a few years ago.

Christmas can’t come soon enough!

For the Fudge Babies above, I used cashews instead of the walnuts (and upped the proportion of dates a little bit).  I think I might like this version even better.

But maybe my judgment’s just skewed by their incredible cuteness! :)  

Perhaps I should spread peanut butter or jelly or coconut butter or frosting on top and smack two together… Fudge Baby Sandwiches!

I’d like to take the credit for the genius cookie-cutter idea, but I can’t.

Seriously, she is one smart (chocolate) cookie.  How lucky am I to have her in my life?

Katie, your mom had a great idea. I made a raw pecan pie by cutting out the chocolate and splitting the walnuts and pecan half and half in the recipe. I also added agave. It was fab! I brought it to a party and everyone thought it was real pecan pie!!

I’ll have to make fudge babies with cashews or pecans this weekend. I loved the walnut version, so why not try other nuts?!

My mom always gives good advice, but the best thing she does for me is listen (usually to me ranting about something, haha). One of her favorite sayings is “failure to plan on your part does not constitute an emergency on my part”. I hated hearing that when I was a teenager, but now I totally understand and live by those words.

i feel you on the christmas thing- i love going for runs at night to see the christmas lights, and the smells of pine needles and peppermint, and being with my family, and, of course, having an excuse to bake!
i’m also with you on the running pain…knees have been a little achey since a 13.5 mile run on monday. in the past, the achiness has either gone away after a couple easy days or made it impossible to walk…it’s always fun waiting to find out which its going to be ;)
until then, it’s the elliptical for me :(

i love the fun shapes for the fudge babies!!! i want to make some now for Halloween with my roomie’s ghost and pumpkin shaped cutters hehee. my mom always gives me the BEST advice – never about cooking though (she hates to cook which unfortunately has been passed on to me…) but about life lessons – cheesy!?. she always says “be kind to yourself” and “everyone in life is going through their own issues so don’t make assumptions and always give second chances”

My Mom has given me lots of ‘pearls’ over the years, but one that I tend to share the most with people is the tongue in cheek

glad things are ok with your ankle! check out eSoles, I’ve been using them for 2 years (after other custom orthotics) and have had great luck :)

Hey Katie – question, what kind of dates did you use for your fudge babies? The only whole dates I can ever find are dried pitted medjool dates, and they are just so dry and crumbly, they’re never very good in anything I’ve tried making with them. Of course health food stores around here carry the softer coconut date rolls, but those are SO expensive! So I was just wondering if there was a particular brand you use.

I’m so glad that you got your foot issue solved and that many bloggers were there to help :) I used to run, but I was a slight overpronator, but had too many injuries to continue running, so I’m probably no help!

Hehe, love those cookie cutter fudge babies!

My mom’s given me so much awesome advice as well, and she is my bff (along with my sister). Mom’s are seriously the best!

Oh my goodness fudge babies. Oh my goodness cookie cuttered fudge babies! Your mom is a genius! I’m trying those asap. The best part, besides how easy they are, is that those ingredients are pretty much always around my home. So I can make em ANY TIME. Tomorrow? It just might have to happen. And I’m pretty excited about it.

Love the shapes of your fudge babies! I love cutting cookies and bars into fun shapes… makes eating them such a different experience. Ok .. well maybe that is just me! You and your mom are so cute! My mom has given me some great advice and support through all these years… not sure how I will ever repay her!
