Baby Oatmeal Cakes

Two mini boatmeal cakes topped with cinnamon swirl peanut butter!

Recipe: Baked Oatmeal Cake For One

Times the above recipe by two, and you’ll get my snack. Two oatmeal cakes are better than one, right? For the miniatures, all I did differently was use two 1/2-cup ramekins (any oven-safe dish will do) in place of one big dish. The result was two “muffin-sized” oatmeal cakes. This particular flavor was Apple-Cinnamon:

Apple Cinnamon Oatmeal Cakes

(makes 2 muffin-sized cakes)

  • 1/2 cup rolled oats (50g)
  • 1/4 tsp vanilla extract
  • 1/2 tsp cinnamon
  • sweetener, such as 1 1/2 tbsp maple syrup or 1 to 1 1/2 packs stevia (I omitted, but I’ve cautioned you before about my lack of sweet tooth)
  • 3 tbsp unsweetened applesauce (60g)
  • 1-2 tbsp chopped apple
  • 1/4 cup milk of choice or juice or water (decrease to 3 tbsp if adding the optional oil)
  • heaping 1/16th tsp salt
  • Optional for richness: 1 tbsp oil or nut butter of choice

Preheat oven to 375 degrees. Combine raw oats, spices, applesauce, apple, and liquid. Pour into a small baking pan, loaf pan, 1-cup ramekin, or two 1/2-cup ramekins. Cook for 15-20 minutes, or more until it’s firm. Finally, set your oven to “high broil” for 3 more minutes (or simply just bake longer, but broiling gives it a nice crust). Don’t forget to spray your ramekins first if you want your cakes to pop out.

You could use coconut butter or Healthy Cream Cheese Icing, but I expanded my foodie horizons and tried something new.

Next up in the boatmeal world? I really must try carrot cake. And then maybe gingerbread. Or peanut butter banana, like many of you suggested.

    Oh man, these look awesome!
    Although I don’t consider myself a true vegan, I do eat a mostly vegan diet. I am always a vegetarian but I don’t like to label myself a vegan because it is a bit limiting for me.

    I hugged a very vegan bowl of oatmeal this morning. It was the perfect way to warm up and fill my belly. Yay for vegan food! Hopefully I can remember to send you a photo for your tribute post. Gotta make a note, I’m so forgetful! 😕

    So you just split the “oatmeal” cake recipe in half and divide between ramekins right? These could be muffins too I guess.

    Ahh. Just this morning I made the Boatmeal with applesauce and crasins. So good! The best part is that as I was running around trying to get ready to leave the house, my oatmeal was baking away with no need for me to babysit it or look at it at all!

      So many people think baking is time-consuming just because it takes a long time! So weird, right? I mean, it’s not like you have to watch the thing while it bakes… but I wouldn’t blame anyone who wanted to, just to see how pretty it was ;).

    Okay, so I just finished making the boatmeal cake, except instead of using a ramekin, I used muffin tins, which made about three cakes. It was really good! I put in chocolate chips into the regular recipe and made it like that. It didn’t really keep its shape though because it was so moist. I tried to get it out of the muffin tins which I did put oil on but it didn’t hold together really well. It was delicous in my yogurt bowl and also on the side topped with some peanut butter! Yum!!

    Just finished up a study session with tempeh 3 bean chili I slow cooked most of the day (delicious!). Not being the biggest tempeh fan, adding it to spicy slow cooked meals is pretty much the only way it gets into my diet. I also tricked my sister into grabbing a bowl by telling her our dad made chili for dinner. And she thought it was delicious : )

    The Vegan GF Peanut Butter Caramel Chocolate Chip Cookies with peanut flour that I just made and posted about. Perhaps the best thing I’ve ever made. Ever.

    I also have a recipe up for Cinnamon Raisin Oatmeal Muffins. The end result LOOKS very similar to yours but I bake them. Not nuke. But I bet I could try that to save time!

    Something that made me smile this weekend, was one of my coworkers looked me dead in the eye and was like, “What’s your favorite vegetable?” with the most deadpan, serious look on their face, after I told them I was vegan. They thought since I was vegan, I must only eat vegetables LOL!!! Now that is someone who SERIOUSLY needs to come visit your website!

    Not that I wouldn’t like to have a day where I could reduce my diet to that kind of health though! But really now, in order to get some converts, to save the world, I think I have to show people there are TONS of yummy, devilish options that are vegan and just as tasty too.

    Also, I have a peanut butter problem lol. I have never tried coconut butter, but when I have a jar, it goes in a couple of days. I use it as toppings for EVERYTHING! I love it so much. It works as a great base to make a chocolate frosting too, especially if you use the vanilla peanut butter and co flavor and mix it with cocoa powder. My goodness, my life was scary when those two ingredients were involved! LOL I think I was having a relationship with my kitchen.

    Everything I eat is vegan (or god I hope so. I can’t say there weren’t a couple of accidents in the recent past 🙁 but they were unintentional), so yes, I have eaten vegan lately! 🙂

For Hug-Something-Vegan Month I’m going to bake some cookies in a few days and upload them to my blog. I’m considering going vegan (have been for sometime and I only have the occasional ice cream anyway so I figure, why not?), this could the prefect way to start.

    oh Katie…you are making me creative in the most amazing ways. I had an open can of coconut milk… cream already separated. I don’t even drain it anymore, just scoop the cream out of the top. So I threw a huge spoon full of coconut milk cream into my magic bullet (only have that because of you) short cup w/some cinnamon, maple syrup and truvia (stevia) and made the most UH-MAZING icing for my cinnabon boatmeal.

    The rest of the coconut milk cream was blended in my tall cup w/thawed strawberries and truvia and is now in ice cube trays in the freezer… I will perfect an “ice cream” that my son will love. Yes, I will. Thank you for teaching me vegan love. I was getting there, but you’ve filled in many of the blanks for me to make it so much easier to stay there. Should I also admit I have a chocolate fudge pie in the refrigerater right now? Probably not. That’s too much. I will share that. Promise. uh… we’ll see.

    Katie, I love your oatmeal recipes so much, including this, and got inspired to create one of my own! I love apple pie, and this oatmeal made me think of it, so I decided to make your baked oatmeal cake with just the cinnamon and then bake the apples separately to make a deconstructed baked apple pie oatmeal. It was super scrumptious!

    I totally just made these, froze them and am giving a big bag to a friend who just had a baby! Whenever I take meals for folks, I make sure to include breakfast the next day… and since I sampled the batch… you know, to make sure it was worthy of a woman who just had a baby… I think they’re going to LOVE breakfast!
