Until yesterday, I’d never tried baked oats.

Could that really be true?

Me?? With all of the Healthy Oatmeal Recipes?

Yes, somehow, it’s true. Baked oatmeal has been on my list for a long time, but that “to make” list is kinda lengthy. Thankfully, I finally got around to it… and now I am kicking myself (hard!) for not trying baked oatmeal sooner! I see many bowls (ramekins?) of it in my chocolate-covered future.

Single Serving Baked Pumpkin Oatmeal

Ingredients

  • 1/2 cup rolled oats (50g)
  • 1/4 tsp pure vanilla extract
  • 1/2 tsp cinnamon, and optional 1/8 tsp pumpkin pie spice
  • sweetener, such as 1 1/2 to 2 tbsp maple syrup or 1 to 1 1/2 packs stevia
  • 1/4 cup canned pumpkin (applesauce or banana also work)
  • 1/4 cup milk of choice, or nondairy creamer, or water (scale back by a tbsp if using liquid sweetener)
  • 1/8 tsp salt
  • Optional: 1 to 2 tbsp oil or favorite nut butter (if oil, scale the milk back by a tbsp)
  • Optional: raisins, walnuts, brown sugar to sprinkle on top, etc.

Instructions

Single Serving Baked Pumpkin Oatmeal: Preheat oven to 380 degrees. Combine raw oats, spices, pumpkin, and milk. Pour into a greased 1-cup ramekin (or two 1/2-cup ramekins) or a mini-loaf pan. Cook for 20 minutes or more, until it gets firm. Finally, set your oven to “high broil” for 3 more minutes, or until it reaches desired crispy-ness (or simply just bake longer, but broiling gives it a nice crust). You can even make this the night before. Edit: some readers told me that they like to make multiple servings at once and freeze leftovers for an instant breakfast! A few readers have had success making this in the microwave, but I haven’t tried.

So, Pumpkin Boatmeal?
It was like biting into a warm pumpkin-oatmeal cookie. Highly, highly recommended! I thought I’d miss my creamy oats, but surprisingly I didn’t miss them one bit groat. I should’ve known: oatmeal in any form is pretty much guaranteed to be a hit with me.

    I eat oats at least once per day: either cooked with banana/almond milk or overnight style with frozen berries/almond milk. And sometimes I like to eat it raw with milk on top and eat it like cereal. 🙂

    Oats = <3. pancakes, waffles, hot oatmeal, cold overnight oats, PB balls!!, cookies, raw, in smoothies… but NEVER have I tried it baked! Looks delicious. I've got some pureed kabocha in my fridge and I know just where it's going tomorrow morning 🙂

    Just made some Sunday for my family. You can also use eggs (I used egg beaters), milk, sweetner, cinnamon, nutmeg…so good! It was called “smiling oatmeal,” b/c the picture showed some dried fruit making a smiley face on top:)

    That looks beautiful! I’ve made baked oats with apples, but now I’ll have to make ’em with pumpkin. I’ll eat oats just about any way… I knew a little boy who would eat a huge bag of raw oats almost every day! “They’re a yummy snack. They’re even more yummier with sugar, but my mom says that’s not good.” Hahaha

      I’m not sure why you’re assuming that’s all I ate for breakfast. This blog has never been about showcasing everything I eat.
      But it IS delicious broiled. (Hint: roast veggies are delicious broiled too! I *heart* broiling hehe)

        it “looks” small, but 1/2 cups of oats is the large measurement for cooked oatmeal, so I thought it should be as filling considering the added milk, etc. What do I know, mine is still in the oven.

    I actually used Happy Herbivore’s baked oatmeal recipe a couple months ago as my first foray into boatmeal. I did a pumpkin version of her recipe, too! Love it. I was on a boatmeal kick for a solid month a while back. Then I did a month plus of Oh She Glows Overnight Oats with Chia, including the banana ice cream parfait version and the pumpkin pie version.

    Something about cooking the oats with bananas makes it SOOOO good.
    I use tons of warming spices and it reminds me of rice pudding! So creamy and yummy.

    I go through phases where I am ALL ABOUT one type of oatmeal for breakfast. 😉
    In the past I had a raw “breakfast cookie” stage, a blended oats (from you!) stage …
    Oatmeal is wonderful. Plus, I know that is a safe food for me before races. 🙂 Before my first marathon a couple weeks ago I had chia overnight oats with no tummy troubles during the race. That makes oats my BFFs!

