Strawberry Cream Forever

It’s been a leisurely morning so far, with a cold (but not windy) run, followed by the most gorgeous breakfast you’d ever wanna meet eat.

For the strawberry cream, I used “Soy-Free” Vegan Cream, and added strawberries.

Then, I cascaded the cream into a bowl–licking the blender blades, of course. (I also had a slice of almond buttered-Ezekiel toast, not pictured.) To make the day even sweeter, my morning class was canceled!

    I like a variety! It’s really interesting to hear your take on certain issues, and it’s nice when you share a bit about your life so we know more about the person behind the blog. (Whatever you feel comfortable sharing, obviously!) But your recipes are always creative and never too complicated, which is great because then people actually make them instead of just glancing at the pictures. Basically, keep doing what you’re doing…I think your blog is awesome 🙂

    I don’t really read any “this is what I ate today” blogs because honestly, I don’t care. I’m just looking for culinary inspiration! Of course I like the new recipes (especially the single-serving ones!), but non-food vegan related things are great too. I like the fusion of vegan food/non-food related posts that Gina at Choosing Raw does. More emphasis on vegan beauty products and clothing would be awesome! I’m always struggling to make sure that my make up and shoes are vegan, but lately I’ve been stuck in this Aubrey Organics and Toms rut.

    First of all, that Vegan Strawberry Cream looks so amazing!

    And even better is that it’s soy free! I’ve been trying to eat less soy in my diet, so I’ll definitely have to try this :).
    As for my favorite types of blog posts, have you ever seen Kath’s blog? You probably have, since its so popular, but its popular for good reason. She puts her heart into her blog posts, and she works so hard on each post. I can’t imagine how much time it must take to be so dedicated. I had a little blog for a while, but I gave up because it was just too time consuming and no one ever read! Anyway, if you haven’t seen that blog, I recommend it to everyone I know, in the real world too!

    I love your blog — it was my first one!!!! I think I found it through a website called “This Is Why You’re Thin” (there was a story about it on NPR, so I checked it out…and am pretty sure you either commented or had a pic featured)….and that was a year and a half or so ago! So obviously what you’re doing now has kept me (and others) comin’ back for more 🙂

    HOWEVER, I love posts that do not center around recipes. I love when you treat your blog like a little online journal. Friendships are based around mutual interests, struggles, quirks, etc….awesome recipes are like a cherry on top!! I love blogs that mix the two in most posts.

        I THINK you were featured in a post on the This Is Why You’re Thin website – and not it a bad way at ALL! The tagline for the site is “INSPIRING IMAGES OF THE THINGS THAT MAKE AND KEEP US HEALTHY.” It’s a website that showcases healthy food and recipes from all over blogland, and it was made in response to the disgusting “This Is Why You’re Fat” website….which is pretty gross!

So as long as you write what you feel like writing and stay true to yourself you will always have hundreds of regular readers, me included.

    I love your recipes, but I’m the same as you, I don’t read as many recipe blogs. I have them bookmarked but always skim through unless something major catches my eye. I only spend the time reading the few blogs I”m interested in and enjoy keeping up with. Life stuff, school, your friends, your hobbies, running, and I’d love to know more about all your charity work!
    Ps. I MAY go to Dallas in the next couple of weeks for a yoga training. It would be an intensive full day but I’d probably stay a weekend. I will keep you posted!

    Guess what Katie! I went to a Hong Kong Market during my Thanksgiving tournament out of town, and bought some agar!!!! The tournament was in this huge immigrant town with mexican, japanese, chinese, korean, and basically everything non-‘american’. I was so excited when I found it!!! I can’t wait to make some cream-pudding! What is your favorite flavor???

    I LOVE your agar puddings, Katie. They have been saving me at night when I get the munchies! I love that it’s basically like drinking a glass of Almond Breeze, except it’s much more filling both psychologically and physically! Plus, extra calcium and D from an extra serving+ of milk. 🙂

    My problem was I’ve got agar POWDER and apparently it’s stronger stuff than the flakes! My pudding comes out super duper thick, not whipped creamy. Then I did some googling and it turns out 1 tsp of powder is the same as 3 of flakes! Whoops! I’ll be trying again tonight (of course!) with the proper amount of powder and I hope I get airy, fluffy whipped goodness. I like the thick pudding (it’s a tiny bit grainy and I actually really like that texture – sort of like cream of wheat) but I keep lusting for that delicious whipped creamy picture you posted! 😉

      Finally found the sweet spot with my agar powder! Looks like 3/4 – 1 tsp means I get fluffy, smoother pudding. Just a heads up for fellow agar powder users. Hee. I made some last night with caramel extract and my SO was given a bite. He did his “omg” face and then said “Wow. That is SOOOOO good. Mmmm.”

          I got it at Fairy’s FInest. I asked multiple times and they confirmed veganacity of all their extracts. LOL. Butterscotch is also good and I use the pumpkin spice to add extra omph to pumpkin things. Eggnog was a waste of time, though, IMO. The rootbeer is hella strong!

