Homemade Coconut Butter! The post I should’ve written a long time ago!

Yesterday afternoon, I made a Single Lady Cupcake.

Not just any single lady cupcake. This one is covered with homemade coconut butter (and cacao nibs). Every time I post a recipe using coconut butter, bunches of coconuts people leave comments lamenting the lack of coconut butter in their areas (or lack of $, for coconut butter, in their wallets).  Never fear; a remedy exists!

You can make your own homemade coconut butter to use any way you’d use Artisana Coconut Butter.

Just throw the shredded coconut into a blender or food processor and blend the heck out of it! Within minutes, you should have smooth and buttery homemade coconut butter! It could not be easier!

Depending on your climate and the fat content of the coconut you use, you may need to add a little virgin coconut oil to the blender as you work. If your homemade coconut butter looks dry, pour in some coconut oil–about a tbsp at a time–and it should be smooth sailing from there. Pun intended!

  • Shredded, unsweetened coconut (full-fat)
  • Oh wait, there aren't any other ingredients!

Instructions

Homemade Coconut Butter: I took a bag of shredded coconut (Let’s Do Organic brand) and simply blended it in my Vita-Mix for about 3-5 minutes. (Note: If you use a food processor, blend for 10-ish minutes.) That’s all there is to it! Chocoholics can also make Homemade Chocolate Coconut Butter.

Side note: Depending on where you live–and the temperature/altitude–you might have trouble with this recipe. It works perfectly for me, and many of the commenters have also reported being wildly successful, but coconut butter reacts oddly in different climates. A few people have left comments saying they’ve encountered trouble – If it refuses to turn to butter for you, add some virgin coconut oil to the blender… usually that fixes things right up!

People live and consume coconut in so many forms – only now getting recently introduced in the US as a gourmet food! With Amazon worldwide, the sources for blenders and coconut are one too many. Cupcakes are also staple in most countries with the same icing deliciousness for the past 80 years thanks to the British and French colonial influence all over the globe. We are in a small world in a coco-nut shell now 🙂

      I Just tried to make it on my bullet, but it toke too long, between scraping, closing back together, shaking and it never got the texture of butter. Very annoying!!! It’s a shame!

        I found that if I had my food processor tipped on an angle (with books or something underneath one end) that I wouldn’t have to keep shaking it because the coconut would just naturally back into the blades…and the coconut that gathers on the other side would build up and then get pushed to the center….hope this helps!

          Just made this using my new Cuisinart; I left it upright and only had to scrape down with a wooden spatula three times. As soon as it gets to the smooth consistency I didn’t have to scrape anymore. It was a bit runny before I stopped and pour/scraped it into a jar.I don’t know if it’s right or not, I expected it to be more oily like my coconut oil in solid form but it’s somehow a smooth but dry butter. That can pour…
          Took about ten minutes total, including when I turned it off to scrape, and test toward the end.
          So…now what do I do with it….Anyone know how long it will keep? I like it but want to use it to make something. I don’t like it enough to eat it with a spoon. I can’t seem to remember which recipe I saw called for this, I was just so excited to make it. hmph.

            Hi Lenore,
            I like to substitute all kinds of sweet recipes that request vegetable oil or butter by replacing it with the coconut butter. I like cakes, pancakes, brownies even crepes. I want to try making coconut rice and use the coconut butter instead of oil. You can also enhance the taste of rice pudding by adding a spoon of coconut butter, and part milk and part coconut milk to the rice.
            There is this delicious Brazilian recipe called Bobó de camarão, it’s like shrimp stew, but I don’t have the dendê oil to make it, I wonder if it would be good if I just use the coconut butter instead. This dish is made with veggies, shrimp and coconut milk, and it’s very deliciously saucy.

    Hey Katie! I have a Vita now and can’t wait to make this again, but when I tried making it in my food processer (ages ago) it took at least 30-40 minutes! Not sure if that would be the case for ALL food processors of course.

        Oh my gosh, you’re too sweet to want to share on fb! That would’ve made my day! Annoyingly, I think it’s a networkblogs problem, because I just tried it and it didn’t work. So I tried to share someone else’s post, and it still gave me an error msg. Grrr.

        As for the butter, I guess it depends on the strength of the food processor. Also, I’ve heard that using MORE coconut (i.e. a bigger amount) yields smoother results. Mine was pretty creamy, but I used the whole bag.

