Pumpkin Pie Parfait

Can you say that three times fast?

Because I was out so late on New Year’s Eve, I opted to take a rest day from running the next morning and sleep in. Of course, “sleeping in” for me means sleeping til 7:30, because my body naturally wakes up with the sun. So I had a nice, leisurely breakfast:

Until this morning, I don’t know that I’d ever had a parfait before. Can you believe it?

I’ve posted the recipe for the mousse before. But, so you don’t have to click more links, here’s the recipe again:

Vegan Pumpkin Pie Mousse
(serves two)

1 cup canned pumpkin (such as Libby’s)
1 tsp cinnamon
up to 2/3 cup milk of choice
4 ice cubes (optional)
Sweetener of choice, to taste

Whip it all up in the blender for a loooong time.

Layer in a parfait glass, with pom seeds and Soy-Free Vegan Cream.

Along with the parfait, I also had a crumbly Single-Lady Muffin.

New Year’s Blog Changes:

I changed the blog header again. What do you think of my blog’s new look?

Basically, I was never 100% happy with the “strange diet” caption, as it sounded like I thought veganism was weird. Other captions I tossed around included: “Healthy is the new Naughty” and “Eat nice, feel Naughty.” I’m also in the process of updating pages, but who knows when they’ll be finished. (College starts again soon… where did Winter Break go???!)

Katie is the baker, photographer, and author of the popular blog Chocolate-Covered Katie. Her favorite food is chocolate, and she believes in eating a balanced diet that includes dessert every single day. More about Katie—>

Ack! Clickin the blog from the email notice got me 404’d :( BUT I clicked ‘home’ and got to the post :) In case you were hoping for opinion (LOL!) I like the parfait pic on the red tablecloth background best :) Makes the pom seed POP! And, don’t pom seeds tastes funny with the pumpkin? No? Hm. :) And… I don’t see a different header :(

I have yet to try the single lady muffins. I must get on that, looks delish :)

    1. Brandie says:

OMG I got the 1st comment. Ack!!!! :) Amazing.

    2. Yeah, I accidentally posted it on January 1st, so the google reader feed is still picking up the post with “1-1-2011” in the url. I can’t seem to change it :(.

The header photo is the same; just the caption is changed.
      Love ya back hehe :).

  2. LOVE parfaits!!!
The header is awesome, by the way!

  3. I’ve made yogurt parfaits before. This looks so fancy!

  4. that looks like a beautiful parfait but even better to eat! i love pom arils! i agree about the header change, veganism isn’t strange it’s just a change from the standard american diet. i still realize it’s odd to the older generation but i think the younger ones are more accepting of a nontraditional diet.

  5. That parfait is beautiful! Pretty food can be so fun! And yeah, my break from school ends today, back to the grind!

  6. Katie-that parfait is gorgeous!!! I have always loved parfaits…when I was little, my sis and I would always make our mom and dad parfait breakfasts in bed on their bdays….ahh the memories….

I love the new phrase!!! I don’t think the strange diet really fit your blog….I love this 😉

    1. Aww what sweet children you were ;).

  7. Melissa says:

    Lovely parfait!

Also, yay for the header change. I was a little :/ about the strange diet part… it’s not strange! Eating REAL food is normal, the rest of the world’s gone mad. 😉

    1. Here here! :) What’s so “normal” about a twinkie that has so many preservatives it stays in perfect shape from the 1940s, anyway? That’s not normal; that’s creepy!

  8. Picky Nicky says:

Yumm, you can’t go wrong with pumpkin for brekkie :) :)

  9. kristine says:

I like the new header 😀

  10. GAH the inside of your muffin looks so unbelievably moist.!

  11. Your breakfast is so beautiful, I don’t think I’d want to eat it! I would though obviously! 😛
I had a beautiful brekkie too- another pizzert! I may be slightly obsessed…! 😀
Love the new caption! So true!

  12. I like your new header!

And yes, I love parfaits as long as there’s not yogurt involved, lol! Maybe tofu “yogurt”, but that’s all. :-)

    1. Yay, I’m not the only yogurt-hater! (Well, obviously I don’t like the dairy stuff, but I’m not even big on the soy version. Oh well.)

  13. Your pics are gorgeous and I LOVE LOVE LOVE poms!

  14. Aaaaaah that parfait looks INCREDIBLE. seriously. Ive never had a parfait either, but after seeing this I think that’s gonna change real soon haha.

I like this caption a lot better as well, we don’t want others to have one more reason to see veganism as something strange ;).

    1. You’re right! I really wasn’t doing the movement any favors by perpetuating the strange stereotype!

  15. I’ve made some oatmeal parfaits before, and they are amazing! My very first parfait was from McDonald’s. Ewwww….. I know! But my grandma said they were the best, and so she got one for me and my brother. Haha – I love my grandma! :) (By the way, it was better than I thought it would be, but the oatmeal ones are definitely a lot better – of course, oatmeal makes everything better 😉 )

I definitely need to try you parfait – it looks soooooo good!

