Pancake Roll Ups

For most people, mornings are so rushed that they’re lucky if they can find time to gulp down a Carnation Instant Breakfast shake. But every now and then, life surprises you with the gift of leisure. The following is a recipe for one of those rare mornings:

Waffles are so last year.

French Toast?  Who’s that? It’s time to make room for the new kid in breakfast:

Above, Carrot Cake Pancake Roll Ups, filled with raisins and Healthy Cream Cheese Frosting, covered with carrots and more raisins and frosting.

Step One: Cook up your pancakes, a bit thinner than usual. In the photos, I used 24-Carrot Cake Pancakes.

Step Two: Top each pancake with lots of yum-licious ingredients

Step Three: Roll up the pancakes. Side note: I *heart* the cute strawberry plate from Pier One.

I would’ve eventually added you anyway, because I love your blog. But I never get around to updating that thing, and I usually wait until I have a lot of blogs to add to it.

    Oh my gosh these look so good!
    What about rolling up banana and peanut butter?

    There are so many combinations I could try. This really could replace waffles and pancakes as my new favorite breakfast! What I hate about pancakes is that it’s hard to eat with a fork without the toppings falling off. I love this idea!

    So this is like, a mix between a crepe cake and pancake, rolled up crepe-style? 😀 Awesome! My perfect pancake roll-ups would contain nut butter, mashed, caramelized banana, and toasted black sesame seeds. ;]

    Since I love putting peanut butter on pancakes, I’d put that in my roll up, but I might add something like dried cherries too. These look delicious!

    My ideal fillings would be lots of vegan butter, maybe some molasses, and chocolate chips! Mmmm!

    mmm those look delectible! I made something similar this morning only chocolate protein crepes w/chocolate almond milk pudding filling! a bit toooo chocolate-y (who thought that was possible?) buttt they were still pretty good!     Yum! I always think your toppigs look so creative and delicious, but pancakes taste SO good with nothing but a little bit of sugar (or stevia, perhaps?) drizzled on top! My mom used to make them for us all the time. I’ll have to try them with your whipped cream, though! And maybe some mango or pineapple (my favorite tropical fruits!). Either way… Yum!

    yes! when i had pancake sunday yesterday i nixed the fork and knife and folded the pancakes up like a hard taco shell. this is an even better idea!

    MMMM it’s like crepes!! I have a cute crepe place a block from my apartment back home and you get to choose from their fillings so I can make it vegan. But I like your fillings and pancakes better!
    I miss baking and cooking so much here! My grandmother is the most OCD person you could ever encounter and I happened to mention I would like to bake something today and she was close to a panick attack thinking about me making her kitchen dirty and using her stuff. I’m not allowed to touch anything! Grr, I’m going to have to go on a massive baking spree when I get back. You should come to houston to help me eat!

    Ahhh! Why has no one thought of this before? I mean, crepes are good and all, but they’re so thin that they fall apart. Same thing for pancakes, with the toppings not staying on. So pancake crepes? Haha it’s like the opposite of your crepe cakes!

    Perfect filing would be yogurt or cottage cheese with frozen cherries. It tastes like ice-cream!
    Or, microwaved banana with cocoa and a bit of vanilla soy milk. Yummy. Can’t wait for morning to come to have some 🙂

    So I attempted your chocolate chip cookie dough oatmeal…and it was super runny! It was like a drink! I’m assuming I should use less milk in the blending process, but I’m wondering why mine turned out differently? Hmmmm.

    Oh my gosh, I LOVE THESE. I always called them crepe tacos. I used your crepe recipe too! I love pumpkin pie ones. I make plain crepes, and then I make a mixture of pumpkin, stevia, and pumpkin pie spice. That would taste so good with the healthy cream cheese icing! Definitely trying that this weekend.

    your blog is fabulous and i really appreciate the effort you put into it day in and day out! i was wondering what kinds of food you eat on the go, say in class or for car rides (could make a great post!). as a vegetarian i find it somewhat difficult to make a healthy well rounded meal out of portable foods. also, has anyone ever told you that you look just like emma roberts?? you are identical, and equally, if not more gorgeous! hope all is well 🙂

    Yum! This looks like a perfect breakfast item, especially for the mornings when you don’t want too much sweetness to it. The mounds roll ups sounds incredible too.

    From childhood, I always loved banana chocolate chip pancakes (my mommy’s specialty), so I’d love to make those into roll ups. Blueberry with cream cheese and roasted pecans would be incredelicious too, though! Mmmm, I really don’t make enough pancakes!