    Holy yum! I have tried countless variations of oatmeal but I’ve never tried to bake them. Now that I’ve seen these pictures, I just have to.

    From those I’ve tried so far I love overnight oats in yogurt and stovetop oats with sauteed fruit the most. The first in the summer and the second on cold days. And then in cookies and your pb balls… It’s hard to choose. I don’t mind even eating oatmeal directly from the bag when I need a snack but I am too lazy to cook it. You said it – the more oats, the better 🙂 .

      Ack! I’m so sorry… I’ve been putting off posting the stroganoff recipe because when I made it, I didn’t measure anything, so I keep meaning to make it again and measure this time (I don’t measure things when I cook for myself, but I do measure when I’m coming up with a blog recipe so that I can give people exact measurements). But I haven’t gotten around to making it again. I’m so sorry!!

      I take at least 2 rest days per week. And I am very loose about the whole running thing. I don’t have a garmin, so I can’t tell you for sure my mileage. I know (from mapmyrun) the rough estimates of some of my favorite routes, and most are around 8-10 miles. But really I don’t care about miles; I just run for fun :).

    Yummy! I love oatmeal in general, and baked oatmeal is always a nice variation. The addition of pumpkin is just so wonderful… I might even try this with kabocha soon! Seriously, could anything be better (other than chocolate for you, of course, hehe)?! Oh, and if you like baked oatmeal, make sure to try adding flax seed or a flax egg to it before you bake. It makes it even creamier and delicious. Plus flax itself has such a nice nutty taste :).

    Baked oatmeal is one of my favorites! It makes it seem more like a cookie. Drizzle a little fudge or caramel over the top and geeeeeeez just die right there!

    Sometimes I make Boatmeal in my microwave. Moatmeal? The wet ingredients are applesauce and eggwhites, so it kind of nukes up like a little cake.

    I’ve also made HEAB’s recipe for oatgurt, which was delicious! even though I was afraid to eat it haha. Next time I’m home I want to experiment more with that…maybe try making into bread the way she did.

    I also just want to say: someday you should write a cookbook just so you can put your cute recipe names in print : D

    I love oats in many, many things, though: in a bowl, baked, cookies, pancakes, overnight parfaits, bread….hmmmm…..can’t think of any more right now ;).

      Haha you and my sister! She hates banana too. Strange girl. I have a theory that, when she was little, I took all the banana, pumpkin, and chocolate away from her so often that she finally developed a dislike of these foods simply to save her the pain of missing them when I took them ;).

      I don’t see why you couldn’t use mashed sweet potato, applesauce, or even baby food! Or maybe even protein powder? Oh, or banana. Now I’m curious about all these things too! If you do try one, please please let me know how it works! 🙂

        I totally tried making moatmeal two days ago because I had too many custard apples!!! I actually didnt know baked oatmeal was a real thing σ(^_^;) I just needed a new way to eat custard apple (bakingwise it’s kind of like banana.)

        It works, btw. It comes out very sweet (no sugar needed) and probably a little creamier than the pumpkin version. I will post the recipe on my blog soon ^.^

        If I could get ahold of some tinned pumpkin I’d make your version too!!!

    The first time I tried baked oatmeal was last week and I can’t stop eating it! I’ve even turned my mom (the microwave oatmeal lover) onto it! Every single time I’ve had it so far has been with pumpkin, because once I open a can, it’s up to me to eat the whole thing… But who’s complaining? 😉

    That’s basically my recipe for baked oatmeal, except I use a 1/2 cup oats & 1/2 cup pumpkin and a tsp of pumpkin spice and scramble in a pear or apple to give it volume (and tastiness). Doesn’t even need sweetener with a pear/apple in it! And plump blueberries on top are delicious. 🙂

    Oh my goodness Katie, I just made this for a post-exam treat and I’m left with one word.
    AMAZING!
    I’m in spring right now so we don’t have a lot of pumpkin aroundm so I used pears instead. I’d recomend it, was naturally sweet so I reduced the maple syrup. Give it a try when you get the chance, you won’t regret it. 🙂

    I tried these last night and they were quick, delicious, and healthy. The recipe yielded 2 small ramekins for me. I topped one with a dollop of pumpkin butter and the other with a dollop of peanut butter and a swirl of agave. Yum! P.S. I’m usually not a big fan of traditional oatmeal, but loved this!     Flourless Oatmeal Pancakes are my new fav. way to eat oatmeal.
    You can leave the oats whole or blend them in a coffee grinder or blender
    to make them resemble the texture of flour a bit more….both ways the pancakes
    turn out perfectly…Love!

