The Loves of my Life

Remember my raw coconut cream pie?

Raw Coconut Cream Pie

Last night, I made up another pie, but I was feeling super-lazy (and super-hungry). So I gave up completely on the idea of pie and instead portioned the coconut cream filling into little ramekins… Voila! Raw Coconut Cream Pudding! 🙂 Love in a bowl.

Speaking of love, I do not talk enough about the loves of my life. No, not coconut butter and chocolate. The other loves of my life:

Awwwwwwww.

Single-Lady Cookie Vote:

Thanks to everyone who left cookie ideas the other day. I narrowed it down to what seemed to be the three most popular: Chocolate Chip, Peanut Butter, and Sugar. So now you can vote: Of those three, which one should I work into a single-serving vegan cookie?

1. Chocolate Chip
2. Peanut Butter
3. Sugar

Put the # in your comment. I’m working on more Single Lady Cupcake flavors, too. So if there’s one you’re dying to see, let me know.

Happy Saturday! Eat lots (and lots) of chocolate!!

    I’d love a single-serving, healthy chocolate chip cookie. #1
I’d also love a Henry. He’s too cute for words :).

  2. Albizia says

I don’t know how it happened but there are so many people talking about sugar cookies around the blog world that I started craving a good old sugar cookie so my vote goes to #3. I feel like a traitor 😀 .

P.S. My love is sending greetings to your loves 🙂 .

  3. Aimee says

I would love to see #1, the chocolate chip. And I would also love to see more of those cute faces. Puppy pictures always get me. Happy Saturday, Katie.

  4. Molly says

Your doggies are adorable! I’m so excited for your single lady cookie recipe and I’m gonna have to go with #1… chocolate chip baby!

  5. Erika says

ah you and your doggies are awesome!! i vote chocolate chip 🙂 every lady needs chocolate chip cookies.
p.s. love the blog and all your genious recipes!

  6. Ashley (Armadillo) says

I vote #1 . Chocolate chip cookies are such traditional cookies, and you can never go wrong with chocolate. 🙂

Also, my dad bought me some 90% cocao chocolate, and I thought of you. You must really love chocolate to eat it. He wasn’t too crazy about it, but I adored it! It’s nice to eat something for what it is, not what you can add a bunch of sugar and nasty to to make it taste “better.”

Single serve vegan cookie–that’s baked, I’d love to see your spin on any.

Or that’s raw, “cookie dough” theme inspired, again, any!

I have done raw and cooked versions of all, with the exception of sugar cookie dough balls, just a raw/no-bake version.

I am smiling ear to ear seeing the pics of the loves of your life…TOO SWEET!!!!!

    Have a wonderful weekend, sweetie!

    🙂

*Shouts* number 2, number 2!! Although why just do that, what about a pb/chocolate chip cookie combination…?!
And I can’t believe what you’ve just told us to do; I’m just going to have to sit down now and work my way through a (large) helping of chocolate raisins. Again. Tsk 🙂

  9. Namaste Gurl says

I vote you combine all three, as I would do :). I mean who doesn’t enjoy a chocolate, peanut butter and sugar cookie….and maybe some coconut thrown in!

  10. Sarah says

    #2 – peanut butter!

For the single lady cupcake, how about cranberry orange? Or what about a savory muffin, like spinach and sun-dried tomatoes or olive and artichoke? Savory muffins are huge here in Australia, but the ones at the shops are never vegan!

  11. Claire says

    # 1
Guess what I found (and bought) yesterday? A vegan chocolate advent calendar! … Yes I realise it’s a little late to start an advent calender, and I’m a bit old for one but hey, it’s Swiss chocolate and it just sounded so good. 😛
    The poochs are absolutely gorgeous!

  12. melissa @ the delicate place says

#1 since peanut butter is super inflammatory to my system and we just don’t get along so well ;p ahh i love your puppers! so cute 🙂

  13. Jenny says

I wanted to say peanut butter… but I love chocolate too much!

    I say #1! 🙂

Your dogs are adorable! I’m a complete dog person~ You seem to like terriers? (Erm… well I think one of your doggies is a Jack Russell terrier, no? And Scotties are <3) Do you ever take them running with you? 😀

    • Chocolate-Covered Katie says

Henry’s 1/2 Jack Russell. He’s a Toy Fox Terrier, which is a mix of JR and Chihuahua :). Well, we think that’s what he is, anyways. We adopted him :).
I take him out running for like 1/2-hour runs sometimes in the afternoon. But Molly… lol she’s waaaaay too slow for a run!

  14. Cynthia K says

Aw, Molly and Henry pictures! They are such little cuties and I just love Molly’s little face, and Henry just looks so sweet. If you ever find yourself in NC with them I will dogsit for you!

Oh, and #1 all the way baby!

  15. Brandi says

#2 and #1 together if not then just #2!

As for the single lady cupcakes I have a few or a lot of flavors chocolate peppermint/ or candy cane, gingerbread, eggnog, red velvet, chocolate/coconut, Peanut butter(or any nut butter), Mocha, Chai Spiced, Sweet Potato, Chocolate Mint, Lemon Raspberry, and Carob Banana.

  16. Serena says

    CHOCOLATE CHIP.
    Scrap that…MINT CHOCOLATE CHIP.
or could you do something like hazelnut butter? Because Hazelnuts are so much cooler than peanuts…
oh I am so not good at following rules.

  17. Debbie C. says

My pick would be number three , sugar cookie, which I think would be a good base recipe. You can always add chocolate chips, nuts or fruit to make it your own favorite cookie.

  18. Jessica says

Katie, I FINALLY got a dog!! My hubby and I adopted a Pomeranian mix from a local shelter & he is the cutest thing in the world! 😀

  19. Samantha Robertson says

Definitely #2. I have a sad, sad peanut butter addiction. I drive my boyfriend crazy because I take up an entire shelf in the cabinet with my peanut butters!
