Carbo Loading:
(verb) To consume large amounts of carbohydrates through food intake. A.k.a. what this card-carrying Carbohydrate Lover does all the time

Carbo-licious Meal of the Day
Spiralized zucchini noodles with creamy Three-Ingredient Alfredo sauce, veggies similar to the ones from Thanksgiving , and…

…two toasted whole-wheat English Muffins with Smashberry Jam.
Two muffins are better than one
.
And vegan Three-Ingredient Alfredo sauce is good on anything!

Speaking of carbs… I’m finally getting around to posting the recipe for that oat milk! Here she be:
CCK’s Oat Milk
Ingredients:
3 and 1/2 cups super-hot water
1 cup rolled oats
Optional: vanilla extract, sweetener, salt
In a lidded container, combine all ingredients, cover, and refrigerate. After a few hours (or a day), blend until smooth. (Edit: a reader left the suggestion of grinding the oats in a coffee grinder first if you want a smoother consistency.)

I love my carbs too
I’m also getting ready to go back to school & do sorority thangss. Looking forward to the upcoming shenanigans!
Sounds like a fun week … for the blog anyway
What year are you in school?
Back to school?! BOOO! Nothing going on for me this week at all. Just still trying to get back in the groove.
Your meal looks great! I still have to try zucchini noodles some day…
that sounds fun!
As for your question, I have one last exam this week, and then I have to get ready for the next semester, too (that’s not until february, though). Hope you enjoy the last bit of your vacation!
Looking forward to your day-in-the-life post
Hi!
‘Carbo Loading’! You should start your own dictionnary
Stick your Smashberry jam to the fridge…3x sweeter!
I’m looking forward too for the Day-in-the-life post…Muahaha I’m such a creepy lurker!

