Chocolate Coconut Ice Cream
(makes about 2 cups)
- 1/3 cup coconut milk
- ingredients for Chocolate-berry ice cream
- shredded coconut, soy whip, chocolate chips, etc.
1. Make the chocolate ice cream, using coconut milk as your non-dairy milk. You can sub banana for the berries if you wish.
2. Find the most adorable little boys ever, and serve them this healthy, yet deliciously-chocolatey, treat!!

I wasn’t a fan of Purely Decadent when I tried it; I found it to be a bit icy-tasting. I know a lot of others love it, though!

I’m so excited for the Chopstick Challenge!
Not that I get to participate, since I already do eat most of my food with chopsticks, but I’m excited for the idea that many more of you will soon (hopefully!
) become adept chopstick-users… then we can embark on our quest for World Domination!

My favorite ice cream is mint chocolate chip. My favorite vegan ice cream is the Purely Decadent ones though. But I love coconut, so I’m going to have to try your version!

I haven’t actually found a vegan ice cream that I truly love BUT today I have a VitaMix coming (at least it’s scheduled to be delivered today) so I’m looking forward to making my own that way!!!!

My favorite ice cream is the So Delicious Coconut Milk ice cream in chocolate. It tastes like chocolatey marshmallows…if you’ve never tried it, you MUST!

You definitely can use a regular blender! You might have to use more liquid, depending on your blender’s power. But it should still taste amazing!

My favorite ice cream is Chicago Soydairy’s chocolate chip cookie dough flavor…it is seriously decadent and AMAZING. I also really like Trader Joe’s cherry chocolate chip soy ice cream because it makes awesome sundaes.

I love your blog because you keep things healthy even when they are desserts. The only vegan ice cream I have tried is purely decadent. It was ok but I’m not a big ice cream fan because it makes me cold.
Well I already was going to do the challenge, so now I’m even MORE excited!
I’m loving the So Delicious Fruit-Sweetened soy creams right now. They don’t contain any refined sugars, getting all their sweetness from fruit. I was afraid to try them forever because I don’t care for fruity ice creams. But the vanilla, chocolate, and almond/pecan flavors do not taste at all like fruit! And they’re amazingly creamy!
Hmm, I don’t buy vegan ice cream much anymore. I make it at home sometimes. I used to really like Purely Decadent, but faded on that. I agree on the icy. I think I am still looking for my HG
Love the chopstick challenge – I am in! I use chopsticks a couple of times a week, but would love to up that to at least once a day. For some reason the meal just seems more fulfilling when I use chopsticks and it keeps me from inhaling the food so quickly!

My favorite ice cream is soft serve vanilla. I love Mister Softee (in NYC)… vanilla cone with sprinkles. Love it love it love it. Especially licking it walking through Central Park.

I used chopsticks this week, Katie! Aren’t you proud of me? My mom asked me, why are you using chopsticks for eating American food, and I said because I want to win fudge babies!
I bought some chop sticks while I was at Epcot in Walt Disney World. My first meal was Udon noodles and veggies. It is harder to use them then it looks. By the time I was done eating I was getting better. I am going to try again so I can get faster with them.

My boyfriend and I have taken up the chopstick challenge! We don’t normally use chopsticks but when I told my boyfriend about the challenge he decided to use chopsticks in order to train himself to eat slower. So far we’ve had fried rice, stirfry with rice noodles and he ate his fettuccine with alfredo sauce with chopsticks a few days ago ( I wimped out and used a fork). We’ve been consistently using chopsticks to eat supper every few days. It’s fun!
i would love to participate in the challenge, but do not have a blog! I think a batch of your fudge babies is motivation enough for almost any challenge!