    I’m subscribed via email – and I wanted to add, mixing peanut butter with coconut butter is AMAZING. I usually use 3/4 cup coconut butter (melted) and add 1/4 to 1/3 cup peanut butter. The peanut taste is strong but doesn’t overpower the delicious coconut.

    & i made some homemade coconut butter last night, but it’s super crumbly & when i tried to put a bit on oatmeal, it didn’t get melty at all. is that normal? do you have to heat it up in the microwave for awhile first? (it was softer when i finished blending it in my vitamix– the heat, i’d guess)

    Heey!
    I made coconut butter last week with my foodprocessor. I used the cheap coconut, shredded and dried. I turned out very smooth but it didn’t taste so good because I don’t think it was a good quality. SO, I bought some brown coconuts and shredded the whole thing myself. I tried to make some butter but I NEVER BECOME SMOOTH. What is wrong here? Do you think I have to dry the coconut i the dehydrator or something? too bad. 🙁

    I tried this in my Vita-Mix with a bag of unsweetened coconut and it didn’t come out creamy at all. I don’t know what I did wrong, but I’m a new Vita-Mix owner, so maybe I wasn’t using the right speeds. Silly me did not at first get the difference between coconut butter and coconut oil, and I used coconut oil in your fudge recipe, but it still came out very good! I don’t know how you are so creative, but I love your blog!

    Thanks so much for sharing that you made this using your VITAMIX! I saw that HEAB uses a food processor and thought maybe there was a reason she did it this way instead of using her VITAMIX… I don’t think it took five minutes. I think I put 3 cups or so of coconut just to be sure there would be enough volume once it started turning into ‘butter’. Worked perfectly 🙂 Thanks for sharing. Love your site!!

    ok this is really frustrating.. the coconut was in the blender on high for 20 minutes.. i tried stirring a few times.. nothing.. so i transferred it to the food processor.. now 10 minutes later still nothing.. the flakes arent even smaller.. ugh.. just how powerful must a device be to tackle shredded coconut??

        i dont think its the cold because i tried heating it up and trying again..
        i eventually got it into mush.. but its super gritty.. im thinking i need a better blender.. and a better food processor.. i even got desperate and tried the stick blender.. and it took a grand total of 5 hours to make it into gritty mush.. but it was sort of worth it for dads reaction.. i mixed some of it with cocoa and warmed it up..
        me: “dad do you wanna be the first one to try it?”
        dad: “NO!…
        me: *the look*
        dad: “oh all right”
        me: “well how is it?”…
        dad: *walks away with the bowl*
        me: “HEY! let me try it!.. oh hey that is a good flavor, but the texture is all wrong”
        dad: “no this is what i want” *walks off with bowl*
        yeah he stole my coconut cocoa mush… it was almost funny enough to make up for a solid 5 hours of frustration

    I tried to make coconut butter in my food processor. It’s a Quisinart so it’s a pretty good brand. I had mine running for 45 minutes and never got the coconut butter. It burned up a piece of my food processor from running so long. Live and Learn.

      Boo :(. I just don’t understand… I want it to work for everyone like it does for me. I think Heather (heathereatsalmondbutter.com) has a cuisinart and has had success, so the only thing I can think of is that maybe the super-cold temperatures are having an effect? ‘Cause I’ve gotten a few comments from people who’ve had problems, but Heather–who posted last March–only seems to have success stories in her comments. I wish everyone could have success with this!
      Oh, also, what kind of coconut did you use? Apparently, it can make a difference. I’ve had success with the “Let’s Do Organic” brand.

    I bought mine at sprouts. I think it may have something to do with the freshness, maybe it’s moister and works better if its fresh. I don’t have a Whole Foods close by, so I can’t get my hands on the coconut butter, but I’m dying to try it. It’s all good. The stuff that came out of my Cuisinart tasted good, it was just not butter.

    I did not pick up the reduced fat one, but I found the Lets Do Organic brand at sprouts. Did you use the big shreds or the small ones? I used the small shreds. I will try it again with the Lets Do Organic Brand and let you know how it works out. Thanks so much for your responses.

    When you used the Vitamix, did you used the whole bag of coconut? Did you put it on High and use the wet container? I used the whole bag and tampered but after five minutes (on variable 5/6/7ish), it was just more shredded. Heather @ Heather Eats Almond Butter sent me your link (you both are fab, by the way) and told me not to be scared to put My precious Vitamix on high (she’s new and we’re still in our honeymoon, “just getting to know you” phase so I’m being gentle) but nothing really happened and it seemed to just whirr everything up the sides and underneath the blade so no butter. Sorry for the run on but had dreams about the butter and just have to have it!

