Microwave Cookie Dough Muffins

I actually enjoy cold, rainy days.

They offer a good excuse to stay home and be lazy. (Unfortunately, they’re not so fun when you actually have to go out in the cold rain.) Yesterday was the epitome of a rainy day, which meant: laziness on the menu! Here’s how my laziness manifested itself:

I sprayed a little dish (you could use a coffee mug) with coconut oil spray, scooped in the batter for a Single Lady Cupcake (with chocolate pieces, natch), and microwaved for 90 seconds. Behold the yumminess:

A note about the “lazy-girl” microwave version: If you’re using only applesauce, not oil, just keep in mind that the microwaved cake is a bit drier than the oven version. It’s still plenty yummy, though! Next up might have to be a savory version:

  • Broccoli + nutritional yeast = Cheesy Broccoli Muffins
  • Nutritional yeast (or vegan cheese) + tomato sauce = Pizza Muffins!
  • Ooh or maybe even corn muffins? Microwave corn muffins in only 5 minutes?! Bring on the rain!

Do you ever have “lazy” days?

Y’know, days where you don’t even want to get outta your PJs? How do you motivate yourself (if you do!) on those days? And do you like rainy days? Are there any special activities (such as baking, reading, scrapbooking, etc.) that you like to do on rainy days?  Personally, I could do without cold rain. But I am a fan of warm rainy days. I even enjoy running in it.

You might recall I am gorgeous when wet. Of course, by gorgeous, I mean that Rachel’s hairless Sphinx cat and I could be twins (Friends-reference number 5,462 on this blog). Actually, even when I’m not wet, my hair doesn’t much like the rain. But I think frizzy hair on rainy days is probably a universal problem. 😕

    LMAO at Rachel’s sphinx cat. I love that I get all of your Friends’ references. I swear everyone has seen that show!

    Oh no, you really are gorgeous when wet! And dry too!

    We don’t have a microwave, so I won’t be able to try this recipe, even though it looks delicious. We may make a few in the toaster oven though. Yummy!

    Rainy/blizzardy/icky days when I don’t have to go to work = lazy pyjama days. I am content lazing around in my pyjamas all day long watching movies, reading by the fireplace, and doing random little things around the house. Somehow, wearing pyjamas is motivating in itself; I get so much done on icky days.

      Eh, no worries if you don’t have a microwave. Honestly, if you have a little time to be waiting around the kitchen, my favorite version of this muffin is in the oven, made with spelt flour… and coconut oil, of course ;).

    Sundays are usually my lazy day. After a long week of school and cleaning the house, I need a day to just relax. Sometimes you just can’t fight the lazy day feeling. Rain is nice but only when I am home to watch it. Your muffins look great. 🙂

    Ahahaha that cat was the ugliest thing ever! I love how she gave it to Gunther in the end. Please don’t ever stop with the Friends references. I miss that show! Nothing compares, ya know?

    I have a love-hate relationship with rainy days. Just like you, I love staying indoors when it’s pouring. I also find that running in the rain is exhilarating! The thing I hate the most, though, is going to school on a rainy day – So depressing!! Yuck!

    She is a genius, isn’t she?! It is cold and rainy here today and that just makes me want to curl up in a ball and do nothing. I like warm rainy days too though. As for the hair, I won’t even bother today. Totally not worth the time! I hope it is a good day for you anyway!

    Ugh I hate cold weather too. And especially cold restaurants… Why must they freeze us out serving ice water and setting the A/C to “arctic”?!

    I love lazy, rainy days. Especially when I’m stuck in the office. I can just stare out the window and watch the rain fall in my comfy chair 🙂

      Ugh, no kidding! Malls do that too. It’s like, “Really? You want me to buy your clothes, but you aren’t exactly providing an environment that will make people want to try things on! Isn’t that counter-productive?!”

        I HATE air conditioning! With a passion! People in my office were turning it on all summer and bear in mind we’re in England, not Arizona and it wasn’t exactly a hot one, even for us!
        I’m actually wearing fewer layers to work now than I was in July… 🙂

    That looks so yummy. One problem though….. I don’t have a microwave. uess I’ll have to stick with the oven method! 🙁

    I totally have lazy days– I will just cook what I crave on those days. That food might be complicated or easy peasy! Some days I really don’t get outa my PJs, but most days love to go in the motions of getting ready, and then I can feel like a lazy, yet clean ;), person. Cold, rainy days are my favorite way to indulge in this habbit. It’s my instint just to curl up in a ball with my cat (who does the same!) and sip a hot drink!

