3-Ingredient Coffee Ice Cream

To everyone who lamented their lack of Vita-Mixes:

Most of yesterday’s Vita-Mix Ice Cream tips are just as useful for regular blenders or food processors! So you don’t have to be left out in the cold; you, too, can get cold inside, with vegan ice cream! Ice cream such as the one below:

3 Ingredient Coffee Ice Cream

(Serves 1)

  • 1 cup milk of choice  (You can use creamer or canned coconut milk if you want a creamier ice cream)
  • 1 tsp instant coffee (such as Mount Hagan brand)
  • Sweetener of choice, to taste
  • optional: 1/4 tsp vanilla extract

In a cup, mix the coffee powder and sweetener into the milk. Pour into an ice cube tray or shallow container. Freeze. Blend in your Vita-Mix, blender, or food processor, and scoop out with an ice cream scoop. (It’s much more ice-cream–like if you have a Vita.) Optional: add chocolate chips.

  1. I think the new header is cute, but since you are so talented at food photography, maybe it could have involved a background of one of your amazing picture?

  2. Kassi says:

I think the new layout is very clean and nice. I like it! :)

  3. anonymous says:

Katie, I love your blog. It’s myNUMBER ONE favorite.
BUT… I don’t think your diet is strange!

  4. Oh anonymous, thank you SO much for your kind words. :)

And I agree with you; I don’t think my diet is strange either! I wrote about the meaning of that statement here:

  5. I love the new header- so cute! I don’t think your diet is strange at all!! 😛

  6. Love the new blog layout! :)

  7. Kiersten says:

I like the new blog layout! I think it looks neater than the old one.

  8. Jennifer - jcd says:

I loke the new layout too. There was something I didn’t like initially, but you must have fixed it because it doesn’t happen anymore.

And I can stand up and confirm that the ‘Sir mix a lot’ trick works with food processors. My blender isn’t fancy enough to handle it, but the food processor certainly can. I sometimes have to add a little nondairy milk to get the process started. It’s never hard enough to make scoops though; ours is always soft serve.

    1. Thanks JCD, for vouching for food processors! Now, when people ask, I can tell them (with assurance) that it works. :)

  9. *Andrea* says:

love the header! i associate pretty hues of blue and periwinkle with you for some reason :) it’s your color hehe

that coffee icecream sounds sooooooooo good. i need to buy a vitamix thingy asap. my roomie took the magic bullet when we graduated so now all i’m left with is a 8-year old blender haha. for my first apartment i need to get a bullet and a vitamix so i can make all your delicious recipes! (love how they’re organized on your recipe page

    1. Andrea,
You should see me in yellow. Not so pretty LOL ;P

  10. I like the new layout too. You look gorgeous in the header, as usual. :)

I really need to try your ice cream method! I’m sure I will this weekend with temps soaring into the high 90s here. Freezing ahead of time is genius!!

  11. Erika says:

I like the header as well, Katie. Cute and fun! You are keeping us all in suspense on the other new changes coming soon. 😉

  12. i think ur layout looks really clean, and its very easy to read and move around and click things etc. the header is seriously adorable.

yea i think vitamix’s can do everything. ive seen people process food in them.. ive seen a few youtube videos of it being done with bread crumbs etc.

ice cream should only have a few ingredients, i find the less there is the better tasting it is. some of the ones in the store like rice dream is like xanthum gum this and carageenan that lol. which is all fine, except it kind of makes u wonder what all that ‘gum’ does in the body after awhile haha

    1. Kelsey,
Seriously! I mean, look at how long gum lasts when it’s on the ground. Who wants that black gunk in her stomach lol?

  13. Leslie says:

I DO use my Vita-Mix like a food processor! I make fudge babies in it ALL THE TIME :).
And I make salsa in it. If you keep it on low, it does a good job of chopping the tomatoes.
I haven’t used it as a juicer, but I’ve heard you can!

  14. Sarah says:

I make juice in my Vita! You can do it! :)

  15. Sarah says:

Oh, and love the new layout, Katie. It makes your photos really stand out.

