Yesterday, I enjoyed an afternoon pick-me-up that was especially blogworthy:

Wha? Coconut butter cookie? Oh yes I did!

It’s the newest of my coconut-butter creations, and I’m sooooo excited to share this one. The taste is like a cross between a sugar cookie and shortbread. Basically: a melt-in-your-mouth sugar cookie! I just want to do one more test batch before publishing the recipe, so hopefully it’ll be up next week. The cookie crumbles above are from my first test batch, which didn’t stay together. But why cry over crumbled cookies when you can use them to garnish your ice cream sundae?

It’s hard for me to throw food out that’s gone bad, which is why I try so so hard to only buy a food if I have a specific plan for it (i.e. no picking up that yummy bok choy just because it looks good at the grocery store!). But when it comes to foods I’ve purchased that don’t taste good, I have to remind myself that it’s a choice between wasting the food and wasting an opportunity to eat something I’ll enjoy. It’s silly to suffer through eating something just so I can feel like I didn’t waste money on it; who wants to pay for the privilege of eating something that tastes bad?! And the whole “there are starving kids in China” thing? Well, sadly you can’t feed your leftovers to them (although I do try, before throwing out an offending item, to see if anyone else around me might like it).

    I absolutely DESPISE wasting food. Even if there are only a few florets of broccoli left in the pan, I will save them in the fridge for inclusion in a meal in the next day or two. Any cooking failures I will either gag down or feed to boys who will eat anything.

    I HATE wasting food!!!! Totally a pet peeve!!!! And at collge, SO MANY PEOPLE DO IT!!! I like to say “I think it’s so bad to waste food!” to my friend (while eating at the dining hall), but making it loud enough so those people who have food on their plate can hear it. 😉

    I, too, hate wasting food. Unfortunately, with a toddler, it’s a fact of life. Half of what you serve her WILL end up on the floor!

    I never throw food away because of its taste or the way it looks. Maybe it was a bad choice but it was my choice so I have to eat it. I don’t eat food that has expired but I still feel a little bad when I throw it away.

    I can’t wait for the cookie recipe! 🙂

    I do hate wasting food, but since having my own kitchen and working in a homeless shelter where we get WAY more donations than we can eat, I’ve come to terms with it. I’m just not going to eat food that’s gone bad, or a recipe that went terribly wrong! The worst is when you make a whole recipe and have to start over because it didn’t rise or something…that’s just throwing money away 🙁

      Oh gosh, whenever I work in the food pantry, I feel SO SAD! One time, we were even forced to throw away a whole case of Luna Bars that had expired. I actually contemplated taking them home… hey, it’s not like I’ve never eaten an expired bar before! As long as it *looks* ok and tastes ok, I’ll usually eat food even if it’s expired by a little bit. But I completely understand why they have to throw it out at homeless shelters. You don’t want to take any risks when it’s another person’s health.

    I totally saved about three pieces of cauliflower from dinner last night … It always seems a shame to throw food away if it’s good, but if it’s stale or just yucky — into the bin!

    I try not to make food that I’m gonna waste– but I can’t avoid it sometimes! Good thing we have a compost and everything we make it compostable. When I was in elementary school, the cook would get all mad when people didn’t finish their gross school lunch and pull the: “there are starving kids around the world! You can’t send it to them, so eat it!” Um, we should get more obese and unhealthy so other kids can starve? How about we change the quality of our food so we aren’t running cattle over the land where these people are going hungry. Wish I had known THAT in fifth grade!

    I hate wasting food too. My meals at the end of the week tend to be leftovers thrown together so I do not have to throw it out. There is no shame in eating leftovers when it saves money. I can’t wait for the cookie recipe. It sounds good. 🙂

    i go to great lengths to avoid wasting food. my mom admits to being terrible at this. she’s so used to cooking huge portions for my brothers..but since theyve been on their own she still forgets that and continues making big servings which my poor dad has to eat..so basically he will keep the leftovers during the week for lunches and dinners. i on the other hand make sure that all leftovers get used up..otherwise people need to be put in ‘time out’ haha… not more cooking until u finish what was previously made 😉

    if all else fails i use the line, “people in 3rd world countries would be LUCKY to have your leftovers!!!”

      Haha oh Kelsey, you make me laugh… I can just see you yelling at your family to eat their leftovers… I do the same thing!! I’m always nagging, saying “Don’t buy that for dinner, you have leftovers to eat!” 🙂 Our families are lucky to have us!

    I’m the same about wasting food. I will only buy things I know I plan to use and I will make sure I don’t give in to laziness and not cooking, so I don’t waste them. BUT I won’t force myself to eat something either. We’ve had a few things turn out pretty ick in our kitchen and my husband always forces himself to eat it because he hates wasting food. I tell him he’s crazy!

      Amen to that! Life’s too short to eat foods you hate. But my bf is the same way, scarfing down things just because otherwise they’ll go bad. Well you’ll feel worse eating something you don’t like than throwing it out!

      I can’t force myself to eat food that is ick. Part of the reason that I have developed a healthy relationship with food (FINALLY!) is that I only eat what I WANT, and I refuse to risk that healthy relationship by forcing down gross things that turn out badly. That’s what guys are for, right?

    I hate wasting food. I had to throw away a half eaten mango last night and actually got a little disappointed. It’s a waste of money and resources…not to mention yummy food!! :/

    Oh those cookies look so good! Know what’s funny? I just tried making a coconut butter cookie last week! It was good! I used quinoa and coconut butter. A little crumbly, but all in all really good!

    And I HATE wasting food so much! It has to be my biggest pet peeves-when people waste something. Ugh! HATE IT HATE IT HATE IT!!!