    Oh my goodness, I don’t even know what to say! Thank you SO much for your sweet compliment!! Emma Roberts is so adorable! (Well, she has to be; she’s related to Julia!)
    And thanks for an awesome post idea too! I’ll definitey spend more time thinking about it and hopefully will get a post up soon. I don’t have to eat “on-the-go” all too often, but off the top of my head, here are some things I eat:
    nut butters, fudge baby bars, fruit, sandwiches, salads/leftovers in tupperware containers, pancakes (can’t leave out my latest obsession hehe), oatmeal (I like my oatmeal cold, so I don’t care if it’s not hot if I have to eat it on the go)… hmm, basically anything can be made portable except the frozen puddings/ ice creams I like. I’m really strange in that I usually like my soups/stir fries/veggie dishes cold or room temp, so I don’t have to worry about keeping portable foods hot.
    Anyway, like I said, I’ll try to be more detailed when I write the post! 🙂

    Dark Chocolate Dreams PB 🙂 I actually like to eat my pancakes with my hands, rolled up and dipped into my syrup. Who needs forks? I made sooo many pancakes the other day to find the perfect recipe. I mean like 3 batches 🙂 I finally found one I liked though!

    Btw, have you tried YouBars before? I had one today, it was called “Great Date with Chocolate” and it totally reminded me of you and your fudge babies (which I STILL need to get around to making). But the texture looked exactly like your “bars” and the ingredients are very similar, just dates, cocoa, and some honey. You are onto something with your fudge babies girl because these bars sell for a little more than $2 each! Pack up the fudge babies and get marketing 🙂

    My favorite instant breakfast is quinoa cooked the night before topped with almond milk and banana. Easy and fast as long as I cook the quinoa the night before. 🙂

    If I’m in a big rush, I grab a piece of fruit. I know it’s not the best but I’ll try and eat a bit more when I’ve got a bit more time. Sometimes I squeeze in a piece of Ezekiel toast with pb and honey! Mmm.

    My favorite breakfast on rushed mornings (when I know I’m going to be rushed) is overnight oats. As long as I know I’m going to need them the next day, I combine instant oats with water, spices, a few chia seeds and a few raisins in my Starbucks oatmeal to-go container (check Starbucks for these if you make oats a lot… I use mine all the time, it looks like a little squat to-go coffee travel mug, it’s the perfect oats bowl plus it has a spoon and a goodie compartment in the top). In the morning I just grab the container and head to work. All it needs once I get to work is a stir and usually a little more water. Makes having a good breakfast really easy and no-prep.

    I think my favorite instant breakfast would be almond butter toast,

    On a busy morning, I’ll toss a handful of oats into a (portable) container of kefir, add some walnuts & currants, and enjoy the creamy goodness an hour or two later when I get where I’m going.

    I hate rushed mornings, and I don’t usually drink protein powders, but if I don’t have time for breakfast (which I *always* eat) I’ll mix some protein powder with a cup of almond milk. It gets my day started well – gotta love breakfast!

    My favorite instant breakfast is probably toast smothered with peanut butter and sprinkled liberally with cinnamon, with a piece of fruit, most likely a banana, on the side. 🙂 I’d say smoothies but my blender takes some prodding so it isn’t really very instant. 😉

    My favorite ‘go to’ breakfast for rushed mornings is (I KNOW IT’S SAD) but instant oatmeal that I pump up with pumpkin, cinnamon (of course), and some syrup for flavor! It does the trick for those mornings when you wake up and class starts in 10 minutes. 😉

    Rushed breakfast? Is there any other kind? I’ve started eating Nakd bars recently, and they are so yummy! They’re vegan and raw, and so dense and chewy that they taste like much naughtier food.

    Also, went and noseyed back to the post to which first-commenter-Jessica refers. Love love love your attitude. If more people exercised their patriotism by thinking “how can my country be even better?” rather than by blindly accepting all that they are told, the world would be a truly wonderful place.

    “Instant” breakfast, eh? I think most breakfasts are pretty quick, but I guess when I’m in a hurry I usually snatch a banana and some yogurt from the fridge and pop it in my bag. But I never have any reason to eat in a hurry in the mornings because I naturally wake up so early.

    If I know I’m going to have a rushed morning, I usually prepare some muesli the night before (soaked oats, raisins, nuts, etc) and add some fruit and green powder in the morning. Good to go!

    If I have to be real quick in the morning and can’t eat cereals as usual, I just take some fruit [usually an apple] along my way to eat on the train… or some dried dates/figs if I have them. Another option would be a cup of chocolate.