  16. Stefanie says:

I like the new layout. It seems to suit you better. :)

  17. I like the new layout! But I also dont think your diet is strange!

  18. Love the new header! I made your fudge babies today and they were amaaazing, thank you so much for the recipe! I will obvi be giving you a blog shoutout today :)

  19. :O That ice cream looks and sounds delicious! Cute layout too :)

  20. Katie says:

Love the new header – it looks very CLEAN and neat…I love that. :-) Yay for coffee ice cream!

  21. Yeah the layout looks good! I really like the header-it’s a lot cleaner than the last one.

I have to try the ice cream method, though! I’ve never thought of doing that before. I might try strawberry ice cream…

  22. shesarunner says:

I love the new layout and your new header is very pretty! Although I personally don’t think your diet is that strange..but as a gluten free vegan, most people think I’m weird, so maybe I have a biased view haha.

I wish I had a Vita mix! They’re so expensive though..I saw it at costco the other day for 500 dollars (which I think is the usual price for it) and I was sad to have to slowly pass it by. Oh well. I’ll stick to small-time blenders for now. Mine is not good for making ice cream, but at least I can still do smoothies.

    Have a good weekend Katie!

  23. Coffee ice-cream…I NEED you. I have been off the caffeine for a while now, but I could so make this with decaf. Thanks Katie, and I love the new header because I get to see your cute face, and the tagline is great!!!

PS – I think coffee ice-cream would go quite well cookie dough fudge babies. :)

  24. *WITH cookie dough fudge babies. 😉

  25. The header’s so freakin cute :)

  26. Damjana says:

I’m in love with your new layout! I’m going to try such ice cream, this weekend i have a freezer to use, yippee!!

  27. Danielle says:

I love the new layout! But, I don’t see what’s so “strange” about your diet 😉

Erika, unfortunately…the vita is a *little* too powerful to do food-processor stuff. If you’re making pesto, grinding nuts into nut flour, or something like that…I’d go with a food processor!

  28. Love the new layout! Simple, cute, just like you!!

  29. did you know larabar was doing new flavors? I am all up in arms over it

    1. Katherine,
No green eggs and ham, like you wanted ;). Maybe next year!

  30. jqlee says:

    loooove coffee :)

the new layout is great. i like the “strange diet, normal life.” :)

  31. Oh, now we are talking! Coffee ice cream! I have been craving it from the hot weather. Besides, another way to consume as much coffee as possible in a day! YUM!

  32. I like your new blog layout, it’s cute :)

  33. Justine says:

I like the new layout a lot and expecially loved seeing your ‘baby making’ tab! Of course I knew what kind of babies you were referring to, but it still caught me a little off guard and made for a good laugh :)

  34. Vanilla says:

    I just did this…

It’s soooo cheap and easy!! The only con is that it takes quite a long time to freeze but it’s worth it!

I used Vanilla french instant coffee and 3 packet of sweetener (about 2 tbsp) and it was soooo good 😀

I’ll be sure to give you the credits, my picture is not as beautiful as yours because I was to lazy to use an icecream scoop but I’m sure it tasted just as good! 😀

  35. erinsloves says:

Tried your 3 ingredient coffee ice cream last night..SO AMAZING..I added a choc. vitatop to mine..Check out my page- I wrote about the awesomness and made a shout out back to you..Thanks girl!

  36. Alex says:

As soon as it gets a bit warmer in the NE, I”m going to be trying all of your ice cream recipes

  37. Alanna says:

I love coffee ice cream!! Never would have thought to try it with instant coffee and I was worried it wouldn’t dissolve in room temp or cold milk, but this totally worked! I used 1 can (13.5 oz) of light coconut milk, one packet of french roast instant coffee, 3 T brown sugar, 1/2 tsp vanilla extract, and 1 T dark cocoa powder to make it mocha ice cream. :) It wasn’t totally frozen after about 20 min in my ice cream maker, but enough so I could eat some as soft ice cream and I’m sure the rest will be even better tomorrow! So glad you re-linked this recipe the other day!

  38. CC says:

MMMMmmmmMMM! Coffee Ice Cream! I can’t wait 2 try this. But wait, I will have 2… I don’t have or use Instant Coffee (purist who grinds her beans!). Coffee is my favourite so if I can get this work out, this will b GREAT! I need 2 figure out a good one 4 rich vanilla too!

Thanks 4 the inspiration, who knew it could actually b so simple!!!!! So jazzed about this!

If I just used already brewed coffee do you know how much I should use?