      Yes, definitely use the whole bag of coconut! If you don’t, it has a harder time making butter. And I did turn my blender on high. I got butter in just a few minutes. LOL about your honeymoon… I’ve had my vita for like three years and my poor mom is STILL scared to put the thing on high!

    Did you take dried or fresh coconut for this? I tried dried coconut flakes and it became hard instead of creamy

      Hey Lily, is it cold where you are? Coconut solidifies at room temp, but it can be warmed up in the microwave or in a warm oven (Just be sure to turn the oven off prior to putting the coconut butter in; you don’t want it to burn lol).

    Ok, your use of coconut butter in a few of your recipes just made me have to finally try making it on my own! I have a little blender, so I figured I’d attempt it (it doesn’t normally like making anything other than smoothies, which works for me haha).

    WELL, it did work! I got some sitting on the counter now! Woohoo! But I do have ONE question…have you ever experienced it smoking/steaming (the coconut in the blender that is)? I didn’t let it sit on for more than a few seconds at a time as I didn’t want it to overheat, but the last push when it was actually turning into the butter, I let it go a little longer (maybe 20 seconds?) and when I opened the top, all this white steam came out haha. I’ve never made any homemade butters before, I thought I read somewhere that some nut butters can steam from the heat of the whole process, so I was just making sure it was something that COULD happen and not just the rubber in my blender burning or something, which would totally be my luck! haha

    Nevertheless…I cannot wait to dig in! Thank you again!

      Hey Alison! I’m so glad it worked for you! This just further proves my suspicion that it works better in warmer weather… a lot of people seemed to have trouble making coconut butter in the winter months (and more than one person told me her blender started steaming up). But lately, all I’ve gotten are success-story comments. 🙂
      Personally, I’ve not had the steaming problem, but (as I said), others have. So you’re not alone! As long as it tastes good (and your blender isn’t broken!), I think you should be ok :).

        Aha that makes me feel better! I’m TOTALLY going to be making a single lady cookie again (with allspice) and frosting it with the coconut butter! I CAN’T WAIT! Haha!

        And yes I’m in the UK at the moment and it’s been warm the past few days (even warmer in my kitchen) so I wouldn’t be surprised if the warmer temps helped the whole process out. I suppose it’s good I can’t find coconut butter over here so I’m forced to make my own, because if I were back home, I’d probably just grab the Artisana! Mmm, someday!

      Hey Alex,
      Coconut butter has more of a consistency like peanut butter (when it’s warm). And you use it like pb too. Coconut oil is liquid at room temperature. (Both are solid when cold. Don’t store coconut butter in the fridge.)

        Ugh I had to use water! My food processor wouldn’t make it any smoother past a fine grain coconut ( there was a little paste) so i added water and it’s still not as smooth and airy as yours! Boo. I think I wasn’t patient enough. Now I’m stuck with thick coconut butter.

    Hey Katie, I’ve been blending away like crazy and I still have powdery coconut. It’s very warm were I live, so I don’t think the weather is causing any issues. I used the Let’s Do Organic brand, but I bought the reduced fat. Do I need to buy the full-fat version to make this?

    My roommate and I (we’re in college) have been experimenting a lot with coconut butter, oil, and other things and we made our own “treats” (what we call them) using cashews, coco butter, and honey. We discovered that a 50/50 blend of cocobutter (homemade or Artisana, doesn’t matter) and raw organic honey from our co-op tastes a lot like “healthy” cheesecake, and I’ve been trying to capitalize and perfect this and put it into a raw, organic treat on a crust of crushed cashews and honey, and it’s delicious. Have you found any other things that go particularly well with coco butter? I’m always looking for new flavors to play with…also I recommend you try mixing the coco butter with honey for something that’s CRAZY good!

    Also, I want to share with you my recipe for macaroons!
    Preheat oven to 350 degrees F
    Whip two egg whites into a frothy paste, add 1/8 cup sugar, 1/8 cup raw honey, and 1/3 cup dried unsweetened coconut shreds…
    tablespoon it onto a parchment-covered cookie sheet and bake for 20 minutes until golden brown
    let cool and drizzle with melted dark chocolate

    i only used a little bit because i wanted like a single serving type thing but my mom got mad at me about the blender and nothing happened? 🙁 … is it just because i didnt use the whole amount cuz i dont want to try again if theres no chance itll work for me :/ …. and also if it does work can i use the butter instead of the oil in ur recipes?

