Happy Christmas Eve, fellow chocolate chips!
(And peppermint chips too :).)

Yesterday, I highlighted a few of my Raw Christmas Cookies.
Today, it’s time for the baked cookies. Some are healthy, and all are vegan:

Other Cookies:

Hmmm, I think I need to come up with some more cookie recipes. Before writing this post, I thought I’d posted many more than this. And I’m amazed I’ve never shared my favorite peanut butter cookie recipe, so hopefully I’ll get that up pronto!

Question of the Day:
Have you baked any holidays cookies yet this year?

I’m ashamed to admit that, after getting burned out with the Ex-Boyfriend Cookies, I have yet to bake a single Christmas cookie. Thankfully, Christmas isn’t over; there’s still time!

Katie is the baker, photographer, and author of the popular blog Chocolate-Covered Katie. Her favorite food is chocolate, and she believes in eating a balanced diet that includes dessert every single day. More about Katie—>

  1. I have baked a few cookies his year, some sugar cookies back in the day, but I overloaded on them and took a two week break! Last night I made some chocolate truffle cookie things and I’m going to make some Italian Raisin cookies, but that’s it for me! No need to over do it :)

  2. I haven’t baked any cookies unless my oatmeal cookie brancakes count? Though I have made raw “cookies” pressed into cookie molds – though they were more like health bars than cookies. Most of the time its more the idea of a treat than the actual treat that makes me happy.

  3. Katherine says:

I haven’t baked anything because I can’t unfortunately. I am going to try to get some cookies baked before I go back to school though.
Have you ever tried making a vegan chi cookie? I saw one in a store yesterday and it looked amazing, but unfortunately it wasn’t vegan.

    1. LOL what’s a chi cookie? I tried to google it, but only got a lot of results for “chocolate chip cookies.”

      1. Katherine says:

        *Chai sorry
I have never made one, so I don’t know what goes into it, but as far as I got from the person at the bakery they are cookies made with the flavoring for chai coffee. My mom tried it and she said it tasted just like the coffee with a little bit of a nutty taste.

  4. “Hmmm, I think I need to come up with some more cookie recipes. Before writing this post, I thought I’d posted many more than this.”—

I think you have TONS already, my goodness, you have a zillion already!

But I know what you mean, sometimes i think ive posted tons, but really, it’s “only” 5. Which for me, I love choices and options and more and more…alas, my posts are novels..haha But I am trying to cut back, and have been!

    Merry Xmas hon!!!

    1. I thought I had so many more, especially healthy ones. I do have a lot of raw ones, but not true baked cookies! And lol girl, YOU definitely have a ton of ALL recipes :). Your recipe archives are amazing!

The ‘Married Man’ cookie (i.e. The Single Lady Cookie) was a huge hit with my husband. If I bake a huge batch of cookies, he’ll eat a huge batch! This recipe is a great way to get a little something warm from the oven, without risking a messy kitchen and a big tush. Can I at ‘tush’ on your blog? Merry Christmas!

    1. Ha! Married Man cookie. TOOOO cute!

  6. I’ve baked wayyyy too many cookies. I don’t think anyone in my family ever wants to eat sugar or butter again!

  7. mmmm ya know i haven’t made the single girl cookie yet and i think i might have to try it today! it’s gonna be gingerbread flavored of course 😉

  8. i better get my bakin’ butt going!

  9. I am LOVING my raw cookies lately!!!! I just arrived in Arizona yesterday to spend xmas with my grandparents, and I went shopping for dates, walnuts, and cocoa powder, and peppermint extract! You know what I’m making for them 😉

  10. Ilana says:

Considering I’m spending tonight and tomorrow alone (but I’m Jewish, no big deal for me!), I think I’m gonna have to give single lady cookies a shot!

  11. Stefanie says:

I have been baking quite a bit this past week. I baked cookies for some friends and family. I still have to make the pie for my families dessert tomorrow..

  12. I baked some quadruple chocolate ones this week… but looking forward to your pb ones! Have a really lovely Christmas x

  13. Yum!!!!
This year I’ve made double chocolate mint cookies!!!! =D

  14. Santa’s going to love any of these cookies!! 😛

  16. I’ve baked holiday everything, girl! 😉

  17. Those iced sugar cookies look exceptional! Some of my favorites!!

  18. Heather says:

I baked 115 dozen, and still not finished. I still need to bake nut balls for my mom (their her favorite) and make a batch of homemade caramel for turtles. It’s a good thing I like to bake! Merry Christmas Katie!

