Raw Coconut Cream Pie

Last night, I made up another pie, but I was feeling super-lazy (and super-hungry). So I gave up completely on the idea of pie and instead portioned the coconut cream filling into little ramekins… Voila! Raw Coconut Cream Pudding! :) Love in a bowl.

Speaking of love, I do not talk enough about the loves of my life. No, not coconut butter and chocolate. The other loves of my life:

Thanks to everyone who left cookie ideas the other day. I narrowed it down to what seemed to be the three most popular: Chocolate Chip, Peanut Butter, and Sugar. So now you can vote: Of those three, which one should I work into a single-serving vegan cookie?

  1. Single serve vegan cookie–that’s baked, I’d love to see your spin on any.

    Or that’s raw, “cookie dough” theme inspired, again, any!

    I have done raw and cooked versions of all, with the exception of sugar cookie dough balls, just a raw/no-bake version.

  25. I vote #1 . Chocolate chip cookies are such traditional cookies, and you can never go wrong with chocolate. :)

    Also, my dad bought me some 90% cocao chocolate, and I thought of you. You must really love chocolate to eat it. He wasn’t too crazy about it, but I adored it! It’s nice to eat something for what it is, not what you can add a bunch of sugar and nasty to to make it taste “better.”

    If you make peanut butter cookies, could you please possibly make it gluten free also?

    1. Sure… I’ll probably use spelt flour, but I don’t see why you couldn’t sub rice flour or another gluten-free flour if you wanted to follow the recipe and just change the flour :).

    Your dogs are adorable! I’m a complete dog person~ You seem to like terriers? (Erm… well I think one of your doggies is a Jack Russell terrier, no? And Scotties are <3) Do you ever take them running with you? 😀

    1. Henry’s 1/2 Jack Russell. He’s a Toy Fox Terrier, which is a mix of JR and Chihuahua :). Well, we think that’s what he is, anyways. We adopted him :).
      I take him out running for like 1/2-hour runs sometimes in the afternoon. But Molly… lol she’s waaaaay too slow for a run!

    For the single lady cupcake, how about cranberry orange? Or what about a savory muffin, like spinach and sun-dried tomatoes or olive and artichoke? Savory muffins are huge here in Australia, but the ones at the shops are never vegan!

    Guess what I found (and bought) yesterday? A vegan chocolate advent calendar! … Yes I realise it’s a little late to start an advent calender, and I’m a bit old for one but hey, it’s Swiss chocolate and it just sounded so good. 😛

    As for the single lady cupcakes I have a few or a lot of flavors chocolate peppermint/ or candy cane, gingerbread, eggnog, red velvet, chocolate/coconut, Peanut butter(or any nut butter), Mocha, Chai Spiced, Sweet Potato, Chocolate Mint, Lemon Raspberry, and Carob Banana.

    My pick would be number three , sugar cookie, which I think would be a good base recipe.You can always add chocolate chips,nuts or fruit to make it your own favorite cookie.