    Oh yeah… fall is gonna be good!

    Coconut Oil SPRAY?? Where or where does THAT come from? I’ve thought about using it in my Mist-o, but it solidifies… and the mist-o isn’t microwaveable… ??? Please share!

    I have so got to try these single lady muffin/cupcakes! Me and the lil man can share one! (Or I’ll end up makin 2, a ‘single-lady’ and a ‘lil-man’. Lol!)

      Oh I definitely recommend it! It’s Spectrum brand, and you can find it at Whole Foods. I think it’s a bit more expensive (like $5?), but it actually has a pleasant taste, unlike Pam, which tastes gross to me.

      P.S. I love getting NICE anon comments every now and then, even if they weren’t meant to be anonymous lol! 🙂

        Thanks Katie!! I loooove WF, but I don’t go there much cause we haven’t got money to spend Lol… I’ve never even seen this I may have to splurge soon and try it! And yes, Pam is nasty, I use EVOO spray or evoo in my mist-o 😉

    I like rainy days. I don’t want to stay in bed when it rains and I usually take my umbrella and go out. I only hate it when my shoes drown in some too deep puddle. That’s why heavy rain is better in the summer. Flip-flops don’t mind swimming 🙂 . But storms are also the best time for reading a good book. When it’s dull outside, it’s really easy to feel like a part of the book.

    so i guess I need to give a microwave muffin a try.

    and I don’t have to be pressured too hard to stay in my pj’s all day and neither does my family. hehe
    and we LOVE a good rain day (and yes only if I don’t have to be OUT in it.)

    unless by “out” we mean jumping in rain puddles.

    I love rainy days, but only if I can stay inside and don’t have to go out in it. I usually try to get a few things done around the house on rainy days, but often times am found curled up on the couch catching up on reading or my shows!
    Those muffins look great!

    I’m with you – I don’t mind a nice rainy day every so often, but I can do without the cold. It’s kind of dreary here in Nashville today. Would be a perfect day for a good book, a nap, and a pizza muffin! 🙂

    Do you make your own vegan parmesan or do you buy “Parma”?
    If you do make your own… How do you make it?

      I actually don’t know that I’ve ever had vegan parmesan! Is the Parma good? I never really thought parmesan added anything to pasta dishes, so I didn’t feel the need to look for a substitute… but that doesn’t mean I wouldn’t be interested in trying it if it’s good!

    I love making cakes and things in the microwave. I found one a few years ago that’s really handy when we’re craving some chocolate cake…it’s especially good with some (dairy or non-dairy) yogurt on top, and would probably also be delicious with some coconut butter drizzled on. I still have to try that stuff.

    I hate rainy days. Hate hate hate. As in, when I’m out on my own, I may seriously think about moving to the desert just because rainy days depress me so much. I need the sunshine. And more than that, I like it warm.

    I made one of your muffins (a peanut butter-y one) in the microwave using HEAB’s instructions recently. Good stuff! Your savory muffin ideas sound perfect for a quick side dish for a meal. I may have to try that. 🙂

    I love rainy days! They feel so cozy. I do prefer warm to cold rainy days, though.

    I’m a little upset over your last comment. Katie, you are beautiful, with glowing skin and shiny hair and basically what a lot of girls would like to look like. So when you say you look like a hairless cat, how do you think it makes us girls who aren’t so genetically blessed feel? Maybe you should think about that next time before putting yourself down.

      Would you mind if I answered your comment in a post? (I don’t want to make you uncomfortable, so if you’d like, I can take your comment down and just address the “idea” of your comment.) I’m so truly sorry that my words upset you, but please know that my comments were made in good fun. I don’t think I’m ugly, just silly-looking when I’m wet. Honestly I don’t think anyone looks their best when soaking wet ;). But I do understand your complaint, and therefore I thought it’d be a fun “body-image-boosting” idea to write a post where everyone says something they like about themselves. And I am upset at something YOU wrote: please never say you weren’t as “genetically blessed” as someone else. Beauty can mean so many different things to different people, and who is to say that some girl is “prettier” than another? It’s all subjective. I’ll leave you with my favorite quote: “Beauty is in the eye of the beholder. Sometimes it becomes necessary to give misinformed beholders a black eye.” That’s from the ever-so-wise Miss Piggy ;).