  19. Katie says:

Merry Christmas Katie to you and your family!! love you girl!! xoxo

Yum cookies!! We are making sugar cookies today!!! xoxo

  20. I’ve UNbaked and dehydrated many, it’s sort of excessive :) Merry Christmas Katie, you are loved!

  21. I haven’t baked any cookies this year! Last year I baked hundreds and this year I’ve been visiting my mom and I just haven’t had the time or opportunity.

  22. I’ve been cooking/baking a lot, but not nearly as much as I’d like! I made a St. Louis gooey butter cake for someone, some pumpkin squares…but my favorite thing that I made was white-chocolate cranberry macadamia nut cookies! They were Christmassy as well as amazing.

  23. Alexandra says:

Of course there’s still time! :) I just got done yesterday with sugar cookies, but I had planned on making ginger bread cookies, chocolate truffles, etc. At least I got one variety in, and if I can, so can you. 😉
    Merry Christmas, Katie!

  28. Demelza says:

Oh no, the chocolate almond cookies link doesn’t work! :[
I haven’t done any baking yet…I just went on a road trip to visit family in New York/New Jersey, so after like 14-17 hours in the car I am wiped out, haha.
    Merry Christmas Eve, Katie~

Katie, I absolutely love your blog!! As someone in recovery from an eating disorder, your blog breathes life into food again and makes me want to appreciate it, create it, be present with it, and just have fun with it! You totally have a way of “waking up” food and bringing color and life into it. Your zest and relatibility is so encouraging. And all the links are addictive because everything is so colorful and I feel like a kid in a candy store, lol! Thank you so much. Have a beautiful holiday and take care. <3

Katie! I absolutely love your blog! I am in recovery from an eating disorder and you have a way of bringing life back into food for me. You make me want to create, appreciate, be present, and have fun with food – and your philosophies on moderation and flexibility are so healthy. Your zest and relability are encouraging. And all the fun colors and pretty arrangements make me feel like a kid in a candy store! Thank you so much. Please know that you are really helping, that your blog speaks to many different kinds of people, that the flexibility piece is working. You nailed it. Have a beautiful holiday and take care. <3

    1. Wow, thank you SO SO much, Jenn! Seriously, your comment meant the world to me; you made my Christmas :).
P.S. lol no worries about the multiple comments: I’ve been leaving multiple comments on peoples’ sites too. WordPress keeps sending my comments to spam! Grrr hehe.

      1. Jenn says:

Thank you so much for your reply! I had to let you know that I made a banana butter sandwich for lunch and it was heaven on a plate! i gave the leftover banana butter to my friend (crediting you, of course) who sadly is on crutches for a month after breaking her leg – and she just told me it was “absolutely superb! delish! delish!” Now it looks like I’m just going to HAVE (insert sarcasm here) to make more! Ha! Who’s complaining?! I’ll gladly be her banana butter supplier during her month off her feet. Such luxurious treatment she’s getting, sheesh! 😉 Thanks a whole bunch for all this deliciousness. <3

        1. Aww, tell your friend to feel better :(. You’re such a sweet friend. My mom has a broken knee right now, so I’m playing nurse just like you!

  31. Jenn says:

Oops! I thought my first comment didn’t take so I tried to rewrite it! Now you know what I said and then some -sorry about that! Well, here I am again. :) That’s it for tonight, promise! Take care. :)

  32. Claire says:

I’ve made two types of gingerbread biscuits (chocolate and traditional) which went down a treat (pardon the pun). Sigh, Christmas is over now, it’s only 9 at night and I’m heading to bed, so tired xD. Do you go on a run on Christmas or is there simply not enough time?

    1. I did, this year. I said to my mom, “Are y’all going to sleep late, or should I plan to not run tomorrow?” She was like, “Ooh good, you run. Then I can make bacon and not bother you!” lol

  33. Albizia says:

    Merry Christmas, Katie!

It’s nice that someone thinks of Santa’s health 😛 . And if health goes hand in hand with great taste, Santa must feel really lucky to have the chance to try your cookies.

I just started baking but it’s because I had a lot of other things to cook and didn’t have time for this. You are invited at a lenten Christmas Eve dinner at my blog. I even baked the pumpkin dessert you once asked about :) .

    1. Someday, we WILL meet up… and have a foodie feast. ‘Kay? 😉

      1. Albizia says:

        Sounds like a great idea :) .