    I have become okay with wasting food. For a long time I would eat things because they were sitting around the house and I felt like I had to (even if I didn’t like them that much). Now I realize that I can’t force myself to eat things just because they are in front of me. It isn’t healthy!

    Hurray for not wasting food! I love how you added that you ask others around you before you toss something- I wish people would think to do that more! At a family party once, I saw someone throwing away cake (Yes, cake!) and I was like I could’ve ate that!! They thought I was strange for saying that, lol.

    Bleh, I hate wasting food with a PASSION! At lunchtime, kids at my school always throw away lunch bags still half-full of food into the trash and I always want to yell, “Why are you being so wasteful? Why are you sending food that could be eaten still into a landfill?”

    But you know what I love with a passion? Your fudge babies. Just did a post on them 🙂

    Oh that peach pie sundae looks like heaven. I’m so sad peach season is leaving us. But at least there’s apple season approaching!
    I can’t stand wasting food, and I’ve been known to eat things way past their expiration date. But LOL I’m still here! 🙂

    I definitely don’t like to waste cookies, lol.

    I don’t like wasting food, which means a lot of repetitive meals since nobody else in my household has the same diet that I do. Whatever, more tofu for me!

    oh i am the queen of anti-waste. i WILL find a way to use every.last.morsel. if i can’t eat it within a normal date of expiration, it goes into the freezer where i will use it if my cupboards are bare at another time. i feel very very strongly about not wasting food. every week, i get my eggs,meat,produce at the farmer’s market and hit the grocery store for basic staples or frozen veggies. i ONLY buy for one week so as not to waste anything :0

    I share the same views as you on the “wasting food” topic. When I read your comment on the bok choy I thought “OMG THAT IS ME.” Because nearly every time I go to the grocery store I walk by the bok choy…and am tempted…but in the end I never buy it because I have no idea what I would do with it.

    What I REALLY hate is when I am with my parents/siblings and I see food they have bought that is going to expire soon but it isn’t something I would ever eat. And I am deeply saddened, because “Nooo it’s going to go to WASTE!” In fact, I have this problem right now. I am housesitting for my eldest brother while he is on a business excursion for the next six months. He and his girlfriend are omnivores, I am a vegetarian. This means that when they moved about eleven hours away they left a lot of things here, including lots of lunch meat and things like bacon, cheeses, etc. I won’t touch. And they are just sitting there. And I don’t want to touch/look at them, but I don’t want to throw them out either because I will feel guilty about wasting SO MUCH STUFF. Most of it hasn’t expired, so I guess I will just hope that the products last until next weekend when the rest of my family comes to visit. Unfortunately, the problem after that will be that I’ll have to suffer with the stench of bacon/whatever else is in there lingering in the house for the next week or so after everyone else has gone…:/

      I know exactly how you feel!! I am constantly reminding my parents/friends/roommates (when I had them), “Don’t forget, you have _______ in the fridge.” It especially makes me sad when they throw out meat, because it’s sad enough that the animal gave its life, but when it gives its life and doesn’t even serve to feed anyone… omg, what a waste of a life!!! 🙁

    I can’t stand throwing out food, even if it’s something that I like but have had enough of. I feel bad, and have to go through the rationale a few times in my head: it’s going to end up in a dump whether you throw it out or eat it.

    I HATE wasting food!!!!!!!! Actually I hate wasting anything. I re-use all my glass jars from vegenasie to jars of salsa. I re-use my ziplock baggies, I never just use them once. I hate to waste. I actually 99% of the time never waste food. I have a family to feed and a creative mind, and one way or the other, if I buy it, it’s getting eaten, not trashed! 🙂

        I had to stop myself the other day and think “how many empty almond butter jars am I actually going to use?!” I recycled it instead 🙂
        I’m with you; can’t waste ANYTHING, even down to water/electricity etc. And not just because it’s wasting hard-earned cash but it just feels wrong…
        I’m so glad everyone on here seems to think the same!

    I can’t wait for the cookie recipe! I am always looking for new ways to use coconut butter. yummm.

    And I absolutely hate wasting food, that’s why most of my Sunday dinners consist of all my leftover greens from that weeks farmers’ market trip and random end bits of tofu packages and sauces.

    i HATE wasting food. sometiems iget a little neurotic about it lol. so i buy most canned things and packaged foods in mini sizes.

    Coconut butter cookie? Sounds amazing, I can’t wait for the recipe! I really don’t like wasting food, but sometimes I do just because I love to try new things and not everything I try it always good. I try to come up with ways I can use foods that aren’t my favorite and kind of mask them into a dish that I will enjoy eating.

    I NEVER waste food. I love how so many are passionate too on this one! I don’t even let a grape, a carrot, a piece of cereal, a banana, spinach, go to waste never ever! 🙂 Glad we are all doing our part!

    Wasting food actually stresses me a bit…..my father used to remind me of all the starving kids with the big bellies in Africa! Horrible I know but he honestly felt bad about them and believed back then that children should eat eat eat. I will make it a mission to figure out a meal using up food before throwing it out now and sadly just yesterday I ate a plate of cabbage and mushroom stir fry that was…..yucky. Need to work on that!

    I hate the idea of wasting food… that’s why I usually buy the same groceries and make the same kinds of meals – I KNOW I’ll like them, and I know how to shop for the ingredients cheaply! Makes perfect sense to me 🙂

    I HATE wasting food, even food I don’t like/eat! If I’m at a table, and I see someone is ready to throw something out, I say “Wait!!” and either ask if anyone at the table wants some 😀