          I have a slight extract problem!
          I honestly have about 15 different ones right now. O.o
          Great for agar pudding, though! 😀

            I thought I was bad… but if I ever find butterscotch, I’m so buying it! I’ve been looking everywhere. I did manage to find a coffee one, but I haven’t used it yet!

    Mmmm…it’s hard for me to decide what type of blog posts I like better. Personally it all depends on the day. I like recipes because I like to cook/bake. I like “What I Ate” posts because they give me meal/snack/when to eat ideas. I also like personal posts as long as their not too heavy. (After all, I blog in my free time – I don’t want to feel stressed out or depressed after reading!) 🙂
    Honestly, I like your blog enough to read anything…and if I don’t care for a particular post I would check back in time for the next one! 🙂

      A former vegan blogger wrote a NOVEL of a post on why she decided veganism was hurting her health. Apparently, it went viral and got hundreds of thousands of page views and 7,000 facebook “likes”… anyway, I read it and feel like I need to add my own two cents… ’cause I just can’t stay away from a good controversy hehe.

        I’ll be interested to hear your take on that as well, since I was in the boat as the ex-vegan poster. I was a non-red meat eater for twelve years, a vegetarian for five years and a vegan for two years. For me, it wasn’t sustainable, particularly as I’m allergic to nuts and discovered intolerances to soy, legumes, eggs and rice, of all things, which made it near to impossible to eat a nutritionally balanced diet. It was very difficult to eat against my ethical principles, but it came down to putting my family and their concerns over my health above my love for animals. I still have a vested interest in animal cruelty, but I do strongly believe that a vegan diet is *not* sustainable for everyone. My naturopath is quite adamant about that as well, actually, since she tends to push the “eating for your blood type” thing and apparently as an O blood type I’m the least suited to a vegetarian diet. Never sure what to think of things like that, but so far it seems to be true in my case. I thought that the post in question was fairly well expressed and that all bloggers obviously have the right to express their own opinions and the obligation to be present the truth of what lifestyle they’re following and recommending. To be honest, I had no idea that it had gone so viral though!

          Thing is, she didn’t just express her opinion, she threw vegans and veganism under the bus. She basically said that veganism wasn’t healthy, wasn’t less cruel and wasn’t more environmentally friendly – all supported with conjecture, anecdotal evidence and bad logic.

          And, for someone who claimed to be heartbroken and in tears over the change, she sure posts a lot of “meatgasm” type tweets and such. If I had to include some animal protein to stay alive, I’d eat the smallest amounts possible and certainly not wax on about how much I’d missed bacon and glorify eating animals! It’d make me heartsick and depressed to have to eat animals again. I’d go so far as to say I’d only do it if it were literally life or death. :/ But that’s me. I’m an ethical, AR abolitionist vegan which is quite different than the ones who are vegan for health, environment, human rights, animal treatment, etc.

          For those of us who are vegan for the animals (and this blogger spent years as an outspoken AR ethical vegan) it’s really sickening to read her drag ethical veganism through the mud. To have someone do SUCH a 180 and go from vegan to not just vegetarian or flexitarian but to full on unapologetic, Weston Price spouting carnist? It leaves one with an icky feeling.

          From your post here, I’d say you have a lot of things working against you for following a vegan diet – which is much different than VV’s situation. Plus, you seem very nice and thoughtful and aren’t spouting nonsense and telling us how awesome it is to eat meat and how all vegans are either lying and eating meat on the sly or are sick and delusional. 😉

          Except, I’m sorry, I have to!, the Eat Right for your Blood Type thing is pseudoscientific bunk. If you feel better as an omni, you feel better. But it has nothing to do with blood types.

            Thank you for all of the links. It’s always good to get a more rounded grasp on both sides of an argument. I can understand why you would be bothered by the tone of the post; I think that’s probably the main issue: I would never tell other people how to eat (all right, I may have once or twice tried to get my family to stop eating corn chips with added MSG, but apart from that!) and unless I’m specifically asking a dietician for advice, for example, I don’t expect other people to tell me how to eat either. I think that everyone is entitled to eat the way that makes them feel best, but it’s totally paramount to have respect for the choices that other people make. I know that many vegans feel much healthier on diets that are free of animal products and many people feel better physically as omnivores, and I think that’s fine, as long as no one is lecturing or bashing other people’s choices.

