Make Your Own Coconut Ice Cream

It’s easy, tastes even better than Purely Decadent, and it’s also cheaper.

Chocolate Coconut Ice Cream

(makes about 2 cups)

1. Make the chocolate ice cream, using full-fat canned coconut milk as your milk of choice. You can sub banana for the berries if you wish. Find the most adorable little boys ever, and serve them this healthy, yet deliciously-chocolatey, treat!

My favorite ice cream is mint chocolate chip. My favorite vegan ice cream is the Purely Decadent ones though. But I love coconut, so I’m going to have to try your version!

  2. Mary says:

Yummy! I’ve made your chocolate strawberry ice cream before, so I KNOW this one will be a winner. All I need to do is buy the coconut milk!
    (Runs to the store) :)

  3. I haven’t actually found a vegan ice cream that I truly love BUT today I have a VitaMix coming (at least it’s scheduled to be delivered today) so I’m looking forward to making my own that way!!!!

  4. Anonymous says:

can you use a regular blender for this, or just a vitamix?

  5. Run Sarah says:

That looks awesome! I love all the So Delicious ice creams.

  6. joy says:

i want to participate in the chopstick challenge.

  7. Danielle says:

I’m down for a chopsticks challenge 😀 I just have to steal some from a Chinese restaurant…

My favorite ice cream is the So Delicious Coconut Milk ice cream in chocolate. It tastes like chocolatey marshmallows…if you’ve never tried it, you MUST!

  8. Anonymous,
You definitely can use a regular blender! You might have to use more liquid, depending on your blender’s power. But it should still taste amazing!
(I wrote this in the directions of my “forget love” post too)

  9. vegangal says:

You look hot in that coconut bra!

  12. So cool!!!
My favorite ice cream bland is Publix Fro Yo.. haha ok so that’s not ice cream but it’s SO good!!!!
I also love Ben and Jerry’s..yum..

  13. Evan Thomas says:

I loooove all the so delicious coconut milk flavors

  14. My favorite ice cream is Chicago Soydairy’s chocolate chip cookie dough flavor…it is seriously decadent and AMAZING. I also really like Trader Joe’s cherry chocolate chip soy ice cream because it makes awesome sundaes.

  15. Jenny says:

good luck with world domination, lady 😉

  16. Valerie says:

What lucky little boys! I might have to make some for my kiddos 😉

  17. Stefanie says:

I love your blog because you keep things healthy even when they are desserts. The only vegan ice cream I have tried is purely decadent. It was ok but I’m not a big ice cream fan because it makes me cold.

  18. Sarahishealthy says:

Well I already was going to do the challenge, so now I’m even MORE excited!

  19. I’m loving the So Delicious Fruit-Sweetened soy creams right now. They don’t contain any refined sugars, getting all their sweetness from fruit. I was afraid to try them forever because I don’t care for fruity ice creams. But the vanilla, chocolate, and almond/pecan flavors do not taste at all like fruit! And they’re amazingly creamy!

  20. Hmm, I don’t buy vegan ice cream much anymore. I make it at home sometimes. I used to really like Purely Decadent, but faded on that. I agree on the icy. I think I am still looking for my HG :)

Love the chopstick challenge – I am in! I use chopsticks a couple of times a week, but would love to up that to at least once a day. For some reason the meal just seems more fulfilling when I use chopsticks and it keeps me from inhaling the food so quickly!

  21. abby says:

    i’m still in :).

  22. Beth says:

I’ve made a few Asian inspired dishes for my husband and I recently which has inspired us to use chopsticks more frequently. I’m up for the challenge!

  23. I love Pappagallo which makes mostly sorbets and Ben & Jerry. I just recently discovered them and i’ve had some very happy times since 😉

  24. Awww – lovely pics, Katie!
I wish I lived in the US right now 😛
    Have a great day!
    Brazilian XOXO´s,

  25. That icecream looks a-maz-ing! I’ve only really eaten Ben and Jerry’s icecream, but I’d love to try the vegan stuff.

  26. My favorite ice cream is soft serve vanilla. I love Mister Softee (in NYC)… vanilla cone with sprinkles. Love it love it love it. Especially licking it walking through Central Park. :-)

  27. Lisa says:

I would love to join your challenge! but I don’t think it will be much of a challenge for me since I am asian and use chopsticks for everything already haha…

  28. Lisa,
Haha that’s how I felt too! Oh well…

  29. CourtandWhit says:

Who knew it was so easy to make your own coconut ice cream lol!

  30. That chocolate coconut ice cream looks fab!!!

  31. Kelsey says:

gahhh! those babies look adorable and yum 😀

  32. Kelsey says:

i want to participate in the challenge, but i don’t have a blog! i already commented about how i’ve been using chopsticks at every meal so far on a different post :]

  33. jvegegirl says:

I’d like to participate but I don’t have a blog!

  34. Is this where I comment? I have posted about it with link to the challenge –

I am up to once every other day, working on daily!

That is my new blog btw – adding another to the mix :)

  35. abby says:

I used chopsticks this week, Katie! Aren’t you proud of me? My mom asked me, why are you using chopsticks for eating American food, and I said because I want to win fudge babies! :)

  36. Stefanie says:

I bought some chop sticks while I was at Epcot in Walt Disney World. My first meal was Udon noodles and veggies. It is harder to use them then it looks. By the time I was done eating I was getting better. I am going to try again so I can get faster with them. :-)

  37. Kristin says:

Hi Katie :) My boyfriend and I have taken up the chopstick challenge! We don’t normally use chopsticks but when I told my boyfriend about the challenge he decided to use chopsticks in order to train himself to eat slower. So far we’ve had fried rice, stirfry with rice noodles and he ate his fettuccine with alfredo sauce with chopsticks a few days ago ( I wimped out and used a fork). We’ve been consistently using chopsticks to eat supper every few days. It’s fun!

  38. dianna says:

i would love to participate in the challenge, but do not have a blog! I think a batch of your fudge babies is motivation enough for almost any challenge!