  16. Love the fake flowers! Hehe :)

  17. Molly says:

I live your new blog header! Made me giggle :) do you mind me asking what application you use to create a blo header? Thanks girl!

    1. I use photoshop :). Seriously, it is SUCH a good investment.

  18. I love parfaits!! Sometimes I put them in these HUGE wine glasses I have. They look so pretty AND they’re tasty :)

  19. christina says:

I think the new header is fantastic! “strange diet” makes it sound like being vegan is some kind of defect…so I like this much better :)

  20. I can’t hear the word parfait without the entire Donkey monologue about parfaits from Shrek going through my head … I don’t know that I’ve ever had a parfait before either, but that one looks delicious. I might have to defrost some pumpkin puree and try it out!

    1. Hahahahahahaha oh my gosh. Onions have layers… :)

  21. Alyssa says:

That parfait MIGHT be too pretty for me to even eat :)

  22. Hey Katie,

I am back to work today and let me tell ya it was hard after my week long vacay. I didn’t want to get out of bed and deal with the stresses of work but here I am :)

I like the new header and agree with the strange diet – it is not strange at all! :)

  23. Rach says:

That parfait is something beautiful. I’ve definitely had a couple of parfaits before… though never when dining out. I have to really watch my sugar intake and usually when you order a parfait from a restaurant it’s mostly sugar.

And the single lady muffins… um, delightful. I just checked that out and I love the idea. I’m so excited to try it! :)

  24. Lindsey says:

That pumpkin pie mousse looks delicious, and so does the single lady muffin! I really like parfaits but I don’t eat them too often anymore. When I was on a meal plan during undergrad, this one dining hall made the BEST parfaits in their grab-n-go section :)

  25. Camille says:

    That is a gorgeous parfait!
I will be sending off your movie tomorrow. I promise! :)

    1. Aww you are entirely too sweet to me!

  26. Albizia says:

For me “strange” never referred to veganism. I would rather say it was about chocolate-covered everything and not very common food combinations (which I love, by the way 😉 ). But the new caption is cute, too.

As I’m talking about strange food combinations, I must thank you for the pom and pb sandwiches. I’d never come up with the idea of eating them together but the combo was great. Thanks :) .

The parfait looks splendid. Even if I have tried parfait, I don’t remember it. But I bet it tastes goood.

    1. Ahh yay! So glad you tried it. And now you’ve reminded me to have one again :).

  27. Maryann says:

I love “Where healthy tastes naughty”! so cute :)

I have never made a parfait but I have had one of those fruit and yogurt ones from Mcdonalds several years ago. None lately though! Yours looks amazing!

  28. Valerie says:

I would like to try it – I hope I win!

  29. That’s really beautiful! I love the pomegranate seeds on top. it’s so festive!

here’s the link to my facebook:

  30. I love the way parfaits look [when other people do them; i make them look like a mixture]! requirement: parfait spoons!

  31. Katie says:

The new header looks fantastic! And so does that parfait..yum, yum.

  32. Stefanie says:

I bet the pumpkin mousse would be really good in an oatmeal parfait. The header sounds a little more interesting to those not familiar with the vegan diet/lifestyle. It seems like it would make them want to try it out.

  33. I love the pictures lately…the photo quality and the photographic styling just seem soooo pretty lately! Years of blogging and pic taking is paying off b/c your shots are even prettier than before :)

Your header…has to be what YOU want it to be. I played around with mine about 6-8 mos ago and I *think* I like it…but life is an evolution…so headers probably are too :)

Great parfait, great S. Lady CCake!

  34. Kiki says:

LOVE parfaits. I like making apple pie ones with vanilla coconut milk yogurt, chunky applesauce, and crushed graham crackers.

    1. Meredith says:

      Oh yummy! That sounds delish!

  35. Kristie says:

I think the new slogan is super cute but then again, I’d likely think anything you came up with would be super cute, you obviously just have a knack for that kinda thing!

I’ve made my own parfaits before but they’ve got nothing on yours. My parfaiting skills need some work haha. I need to try those single lady muffins too, I have the recipe right on my desktop just waiting to be made!

    1. Oh Kristie, I love how you made up a new word: parfaiting! :) You’re adorable!

  36. Disturbed says:

Gah, I wish I had the availability to make these things. That looks amazing. O well, I am back at school and thus in a dorm. School starts tomorrow.

  37. I’ve never had one either!! That will clearly have to change judging by those photos though :)

  38. Ashley says:

I have GOT to try a single lady muffin! I have never had a parfait..oh the shame..I must get on that soon!

  39. Rachael says:

When I was a kid, I lived for KFC nights – to heck with the chicken, it was all about the individual sized chocolate parfaits for me!

    1. Woah, how did I never know about those???

  40. Sarah says:

I think your caption should read, “Where Vegan meets Vixen!” :)

  41. Marina says:

What a gorgeous parfait! I’m definitely going to eat more vegan this year (already vegetarian).

  42. Meredith says:

Those photos are so pretty! Oh and I love the new caption too. Cute cute cute :).

