Peanut Butter Babies

These healthy treats taste like eating peanut butter cookie dough!

(Above, chocolate peanut butter babies)

Peanut Butter Babies
(Makes 120 grams, which is a tiny bit more than the size of two Larabars)

  • 1/4 cup roasted, salted peanuts (30g) (I use roasted-unsalted, and I add about 1/8 tsp plus 1/16th tsp salt.)
  • scant 2/3c dates (80g) (I use SunMaid, because they’re super-soft.)
  • 1/8 tsp pure vanilla extract
  • Optional: chocolate chips or cocoa powder

Blend the ingredients in your food processor (I used a Magic Bullet short cup).  Smush into bars, roll into balls, or use cookie cutters!  These peanut butter fudge baby bars taste divine warmed up a little in the microwave.  Oh who am I kidding?  They taste divine ANY way you choose to eat them.

  1. Add dried banana for Elvis Babies
  2. Dip in chocolate for Buckeye Babies
  3. Other dried fruit for Pb&J Babies
  4. Add chocolate chips or cocoa for Chocolate PB Babies

    I love this action Katie…wow soooo delish looking! I don’t cook (un-cook) with salted nuts very often b/c I have no idea why?! LOL but the PB cookie dough… you had me right there 🙂

    I posted once when I first first started my blog about making homemade larabars. My ratio was 1/2c dates to 1/3 c nuts. So your ratio of 3 to 1 dates to nuts would just make things so much more chewy and delish!

    I’ve always been sucka for peanut butta so this fudge baby is tops for me. The first think I would make in the Vitamix is almond milk. None of my other blenders have been able to handle blending almonds.

    I forgot to mention in my above comment that the first thing I would make would be THICK smoothies. I like to eat my smoothies with a spoon, but my current blender cannot handle that level of thickness, so I have to add more liquid than I would like.

    These fudge babies are my fave flavor! I love nut butter and chocolate anything! With the Vitamix, the first thing I would make is homemade hazelnut milk. I havent tasted it before but I heard it is richer that almond milk. My blender is so low powered that it would probably break if I attempted 🙂

    I can’t wait to make this baby at home! Peanut butter is my LIFE.

    The first thing I’d make with my Vitamix would be a frozen banana-peanut butter-choc chip ice cream!
    I already had great results just blending frozen bananas but with a Vitamix it would be easier, quicker and possibly even creamier!
    I’d add some agave or maple syrup to sweeten, the chips can be added afterwards. 😀

    Wow these would be my favorite flavor!!! The first thing I would make if I had a vitamix would be my raw pina colada shake. My blender leaves it so chunky!! Then I think I would make some nut butters then some banana softserve…I want a vitamix soooo bad!

    The first thing I’d make in my VitaMix is a nutrient-packed green smoothie – I’d pack that thing with all the veggies my regular blenders can’t handle, and let it whirl!

    Hi Katie, I just discovered your blog recently and tried these last night. I found I needed to add a couple drops of water to get everything to come together in my food processor, but maybe my dates were just extra dry… but nonetheless, thanks for sharing a great treat! My husband and I each ate half the recipe prior to our run, and it was a great little energy boost that even kept me satisfied for a little while after our workout. I think next time I will make German-chocolate-cake babies using pecans and toasted coconut flakes!

    OMG! I just made these and they are fantastic! I’ve had them 3 days in a row now. Have you tried freezing them? The dates won’t ever actually freeze, they just get CHEWY and wonderful!!! I use Bahri dates since they are sweeter and softer than even Medjools. They make perfect babies. 🙂

    I’m going to be trying to contribute to the Worldwide Vegan Bakesale in April and I’m thinking of making babies and selling those instead of baked goods. 🙂 Would you mind such a thing? I think you’re the creator and I’d hate to make money (even if it’s for charity) without your permission.

    I’m not able to get to the official sale in MN due to doing my big art sale of the year (I crochet stuffed animals and cutesie stuff!) but I want to sell at my table on the day and donate the proceeds.

    Some people have told me they’ve had success with prunes, raisins, or even dried figs. If you try something, let me know what you tried and how it turned out :). One of these days, I’d really like to try dried figs in place of the dates!

    I got the ingredients to make these but I’m wondering about the addition of chocolate… you say that cocoa powder or chocolate chips can be added to make it chocolatey, but how do you think it would turn out with hot chocolate mix?

    I came across your blog ages ago but lost the link, and came across it again recently and I just wanted to say… I’m in love. I’m not vegan nor is anyone in my family, but I love your recipes! I’ve always been pretty open-minded about what kind of recipes I make so it wasn’t too hard to win me over, but I’ve actually gotten my father, who is definitely harder to persuade to try vegan/more “unusual” ways, to love your blog too. I’ve already made the deep dish cookie pie to great success (making it again this weekend), and I just made these chocolate peanut butter balls and they’re just… amazing. I haven’t yet decided whether I like them more warm or cold (I know, serious business) but either way they’re soooo good. And the fact I’ve converted my dad as well is just more proof. 😉 (He’s actually willing to go out and buy tofu for the chocolate fudge pie! Big deal considering tofu is not something often seen in this household…)
    Anyway, just wanted to say thank you! I’ve already started using the voluminous oatmeal every day (admittedly it doesn’t work as well for me as it does for you – for some reason it’s still somewhat liquidy in the morning – but it’s still tasty and more filling than any other breakfast I typically eat!) and I’ve bookmarked plenty of other recipes I intend to try soon. 🙂

    Just thought you would like to know that your recipe has made its way to India and the locals approve 🙂 I have a teaching job here, and this is my go-to dessert since dates and peanuts are cheap and I don’t have an oven. An Indian coolie delivered something to my house today, and it’s customary to give water and a treat instead of a monetary tip. I didn’t think I had any snacky stuff to give him… but wait! I went to the freezer and popped out some fudge babies. He looked at them questionably and gestured to his mouth to make sure they were actually food… and he LOVED them! Big smile, wanted more.     In Canada, wed can get pitted, pressed dates in a package that is almost like carmel when youtake it out. Sooooo easy and less expensive than buying dates. I make fudge babies and now squares all the time!!!!