    I don’t understand the “don’t have time for breakfast” thing either… I eat giant breakfast and still hungry for a mid morning snack + lunch + afternoon snack + dinner + late night snack.     Answer to the second question of the day (and shamelessly, in order to enter the draw…!) 🙂
    No morning is ever too rushed for breakfast! When I had a general anaesthetic a while ago, I got up at 6am so I could have breakfast before the six-hour nil by mouth rule… (Then went back to bed.)
    But if it was really late, I’d have an Eat Natural bar.
    I don’t know if they sell them in America but they’re just whole nuts with dried fruit, a bit of puffed rice, nuts and a dark chocolate or creamy coating, or plain. Healthy and mmmmmmmm…

    For super quick (and portable), I’ll grab a GNU Flavor & Fiber Espresso Chip bar and an apple. Otherwise, it is a bowl of cereal with almond milk – and that is pretty fast too, just not as portable!

    I very rarely have a rushed morning because breakfast is a priority to me so I make time for it. A healthy, filling breakfast is crucial to my happiness/productivity every day :). But if I’m short on time, I have a big bowl of cereal with banana in. Honestly though, that wouldn’t hold me over very long. Breakfast is usually my biggest meal of the day!

    My favorite instant breakfast has got to be- whole fuit! I try to keep bananas, apples, oranges etc. on hand at all times, especially when it’s in season for the days I need to just “grab and go”! I find that’s super easy- also, an example of this would be 2 bananas sliced open with chocolate peanut butter (homemade or PB&Co.) put in there! Thanks for the opportunity, Katie!

    rushed mornings? an energizing maca shake! i use 1 c coconut milk, 1 tsp maca, 1 tbsp chia seeds i’ve soaked overnight & some vanilla stevia drops + ice. creamy, filling & some seriously delish energy!

    Second Question of the Day: My favorite grab and go breakfast is either a smoothie using whatever we have on hand or a PB&J on Ezekiel bread. Both are extremely easy to eat in the car or during morning meetings.

    best rushed breakfast is no rushed breakfast 🙂 In my world, I ALWAYS take time to prepare good breakfast and sit down to enjoy it. What can I say, I’m a planner and I always make sure that proper breakfast is scheduled. On days when I don’t eat breakfast until after my morning run or workout, I’ll prepare some vegan overnight oats or a filling smoothie the night before to take with me to work. But even then, I’ll have my 1/2 grapefruit before the workout even if it means getting up at 4:45am..as it usually does.

    favorite instant breakfast has to be a green smoothie! i make mine with frozen spinach, parsley, maca powder, spirulina, msm powder, stevia, vanilla, berries and almond milk! absolutely delish and filling too!

    My favourite instant breakfast is overnight oats! All the preparation is done the night before so you don’t have to do anything in the morning, just eat. I like to make mine with a mix of oats and buckwheat, chia seeds, almond milk, and half a mashed banana. Healthy and tastes great.

    My favourite instant breakfast (I just started trying it yesterday :)) are overnight oats! They are really nice and refreshing plus have protein from the (soy) yoghurt, healthy fat from added nut butters and, well, carbs from fruit & oats, obviously!

    I hate to say it but my fave ‘instant’ bfast is a hugeeeeeeeeeeeeeeee coffee from Starbucks! Don’t worry, I almost always eat bfast–this is just in a REAL pinch.

    I typically eat a pretty substantial breakfast; egg whites, oats, fruit and milk but in an emergency my go-to instant breakfast is cereal in a ziploc bag and a protein shake (I don’t like the “foamy-ness” of a shake right after its blended so I pre-make a couple at a time and keep in my fridge so they have time to “rest”). Only takes a minute to dump cereal in a baggie and grab the shake and I am out the door

    if i want an instant breakfast i usually prepare it the night before, i’ll put frozen bread/frozen muffin/frozen something in the fridge and it’s thawed out by the morning. i usually like to spend time making my breakfasts, maybe it’s the art major in me that enjoys creating (you should see my bowls of cereal…fancy!) rather than having things in a snap 🙂

    Hi Katie! i just want you to know how much I adore you !I know you hear that all the time, but you’re such an inspiration to me. I’m VERY VERY thin and LOVE to eat and concoct all sorts of quirky creations in my kitchen too. Everyone in my family worries about me, but the simple fact is, I enjoy creating healthy foods and eat more than they do! I can’t help it I’m thin!:) I’m a nutrition major hoping to be a nutritionist as well so I appreciate your great documentation of calories and importance of certain foods and nutrients. Great job! I’m also ADDICTED to chocolate and I thought I was the only one who ate it multiple times per day ( usually 5-6)!!

    Okay, so my favorite, favorite instant, in-a-rush breakfast is most definitely a chocolate flavored shake I created on my own:

    *The Purple People Eater* ( I used to love that movie and this drink reminds me of it!:) Ha!