    So I just made this and I liked it! I made the pumpkin puree from SCRATCH so I thought “this better be worth the effort!” Hahah. Next time I would add in some dried raspberries or raisins and maybe add a little bit more cinnamon. Though I doubt I will be patient enough to make this again 😮

      Holy Cow that was yummy!! I thought it was going to me firm and crisp, but it was soft and warm and poridge like, except for the crunchy top. Like a breakfast creme brulee, only better. So good!

          second morning, same boatmeal. I can’t convince myself this isn’t a rich decedant dessert.
          I subbed 1 T of maple syrup for chocolate chips. I swear this is dessert. I feel like I should have to split something this rich… can’t believe I get to eat it all myself 🙂 The broiler is genious of you! I add a tiny bit of brown sugar and let it carmalize. So good! You’ve out-done yourself!

    I made this yesterday and it was delicious! I love oatmeal in any form, but it’s been a while since I baked it (because I’m lazy!). Well worth it, especially the brown sugar on top – gave it a nice crust that pushed it over the edge of yummyness! Thanks for a great and simple recipe that reminded me how awesome boatmeal is 🙂

      So this has become a daily breakfast for me! I will say that the one thing I like best (that I never thought of doing before) is that it’s a nice single serving. I had always baked my oatmeal in large batches and to me, the best time to eat it is right outta the oven… so this is perfect! Thanks again 🙂

    I found your blog via Pintrest and I’m in Love! Though I’m not a vegan, I am a devout chocolate and dessert lover and I’m 3.5 months from my wedding and trying to shed a few extra pounds by working out extra hard – and cutting calories. I love your recipes because they keep you FULL of good things like fiber and protein AND are tasty and satisfy all dessert cravings! I’ve already tried three of your recipes and I’m looking forward to trying this tomorrow morning! Question though – when you say you can freeze these – do you mean bake them first then microwave them when you’re ready to eat? Or freeze pre-baked? Thanks for the help!       I bake them up the night before and then put them in the fridge for the next morning, but I know a lot of other people have baked them first and then frozen the already-baked boatmeals to microwave later :).

    Katie, can I make a suggestion? I hate to even ask because I love your recipes so much. It would just be a little easier to follow the recipes if your ingredients were listed in the order they are used. That way nothing gets over looked or missed. I usually have to go back through the ingredients a couple of times to make sure I didn’t miss anything.

    I made this with a microwave, and loved it! I added a little extra pumpkin puree and cinnamon though. Thanks for this recipe! I usually just eat my oatmeal with brown sugar and 2 big spoonfuls of peanut butter. It’s fun to have other recipes that are really yummy too!

    I made seven servings of this (to use up the whole can of pumpkin), and divided it among the 12 muffin cups in my muffin pan. Just reheated two of them, added a little half-n-half (I’m not a vegan or vegetarian), and a sprinkle of cinnamon sugar. WOW! Delicious! I love baked oatmeal for breakfast, and I love pumpkin.     Delicious! I’m just finishing eating it right now (very slowly, because holy crap is it ever filling). I think this will be a new breakfast favourite.

    I didn’t add any sweetener into the recipe, but I did drizzle about a teaspoon of maple syrup on top. I loved it because it made some bites quite sweet and others a nice savory break.

    Just made this pumpkin boatmeal this morning and it smelled, looked, and tasted AMAZING! 😀 I used both cinnamon, nutmeg, and a little ginger and then put some brown sugar on top of the ramekins during the last minute of baking for a nice topping!     Have you played around with quinoa flakes at all? I’m really cutting back on carbs and just wonder if they’d work the same way. I can try and report back!

        Yep, I know, but like you said, more protein. I’m cutting back, not out. Anyway, I tried the recipe and it was tasty! Next time I’d use 1/3 cup of quinoa flakes instead of 1/2, since it seems to use up more liquid.

    I love how I can type pretty much anything into your search engine and actually find it! lol I was just talking to my sister about oatmeal. You see, she normally sticks with just plain oatmeal, lightly sweetened and throws in some nuts, but come on! I keep telling her about all my CCK oatmeal adventures, and today she finally tried a vegan oatmeal chocolate oatmeal and says she thinks she wants to try pumpkin next, thus my searching for pumpkin oatmeal.     OMG! Just made this tonight, and it was FANTASTIC! I used pear butter in place of the oil, and almond milk in place of “regular’ milk. Soooo yummy! I thought it tasted more like dessert than healthy breakfast! Sooo gonna make this again!