        Katie – thanks for your considerate comment that is at the same time so filled with self-confidence. However, I do have a question:

        I feel the same way as Anonymous does with regard to being “genetically blessed.” It can be so, so hard to feel genetically “screwed over,” for lack of a better term, sometimes, because so many of my friends have it much easier and don’t have to deal with the emotional and physical discomfort.

        Physical discomfort is worse though, because as much as we can tell ourselves to love ourselves, the physical pain is always going to be there. As an extreme example, how could you tell someone who was born with only one arm and one leg to not feel “genetically blessed”? I really appreciate and admire your kind comments Katie, I am just wondering about this one particular line.

          Hey Hannah, thanks for the thought-provoking comment. I guess I wouldn’t be able to give advice to someone born with one arm, because I’d have some nerve, ya know? Like, I’ve never been through the physical pain (or emotional pain I’m sure they got from being teased/stared at by other kids). So I’d have no business telling them how they should feel… I can’t even imagine the hardship, but I guess in that situation you have to just keep counting your blessings and looking at those worse off than you are (i.e. if you’re born with one arm, at least you don’t have cancer. If you do have cancer, at least you’re not starving in Ethiopia…). And it’s no use being jealous of people you think have it better than you, because you never know what they could be going through (or what they might go through in the future). As an example: freshman year, I thought this girl in the dorm next to me was PERFECT. She was absolutely gorgeous, with thick hair and perfect figure, etc. Plus, she was a sweetheart and was super-smart. In short? A lot of people (me included) were jealous of her (not in a mean way, just in a “she’s so lucky” way). But one day, I saw her in the kitchen lighting a candle, and when I asked why, she said it was for her mom who had died when she was 5. Suddenly, I didn’t want to be that girl anymore. I mean, to lose your mom at such a young age? So seriously, you never know what hardships someone else–who might seem perfect on the outside–is going through.
          But all that aside, I think it’s completely ok to feel sorry for yourself every once in a while if you were dealt what society would call a genetically-cursed hand in life. Just as long as you don’t spend your life wallowing in sorrow, it’s completely ok to feel sorry for yourself sometimes! Because life really isn’t fair.

            It’s so sad to hear of people who are suffering so much because they feel genetically “cursed”. It’s a cliche, but beauty really is something that comes from within – someone who is considered stereotypically “pretty” can become instantly unattractive if they have a mean spirit, and vice versa. And beauty is such a subjective thing – what one person considers ugly can be the most beautiful thing in the world to someone else (funnily enough, I think that “Shrek” illustrated this perfectly!).

            There’s actually a great Bible verse that sums it up:

            “Your beauty should not come from outward adornment, such as elaborate hairstyles and the wearing of gold jewelry or fine clothes. Rather, it should be that of your inner self, the unfading beauty of a gentle and quiet spirit, which is of great worth in God’s sight. For this is the way the holy women of the past who put their hope in God used to adorn themselves.”

            That’s not to say that it’s wrong to wear jewelry and make-up etc, but that you shouldn’t place stock in these things as the source of true beauty.

            Anyhow, I really hope that people start to see how blessed they are to have fully-functioning bodies, with arms, legs and hearts that beat every day!

    I love the microwave recipes. 🙂 I use a microwave for 99.9% of my recipes now because I don’t have a stove in our dorm kitchen (AKA: lamesauce). I can’t wait to make these muffins. Keep the good food coming, Katie. 🙂
    And I have lazy days A LOT. It’s really hard to motivate myself, but usually if I just get up and get dressed to go for a run or go rock climbing, it usually helps. Or, I listen to my favorite “get pumped” music and I wake up. 🙂 good stuffff.

    I love lazy days and never get them BUT I had 2 last minute cancelations tonight so I scored a “chill” night with dogs and husband before he heads out. So I guess tonight is a “lazy” one. ;)I work weekends too so I really need more of these lazy moments, hehe.

    I rarely like rain whether it is cold or not, but I do love wind. 🙂 Those Cheesy Broccoli Muffins sound delicious! What I am really excited about though is… I didn’t know there was a coconut oil spray!! I am so happy to know it exists, now I need to get my hands on some.
