Pumpkin Pie Parfait

Can you say that three times fast?

Because I was out so late on New Year’s Eve, I opted to take a rest day from running the next morning and sleep in. Of course, “sleeping in” for me means sleeping til 7:30, because my body naturally wakes up with the sun. So I had a nice, leisurely breakfast:

Until this morning, I don’t know that I’d ever had a parfait before. Can you believe it?

I’ve posted the recipe for the mousse before. But, so you don’t have to click more links, here’s the recipe again:

Vegan Pumpkin Pie Mousse
(serves two)

1 cup canned pumpkin (such as Libby’s)
1 tsp cinnamon
up to 2/3 cup milk of choice
4 ice cubes (optional)
Sweetener of choice, to taste

Whip it all up in the blender for a loooong time.

Layer in a parfait glass, with pom seeds and Soy-Free Vegan Cream.

Along with the parfait, I also had a crumbly Single-Lady Muffin.

New Year’s Blog Changes:

I changed the blog header again. What do you think of my blog’s new look?

Basically, I was never 100% happy with the “strange diet” caption, as it sounded like I thought veganism was weird. Other captions I tossed around included: “Healthy is the new Naughty” and “Eat nice, feel Naughty.” I’m also in the process of updating pages, but who knows when they’ll be finished. (College starts again soon… where did Winter Break go???!)

    Ack! Clickin the blog from the email notice got me 404’d 🙁 BUT I clicked ‘home’ and got to the post 🙂 In case you were hoping for opinion (LOL!) I like the parfait pic on the red tablecloth background best 🙂 Makes the pom seed POP! And, don’t pom seeds tastes funny with the pumpkin? No? Hm. 🙂 And… I don’t see a different header 🙁

    I have yet to try the single lady muffins. I must get on that, looks delish 🙂

    Also, yay for the header change. I was a little :/ about the strange diet part… it’s not strange! Eating REAL food is normal, the rest of the world’s gone mad. 😉

    I’ve made some oatmeal parfaits before, and they are amazing! My very first parfait was from McDonald’s. Ewwww….. I know! But my grandma said they were the best, and so she got one for me and my brother. Haha – I love my grandma! 🙂 (By the way, it was better than I thought it would be, but the oatmeal ones are definitely a lot better – of course, oatmeal makes everything better 😉 )

    I definitely need to try you parfait – it looks soooooo good!

    I think the new header is fantastic! “strange diet” makes it sound like being vegan is some kind of defect…so I like this much better 🙂

    I can’t hear the word parfait without the entire Donkey monologue about parfaits from Shrek going through my head … I don’t know that I’ve ever had a parfait before either, but that one looks delicious. I might have to defrost some pumpkin puree and try it out!

    That parfait is something beautiful. I’ve definitely had a couple of parfaits before… though never when dining out. I have to really watch my sugar intake and usually when you order a parfait from a restaurant it’s mostly sugar.

    And the single lady muffins… um, delightful. I just checked that out and I love the idea. I’m so excited to try it! 🙂

    That pumpkin pie mousse looks delicious, and so does the single lady muffin! I really like parfaits but I don’t eat them too often anymore. When I was on a meal plan during undergrad, this one dining hall made the BEST parfaits in their grab-n-go section 🙂

    For me “strange” never referred to veganism. I would rather say it was about chocolate-covered everything and not very common food combinations (which I love, by the way 😉 ). But the new caption is cute, too.

    As I’m talking about strange food combinations, I must thank you for the pom and pb sandwiches. I’d never come up with the idea of eating them together but the combo was great. Thanks 🙂 .

    The parfait looks splendid. Even if I have tried parfait, I don’t remember it. But I bet it tastes goood.

    I have never made a parfait but I have had one of those fruit and yogurt ones from Mcdonalds several years ago. None lately though! Yours looks amazing!

    I bet the pumpkin mousse would be really good in an oatmeal parfait. The header sounds a little more interesting to those not familiar with the vegan diet/lifestyle. It seems like it would make them want to try it out.

    I think the new slogan is super cute but then again, I’d likely think anything you came up with would be super cute, you obviously just have a knack for that kinda thing!

    I’ve made my own parfaits before but they’ve got nothing on yours. My parfaiting skills need some work haha. I need to try those single lady muffins too, I have the recipe right on my desktop just waiting to be made!

    that looks like a beautiful parfait but even better to eat! i love pom arils! i agree about the header change, veganism isn’t strange it’s just a change from the standard american diet. i still realize it’s odd to the older generation but i think the younger ones are more accepting of a nontraditional diet.

    Aaaaaah that parfait looks INCREDIBLE. seriously. Ive never had a parfait either, but after seeing this I think that’s gonna change real soon haha.

    I like this caption a lot better as well, we don’t want others to have one more reason to see veganism as something strange ;).

    I love the pictures lately…the photo quality and the photographic styling just seem soooo pretty lately! Years of blogging and pic taking is paying off b/c your shots are even prettier than before 🙂

    Your header…has to be what YOU want it to be. I played around with mine about 6-8 mos ago and I *think* I like it…but life is an evolution…so headers probably are too 🙂

    Love the idea! Do you think I could replace canned pumpkin with a real one? Cause I don’t thin they sell that where I live :S If so, how much do oyu think it’d be?

    How creative of you to layer with pumpkin, vegan whipped cream, and pom seeds! My motto is you can layer whatever you want in a parfait! I layered pumpkin, , a whole- made cranberry muffin and almond butter the other day! Yummyyyy. 🙂
    Sadly, however, I recently broke my only parfait glass– hello, Target!

    Hey Katie!
    Just wondering if you were still planning on doing that “grocery shopping list” post? I know you have a ton of stuff to cover! But when you get a chance, it would be so great- so many times I have gone to make a yummy-looking Katie recipe but didn’t have a crucial ingredient stocked. I’d love to know what you keep “permanently stocked”- like a list of what’s in your pantry and fridge and freezer and what stuff you buy weekly (or even more often?). It would be so inspirational and handy!

      I definitely haven’t forgotten about it. I thought (and still think) your idea is super-fun, and it’s on my “blog post to-do list.” Unfortunately, that list also has about 50 other posts I want to write (or am in the process of writing). But I WILL get it up someday. In fact, I’ve already started working on it :).

    Ohhh pretty parfait, what a good idea for the vegan cream. I love the new tagline – not that I thought you were refering to being vegan as strange, more a reference to the chocolate … and your nack of finding new uses for ingredients but mainly the chocolate. Actually, now that I think about it chocolate everyday isn’t exactly strange at all!

    I love parfaits! I have tons of food allergies so I have to replace one meal a day with a protein shake. When I have extra time I turn them into awesome layered “parfaits”. I make a Tapioca Chia seed pudding with almond milk, chia and vanilla stevia then I layer it with my “Chocolated covered strawberry Mousse” which is my chocolate protein powder blended in the bullet or vitamix with frozen strawberries, avocado, almond milk, cacao powder and chocolate stevia. It is the most delicious thing ever! BTW love your recipes, the other day I made a single lady pumpkin muffin to crumble into my shake!

    I would LOVE to find a few recipes with fresh pumpkin (like how we use squash) that is not in a dessert or sweet format. We are a GFCF home and not real big on soy. Please share:)