            Personally, I wouldn’t be espousing the joys of eating meat again. It was extremely difficult for me to do so; for a long time, I felt like I was undergoing a completely new identity. I identified myself as a vegetarian for such a long time. I remember saying to my mother that I would “die” before eating meat again. After two years of serious illness (not caused by my diet, but the lack of nutrients available to a vegetarian who can’t eat nut, soy, beans, lentils, eggs or dairy didn’t exactly help me feel stronger either) and watching the misery of my family, I changed my mind. The part I *do* enjoy about being an omnivore again (still haven’t been able to eat red meat, but am eating poultry and seafood, locally produced and organic if possible – that’s the best I can do) is feeling more socially integrated at family dinners etc, which is important to me after years of being cut off by an eating disorder and then by illness. It doesn’t mean that I can just totally turn my back on my principles or that I don’t feel guilty though. What’s been important for me is learning not to label myself. I was always more than a vegetarian. My life is not defined by the food that I eat, just enhanced by it.

            I sometimes still feel a little guilty still reading vegetarian and vegan blogs, as if I don’t belong here now, but I continue to do so because I find interest in the bloggers themselves, beyond their diets. I know that eating animal products doesn’t make me a bad person and I can find things to relate to in all of the blogs that I read, be they omnivore, vegetarian, or vegan.

          I can’t respond to your reponse above for some reason(?) but I wanted to say you shouldn’t feel guilty! You belong here as much as anyone else. EVERYONE, regardless of their general diet, helps animals with every vegan meal or treat they eat. 🙂 Plus, vegan/veggie bloggers talk a lot about issues that conscious, compassionate consumers should be aware of. Please don’t feel guilty – we want you here! <3

And the challenges (not nec for a prize but for fun – like the hug a vegan (still trying to get a pic of me hugging myself but then my hands are used) or when I made blue pancakes (ps I then bought blueberries for the freezer) and those sorts of things)

    recent ex vegan uproar? not sure which one you mean 🙂 ? What i am thinking of is a few semi-notable vegans saying they are no longer vegan anymore. I am taking it that you’re still vegan (unless I missed something) but truly, I dont read blogs for food or to get all up in the author’s food path.     I love reading about your life and thoughts, but I also enjoy it more when it’s interspersed with the foods you had that day. Your tips for cooking are ever present in my kitchen “adventures” and I am rarely not impressed by your food creations. I hope those things never stop or even take a back seat to other topics. =]

    Love the blog and once again have to try one of your recipes again. I know that you are inc college but I’ve never heard what you’re in college for. Is it to be a chef? Because you could open a cute little vegan bakery (you could even set it in my state, MA), or you could be a nutritionist because you’re very good at making healthy recipes. What are you actually in school for? Please answer before I come up with some other crazy idea.

      Haha I’d love to be a cupcake chef… but lol I actually don’t really like to cook! I could be the decorator though. Like on Ace of Cakes! But they have way more skills than me. I was actually majoring in Spanish, but switched due to a lot of things. So I’m a little late in graduating, but I think it’s worth it to be happy :).

    At the risk of being attacked by the rabid CCK fans, I have a decided to share a criticism of the blog. Trust me, I’m not taking this lightly. I wanted to tell you about this a looong time ago, but I don’t want to be run off the blog by other readers. 🙁 Here goes: I’m not a fan of the way the recipes are posted sometimes. I don’t mind clicking a link to get to something, but some of the recipes are more than just a click away. Sometimes they’re 2 or 3 links away and a few times I’ve actually given up because I just can’t find the darned thing even after clicking on the links.
    Not that this is enough to stop me from trying, but I figured it was a good time to let you know now that you’ve got this fancy new blog setup. 🙂

      I’ve actually written about this in the past. I use Windows LiveWriter to write my posts, and it auto-links to many of my recipes. So sometimes, if I’ve gone back and changed a post or edited a recipe, they’ll link to the wrong place. If you ever see that happening, though, please feel free to tell me :). I’ll change it!

    I am also an ex-veagn. I went through vegetarian, vegan & raw vegan phases. Sadly, my health deteriorated due to a number of factors, including but not limited to the diet. I am hypothyroid, and realized that I cannot do the green juices or smoothies (thoses are typically made with goitrogenic i.e. thyroid suppressing fruits & veggies like strawberries, peaches, broccoli, cabbage, spinach, etc.). And eating so many raw, cold foods contributed to a lower body temperature, which can be dangerous. Also, I have serious allergies to most grains, and some intolerances to most beans due to a leaky gut & candida condition. If I had stuck to a diet dogma, I would have gotten much sicker. Also, I have to take dessicated thyroid (from non-factory farmed animals) to re-balance my thyroid. I learned the hard way that there is NO one-size-fits-all diet. Now I ditched the dogma and am on the ‘real food’ balanced diet- I eat organic as much as possible, minimally processed food, GMO-free, grass fed & finsihed & pastured meats, cut out allergenic foods and try to keep exposure to chemicals to a minimum. I also vary my diet. Eating the same foods over & over can cause imbalances (thyroid, hormones, vitamins,minerals, etc.) in the body. However, I still have vegan friends and they seem healthy- I would never tell whether they should be a vegan or omnivore. I think they should follow the diet that works best for them & get their blood tested (for vitamin/ mineral levels & other imbalances) periodically to catch any disease processes as early as possible.