  43. Namaste Gurl says:

How creative of you to layer with pumpkin, vegan whipped cream, and pom seeds! My motto is you can layer whatever you want in a parfait! I layered pumpkin, , a whole- made cranberry muffin and almond butter the other day! Yummyyyy. :-)
Sadly, however, I recently broke my only parfait glass– hello, Target!

  44. BroccoliHut says:

Have I ever had a parfait? Ha! They are pretty much another food group for me.

    1. Oh yeah, how could I forget? Girl, you are like the QUEEN of parfaits!

  45. Ann Claire says:

Yum! That is a very photogenic parfait! I do have parfaits on occasion, they are pretty much the only way I like yogurt actually. Happy New Year Katie!

  46. Ann Claire says:

Oh and I LOVE the new caption!

  47. OMnomnomnom!!! Nomnom…nom. 😛 That’s beautiful, Katie! And I’m sure just as tasty. :)

  48. Anonymous says:

I love the single-lady cupcakes…especially the name. You are now my favorite website.

    1. Wow, thank you so much. *HUGE smile* (Really, thank you!)

  49. Natalie S. says:

Mmmm that parfait looks good. I’ve been looking for a way to use my stockpiles of pumpkin!!

  50. gastón says:

Love the idea! Do you think I could replace canned pumpkin with a real one? Cause I don’t thin they sell that where I live :S If so, how much do oyu think it’d be?

    1. Sure! I’ve done it with kabocha (a type of pumpkin) before :). It’s still the same amount as if you’d use canned.

  51. Megan says:

That looks so good! i’m glad I found your blog :)

    1. Aw, I’m glad you found me too! Happy Tuesday, Megan :).

  52. Rachel says:

    Hey Katie!
Just wondering if you were still planning on doing that “grocery shopping list” post? I know you have a ton of stuff to cover! But when you get a chance, it would be so great- so many times I have gone to make a yummy-looking Katie recipe but didn’t have a crucial ingredient stocked. I’d love to know what you keep “permanently stocked”- like a list of what’s in your pantry and fridge and freezer and what stuff you buy weekly (or even more often?). It would be so inspirational and handy!

    1. Hi Rachel!
I definitely haven’t forgotten about it. I thought (and still think) your idea is super-fun, and it’s on my “blog post to-do list.” Unfortunately, that list also has about 50 other posts I want to write (or am in the process of writing). But I WILL get it up someday. In fact, I’ve already started working on it :).

      1. Rachel says:

awesome… there’s no rush! I’m just psyched it’s on your list.

  53. Your parfait is so pretty! How could anyone resist! I’ll definitely have to try this one out.

  54. Serena says:

I really prefer the new caption :) the mousse + muffin combo looks amazing. need to get my hands on some pumpkin puree asap!

  55. Maria says:

Looks really good :) I can’t believe you’ve never had a parfait before.. they’re so good, welcome to the club haha xxx

  56. Claire says:

Ohhh pretty parfait, what a good idea for the vegan cream. I love the new tagline – not that I thought you were refering to being vegan as strange, more a reference to the chocolate … and your nack of finding new uses for ingredients but mainly the chocolate. Actually, now that I think about it chocolate everyday isn’t exactly strange at all!

  57. I’m a pretty big fan of granola parfaits. You can’t go wrong with those.

  58. Lina says:

I love parfaits! I have tons of food allergies so I have to replace one meal a day with a protein shake. When I have extra time I turn them into awesome layered “parfaits”. I make a Tapioca Chia seed pudding with almond milk, chia and vanilla stevia then I layer it with my “Chocolated covered strawberry Mousse” which is my chocolate protein powder blended in the bullet or vitamix with frozen strawberries, avocado, almond milk, cacao powder and chocolate stevia. It is the most delicious thing ever! BTW love your recipes, the other day I made a single lady pumpkin muffin to crumble into my shake!

    1. Oh wow, Lina, your mousse sounds divine!
And thanks for the sweet comment :).
P.S. I like your tagline addition. I might have to change my header again. Stay tuned lol.

  59. Lina says:

Ps love the new tag line maybe adding the word “just” will make it sound more complete like “Where healthy just tastes naughty”

  60. yum this looks good. I like your blob header

  61. Cassandra says:

That pumpkin pie parfait looks great.

  62. Juliet says:

I would LOVE to find a few recipes with fresh pumpkin (like how we use squash) that is not in a dessert or sweet format. We are a GFCF home and not real big on soy. Please share:)

  63. Arjan Khalsa says:

    Dear Katie,

I love, love, love your blog (so does my family and their friends). I am so looking forward to when you are able to put a cookbook out! I hope this is in the works. I probably look for recipes daily to make quick desserts. When the internet is slow or dysfunctional, we aren’t able to connect to make some fun treats. Your cookbook will help solve that problem :) Let me know if you need support at all on this… I’ll help you.
Lots of blessings to you and thank you so much for sharing with all of us. It’s making gluten-free and dairy free and sugar free living so much more enjoyable. I tell all of my patients about your blog and encourage them to try it out.