    *1 cup So Delicious Coconut Kefir in Vanilla flavored
    *1/2 cup unsweetened almond milk, 2 tbsp. flaxseed,
    *1-1 oz. of Ghiradelli 100% dark cacao
    *1 tsp. Hershey’s 100% dark cacao dutch cocoa powder
    1 tsp. cinnamon
    1/2 cup of frozen blueberries ( these go great with the chocolate and create a beautiful purple hue:)
    *1/2 cup raspberries

    OPTIONAL if I have it on hand:
    *I also add in a scoop of Nutiva’s Hemp Protein Shake powder in Chocolate because it is literally SO good
    * 1 tbsp. of Artisana Raw coconut butter:)

    I keep my chocolate squares already chopped and ready to eat in Ziploc bags so I just grab one, toss it in the lovely Vitamix, then the cinnamon, the chocolate, and coconut butter ( these are all in the same cabinet so they’re easily accessible). Then I go to the fridge, grab the flax, the hemp protein powder in chocolate and grab the almond milk and kefir. Pour all of that in, put it back in the fridge. Go to the freezer and grab the berries ( which I keep pre-portioned in freezer bags. Dump in the berries, blend on high and out comes a BEAUTIFUL purple drink that makes me smile:) Takes only about 45 seconds total time:)

    My fav quick breakfast would be overnight oats, eaten cold! However, if I didn’t plan ahead my favorite quick breakfast would have to be a banana and soy yogurt.

    If I’m truly rushed and need an instant breakfast, I will grab a piece of fruit from the counter (such as a banana or peaches or some fruit from the fridge (I loooove cold apples and oranges!!) I then make up for the calorie and nutrient deficit when I get to wherever I needed to be in such a hurry 🙂

    When I’m in a hurry, I grab a couple of pieces of fruit or half a melon or papaya. 😀 Sometimes I make a blenderful of smoothie and save half for the next morning if I know that I will be leaving the house early. Chia pudding is also easy to prepare the night before and I can take it with me to work.

    Ooh, I hate eating in a hurry! But if I absolutely have to… instant oats w/ a dollop of PB. I eat stovetop oats everyday, so I like to stick w/ the same meal, just a wee bit modified. fingers crossed!

    I have to say I LOVE making a fast green smoothie to throw into a water bottle! I just throw spinach, milk, protein powder, a banana and flax seed in a blender, then add some ice and I’m on my way! Of course, I do have to put it in a dark colored water bottler, because I imagine the color of my yummy smoothie might give some people stomach-aches! It’s perfect to take with me to class in the morning when I’m running behind.

    Honestly, I’ll just eat a nutrition bar and maybe a piece of fruit… Of course, I often eat this when I’m not rushed as well, because I can never think of what to eat. I’m sick of oatmeal, too lazy for pancakes or anything cool and delicious.
    But it works!

    I work for several schools as a Speech Pathologist. Since I LOVE my sleep so much, I usually eat my breakfast in my car on the way to my first school. My go to breakfast this year are Larabars, preferably Cherry Pie, Peanut Butter Cookie or Key Lime Pie(MY FAVORITE!).

    Favorite instant breakfast is smoothie. I usually put all the stuff in the blender the night before, and stash it in the refrigerator. Then I just pull it out and whir away in the morning. 30 seconds…max. 🙂

    My instant breakfasts are usually whatever is to hand, my favourite so far was a kind-of-breakfast-smoothie -with -lots-of-energy-stuff-in. So, rice milk, a banana, a glob of peanut butter, handful of oats and spoonful of low-fat chocolate ovaltine all whizzed up.

    Yes it sounds gross but I tell you, it WORKS.

    Hmmmm, my absolute favorite quick breakfast is either a banana with some of my fresh ground almond butter, ooooooor greek yogurt with frozen berries and homemade granola on top! Both are super quick to throw together and hold me over for quite some time! Hope I win the protein powder!!! 🙂

    My fave instant breakfast is definitely a Strawberry-Chocolate Smoothie. I mix-in a scoop of chocolate protein powder (would LOVE to try Vega’s new Choc-o-lat flave) together with frozen strawberries, ice, almond milk, maca, cinnamon and some dark chocolate chips. A quick & delicious start that keeps me energized all morning long!

    Haha, I just can’t do an instant breakfast!! Even if I’m running late, I always must make my beloved stove-top oat bran. These days, I’m making a soymilk+almondmilk or hempmilk/banana/flax/pinch-of-salt base with a toppings bar of honey roasted PB, dried turkish figs, homemade warm blueberry compote, and ARTISANA COCONUT BUTTER blobs! Yes, not instant. But I can’t do without it. And I can make it in less than 25 mins and eat it in less than 15. =)

    hmm, i don’t really do instant breakfasts much, but if i must, it’ll usually be fruit with peanut butter or sometimes a protein bar. however, it’s pretty easy to just grab and go toast too and if anticipating a busy morning, i like overnight oats 🙂