    Wow I just made this… SOOO GOOD. I topped mine with a mixture of plain Greek yogurt, more pumpkin purée and a little stevia and then blended all that. It was like icing on the cake 😉 try it!!!

    I just made this for the first time this morning, and it was delicious! I added some chopped apple, walnuts, and a few raisins, and topped it with peanut butter. I don’t know why I waited so long to try baked oatmeal, but now that I know how wonderful it is, I’m sure I’ll be making it all the time. I can’t wait to try all of your other baked oatmeal recipes. I think I’ll make the chocolate peanut butter cup version tomorrow!

    Mmmm sooooo yummy!!! Just had this for brekkie- I’m addicted !! At first I thought the portion was a little small, but it turns out it is super filling, I couldn’t finish it!!! Well, that could be because of the many handfuls of chocolate chips and walnuts I threw in there (;

    Thanks so much for this inspiration! I made some fresh pumpkin purée and replaced the oats with quinoa flakes as gluten free. I doubled the quantities, added some coconut oil and a little vanilla pea protein and made a loaf cake which is absolutely delicious! Have been trawling the net for nut, egg, gluten, dairy and sugar free treats and this gave me a brilliant start 🙂

    Made this recipe today and followed ingredients to the “T” with pumpkin and 1-1/2 T of honey. Also used slivered almonds. It was awesome!! My 8-year old loved it and was so excited when I said he could have one for breakfast!! It was like he was getting away with eating something sweet for breakfast!     I run in the mornings a couple times a week and when I do, my usual breakfast of Greek yogurt and berries or a smoothie just doesn’t cut it – I need carbs and I need to chew! I run at 5am and have to be on my shuttle bus to work by 7 so I don’t have a lot of time to cook breakfasts in the morning. I made the Pumpkin Boatmeal the night before, reheated it when I got to work and topped it with a dollup of Greek Yogurt and it was amaaaaazing! Wonderful single serving recipe that’s easy, filling and best of all doesn’t take up a lot of dishes!

    So delicious! I haven’t had luck finding pumpkin pie puree, so I use canned sweet potato casserole puree instead! Raisins are delicious in it too. Freezes like a charm! Thanks for the marvelous recipe 😀

    These are SO good. I make them once a week, but I triple the recipe and cook them in muffin tins. I eat two a morning for breakfast, and they keep me full till lunch. I add a handful of craisins, shredded coconut, or chocolate chips for added sweetness 🙂

    I can definitely vouch for how incredible these baked oatmeal recipes are! I hadn’t tried this one before but it worked out perfectly this morning. I only changed the recipe a little bit by omitting any sweetener and using .5tbsp of coconut oil. YUM. The hint of coconut mixed with pumpkin was to die for. I split the recipe between two ramekins, ate one for breakfast, went for a run, and had the other when I got back!

I found it because I have been searching for vegan recipes for baked goods–I did an allergy test with my doctor a few weeks ago and discovered I’m allergic to cow’s milk and eggs.     I love this recipe soo much! My freshmen year of college, I would make a huge bowl of oatmeal (I’m talking 3 servings worth) every morning. Nothing else sounded appetizing. I got me through three tough terms (all the usual freshman drama), and a major change, and all without gaining any of the freshmen 15. Never added anything but Stevia to it. May be time to mix it up a bit 😉

    Katie, have you tried baked oatmeal with steel cut oats? I’m guessing you’d have to cook the oats first which would detract from how simple this recipe is! My husband likes steel cut but hates rolled oats. I’ll probably try them anyway, I’m sure there texture is much different than cooking them on the stovetop. Thanks for the recipe!

    Best pumpkin oatmeal I have ever had, hands down. I used 2 tbsp lite maple syrup, unsweetened original almond milk, and .5 tbsp chopped pecans and had an amazing breakfast for 274 calories 🙂

    I am really disappointed in this site. I was excited to look at all of your recipes, however, not one of your nutritional facts have been correct – and yes I have done it in the way which costs the least calories just to double check myself. I do not need to keep a close count of my caloriesBut there are people who do – people who could be seriously endangered by underestimating their calories because they trusted your calculations. I am unsure if this is intentional or merely bad math but either way it is dangerous and I will now have to double check every recipe you ever post as I have family whose health requires their calories to be watched closely.

      I usually get very close to what Katie’s numbers are listed. Try using CalorieCount, which is what she uses for calculations. Also read her Recipe FAQ page, which lists more specifics about how nutrition facts are calculated. Hope that helps!
