Carbo-licious Meal of the Day

Spiralized zucchini noodles with creamy Three-Ingredient Alfredo sauce, veggies similar to the ones from Thanksgiving , and…

…two toasted whole-wheat English Muffins with Smashberry Jam.

Two muffins are better than one ;) .

And vegan Three-Ingredient Alfredo sauce is good on anything!

Speaking of carbs… I’m finally getting around to posting the recipe for that oat milk! Here she be:

CCK’s Oat Milk

Ingredients:
3 and 1/2 cups super-hot water
1 cup rolled oats

Optional: vanilla extract, sweetener, salt

In a lidded container, combine all ingredients, cover, and refrigerate. After a few hours (or a day), blend until smooth.  (Edit: a reader left the suggestion of grinding the oats in a coffee grinder first if you want a smoother consistency.)

Your meal looks great! I still have to try zucchini noodles some day…
As for your question, I have one last exam this week, and then I have to get ready for the next semester, too (that’s not until february, though). Hope you enjoy the last bit of your vacation!

Love the carbs (unrefined healthy ones, of course!). I want those english muffins–english muffins with jam are one of my favorite things! The spiralized zucchini looks delicious too. I really should get one of those spiralizers. I think I’d eat a lot more zucchini if I did.

Hi Katie!
I’ve been following your blog for a while but this is my first comment- your meal looks delicious! I am so excited to find someone who shares my love of chocolate and oatmeal and has the time to make delicious concoctions. I am a working mama so I don’t have much time. We are also back to school- but I am the teacher. Teachers dislike going back to school just as much as the students!

I’m on vacation in San Diego! I’m pretty sure it would take a while for this vacation to lose it’s appeal. :)

I made my first juice pulp crackers yesterday! Not raw, since I baked them at 200 degrees, but really fun to make!

I’m a major carb-lover too. One time I went on a low-carb diet in college and I was the grumpiest, most miserable person ever. No one wanted to be around me. Never again!

Also, I want a spiralizer so badly! Where can I get one? Online?

The pool at a local high school opens up to free swim this week so I can swim whenever I want!… I’m going to try Hot Yoga one day this week…. and have 2 scholarship essays due! eek!

I love carbs too; they’re my waistline’s downfall – even though I don’t eat refined ones.

My week is more of the same, cleaning, job-hunting, going slowly insane (some would argue this is already accomplished), and learning to drive stick shift to facilitate speedier job-hunting and gym-visiting. :)

Carbo loading…yum :) I am increasing my carb intake slightly because of my increase in running in addition to my normal cardio. I am studying this week for the ACE personal trainer test, taking kids to doctors and school, cooking and blogging ;) I have a crazy, busy week ahead :) LOVE busy weeks! I just finished with school myself, so I understand…I JUST got my MBA (I’m 36) so you are way ahead of me! Have a fantastic week Katie!

School. Work. Dance class. Homework. Minimal sleep. Eating. What a fun week! Haha, I think the only thing I am looking forward to is the eating part and dance class. =P

This weekend was a carb-luvin one. :) Much love to the carbs, for sure. This week, my son goes back to school – they had an extra week’s vacation because our new school is built and we’ve been moving things for 3 weeks! I’m looking forward to this week because we’re supposed to have a heat wave (aka 34 degree highs) until Friday!!! It’s been well under zero for the past week and a half, so I’m excited to not have to wear 10 layers just to take the trash out!!!

MMm. That Alfredo is a must try.
I’m completely head over heals in love with my spirilizer! I make beet noodles and carrot noodles and tofu noodles and….you get the point, but that Alfredo sauce looks so much simpler to make than the recipes I have and it doesn’t have soy! Hallelujah! Im honestly eating way too much soy at the moment.

The past few days for me have been carb-loving ones. I crave toast whenever I catch a cold, and I’m getting over one now.

We don’t have any big plans this week, but I am excited to cook a lot of delicious and new meals this week – we’re trying out lots of new recipes!

I am looking forward to more of those zucchini noodles and alfredo sauce myself! AND, I just wrote myself a reminder note to make some fudge babies tomorrow. I’ll let you know when I make them, I just have to decide which ones to try first…

Oh, and I disagree about vacation. A lifelong vacation sounds great to this student! ;)

YUM for carbo loading! I’ll be doing some of that tonight, I’m making lasagne and garlic bread. And a big green salad, but we know where my heart lies.

This week I’ve got the usual: writing, reading, lecturing, lots of time with horses and dogs, working out, AND celebrating my 5 year anniversary with Cody. :-)