great carb-o-licious meal! I, too, am a total carb lover. the alfredo sauce looks great too! like Bonnie, I’m excited for your day in the life post!
enjoy the end of break and good luck with going back to school!
Love the carbs (unrefined healthy ones, of course!). I want those english muffins–english muffins with jam are one of my favorite things! The spiralized zucchini looks delicious too. I really should get one of those spiralizers. I think I’d eat a lot more zucchini if I did.
Yikes – busy week for you indeed! An exciting one for me though when that VitaMix giveaway starts
Next week is more job searching and playing the waiting game for me – I know it’s crazy but I can’t wait for a schedule!
hip-hip-hooray for carbs! two muffins are certainly better than one. i’ll have to try that alfredo sauce, pre-veg days alfredo was my pasta accomplice of choice
mmm…. carbs….
carb’s are worth living for <3 happy sunday snookums! xo
For the record – Calorie King is telling me I’m averaging 50% of my diet in carbs daily. I can live with that!
looks like you’ve got a jammed-packed week ahead of you. i look forward to reading all about it!
Hi Katie!
I’ve been following your blog for a while but this is my first comment- your meal looks delicious! I am so excited to find someone who shares my love of chocolate and oatmeal and has the time to make delicious concoctions. I am a working mama so I don’t have much time. We are also back to school- but I am the teacher. Teachers dislike going back to school just as much as the students!
Katie(I am also a Katie
I’m on vacation in San Diego! I’m pretty sure it would take a while for this vacation to lose it’s appeal.
I made my first juice pulp crackers yesterday! Not raw, since I baked them at 200 degrees, but really fun to make!
I heart carbo-loading. Good luck with the back to school grind!
Looks yummy! I can’t wait for the vitamix giveaway
This week…is another week of work, meetings and life in general
I’m going to try to make it a yoga filled week!
Have a happy Sunday!
I’m a major carb-lover too. One time I went on a low-carb diet in college and I was the grumpiest, most miserable person ever. No one wanted to be around me. Never again!
Also, I want a spiralizer so badly! Where can I get one? Online?
Sounds like a busy (but hopefully fun) week – for me is checking out two (or three) schools and deciding when and where (and for what) I am going back for!
VITA-MIX giveaway? Ahhhhhh! Haha
I love my carbs too! Give me a bowl of whole wheat pasta and I am happy, happy girl!
<3 jess
xoxo
The pool at a local high school opens up to free swim this week so I can swim whenever I want!… I’m going to try Hot Yoga one day this week…. and have 2 scholarship essays due! eek!
Good luckback at school. I love vacation SO MUCH….
PS: SO EXCITED FOR ViTA MiX! Can’t even type… AHH!
I am a HUGE carb lover. Mainly of the nooodle variety. YUM!
Vita-Mix GIVEAWAYYYY!?? HORRAY!
yummy carbs!!! i made your butternut me up fries for lunch today. soooooooo good.
i go back to school in exactly a week
but spring break is in less than 2 months so that will get me through lol. good luck with packing/preparing for another semester!
I agree with the 2 is better than 1 theory with anything ezekiel! Great post!:) Just letting you know that my blog has begun although it is in the early, constructive stage. Feel free to let me know what you think! -Adam F.
I love carbs too; they’re my waistline’s downfall – even though I don’t eat refined ones.
You’re giving away a VitaMix? For realz? Cool.
My week is more of the same, cleaning, job-hunting, going slowly insane (some would argue this is already accomplished), and learning to drive stick shift to facilitate speedier job-hunting and gym-visiting.
Carbo loading…yum
I am increasing my carb intake slightly because of my increase in running in addition to my normal cardio. I am studying this week for the ACE personal trainer test, taking kids to doctors and school, cooking and blogging
I have a crazy, busy week ahead
LOVE busy weeks! I just finished with school myself, so I understand…I JUST got my MBA (I’m 36) so you are way ahead of me! Have a fantastic week Katie!
School. Work. Dance class. Homework. Minimal sleep. Eating. What a fun week! Haha, I think the only thing I am looking forward to is the eating part and dance class. =P
I’ve been following your blog for a while now. Great posts and I love the fudge baby ones! I just need to make some in my free time. Maybe tomorrow since I only have school.
I am excited for your Vitamix giveaway!
This weekend was a carb-luvin one.
Much love to the carbs, for sure. This week, my son goes back to school – they had an extra week’s vacation because our new school is built and we’ve been moving things for 3 weeks! I’m looking forward to this week because we’re supposed to have a heat wave (aka 34 degree highs) until Friday!!! It’s been well under zero for the past week and a half, so I’m excited to not have to wear 10 layers just to take the trash out!!!
MMm. That Alfredo is a must try.
I’m completely head over heals in love with my spirilizer! I make beet noodles and carrot noodles and tofu noodles and….you get the point, but that Alfredo sauce looks so much simpler to make than the recipes I have and it doesn’t have soy! Hallelujah! Im honestly eating way too much soy at the moment.
:S
school’s starting up here, too
the best part of grad school is the end, when you’ve finished your classes but still are around to do research. All the interesting work, none of the boring courses!
The past few days for me have been carb-loving ones. I crave toast whenever I catch a cold, and I’m getting over one now.
We don’t have any big plans this week, but I am excited to cook a lot of delicious and new meals this week – we’re trying out lots of new recipes!
Who could resist those carbs?!
Work this week…awesome.
I am looking forward to more of those zucchini noodles and alfredo sauce myself! AND, I just wrote myself a reminder note to make some fudge babies tomorrow. I’ll let you know when I make them, I just have to decide which ones to try first…
Oh, and I disagree about vacation. A lifelong vacation sounds great to this student!
YUM for carbo loading! I’ll be doing some of that tonight, I’m making lasagne and garlic bread. And a big green salad, but we know where my heart lies.
This week I’ve got the usual: writing, reading, lecturing, lots of time with horses and dogs, working out, AND celebrating my 5 year anniversary with Cody.
I found your blog last week and I’m loving it! I love seeing other vegans meal plans for ideas
.
I’m not ready to get back to work either!! your carb loading meal looks yummmmy, i love carbs <3
have a great week!
Interesting, do you not strain this? Can you taste the oat bits?