    I’ve read your blog for a while now, but have never actually tried any of the recipes besides some of the oatmeals, which are delish! I just had my third baby and he is a sensitive little dude… so I’ve cut dairy and (SADLY) chocolate out of my diet. So I’m back to the internet to find tasty dairy free recipes. That’s where you come in! I want to make that coconut butter… Like whoa. I have a vitamix, but I only have the wet contatiner, not the dry one. If I try and blend the coconut in the wet one will it ruin it? Also… can I make the homemade larabars and babies in it? I obviously don’t know what I am doing! 🙂

      Sorry, I don’t really know anything about a Vitamix wet container. I have a very old model and it only came with one container. But I AM pretty sure you can make the fudge babies/larabars in it! I make them in my Magic Bullet, which isn’t very powerful at all, and it works fine! 🙂 🙂

    Mmm…this sounds interesting! I’ve recently been reading about Coconut Butter…sounds like there’s so much you can do with it! I never tire of learning more about it’s uses!

    Looking for advice Katie! I don’t own a food processor and would like to buy one but not crazy expensive or something to wild I won’t use all of (attachments etc). I’m looking to use it for making things such as Pita Bread, Pesto, Chopping Veggies/Shredding etc. I think the Vita Mix (ha! Why do I always think of LUCY when I hear that term) might be a bit out of my price range at the moment. BUT if it’s the best way to go I can see what I can do. What I’m looking to do is not own 10 different pieces of equipment that all do one or two things when I can instead have one piece of kitchen equipment that does it all! HELP PLEASE. ;o) xo Beth

      Honestly, I think a Cuisinart food processor is more versatile than a Vita or other blender. That’d be my recommendation! I am currently using my mom’s old Cuisinart… it’s at least 7 years old, but it still works perfectly!

    Ok, this was my grand plan.. it seemed so clever when I thought of it. I was at the grocery store and I saw a coconut. I thought, “Hey, I am going to make coco butter!” I bought the biggest coconut and headed home. I went through this long process of breaking the coco open, draining the milk, scraping out the meat, chopping the meat in my blender, toasting it in the oven and then put the toasted meat in the blender. The problem came up every time I hit the puree button. The meat would get slung to the sides of the blender thus causing me to have to stop the blender every ten seconds to scrape the sides. anyways, EPIC FAIL. So, in making this stuff, do I have to have an awesome blender (like a vitamix) to succeed in this process??

    I finally figured out why this wouldn’t work for me the first time. I was using Let’s Do Organic unsweetened coconut, but it was the reduced fat version, and I never realized it! Anyway, I picked up a bag of the full fat stuff, and I just made this in my 62F house with great success! So, the cold did not affect this recipe for me. I’m so excited to make some of your recipes using coconut butter now!

    I put about 3/4 cup of shredded coconut in my blender and gradually spun it up to Liquify setting and had it on for over five minutes and all I ended up with was very finely shredded coconut. It did not become ‘butter’ consistency, so I ran the blender several more minutes, but there was no change. Since I already have coconut oil in congealed form (like the consistency of lard), I added a rounded tsp. of it to the coconut and blended it for a few minutes. The mixture wasn’t appreciably different from before I added it. (The congealed coconut oil becomes liquified when heated.) So, the final outcome is that I still don’t have ‘coconut butter,’ and don’t know why it didn’t come out as you described. Can you give more information on making one’s own ‘coconut butter?’ I would like to make it at home, but something’s missing for me, since it just didn’t come out as expected.

    Hi Katie! I have a question for you. I live in Ireland, and the standard shredded coconut here is dessicated coconut… which is very very dry. I have used American shredded coconut while in the States, and I noticed that it tends to be very moist compared to anything I can find here… I was wondering if that was the case with the coconut you use? If so, I’m thinking it may be necessary to soak my coconut in water to rehydrate it before trying this recipe out. Thanks!

    Is it possible to make with fresh coconut? I live in the Philippines and can go the market and they will “grate” a coconut for me with fresh shreds (sort of) coconut. Maybe I’ll just try it and let you know. 🙂 If not, this might not work for me. The only coconut other than fresh that I get is dessicated which I don’t think would work. But again….maybe. 🙂

    Okay, so I made this in my Ninja blender. Took a LONG time! And lot’s of pushing it back down. My roommate was concerned by the noise and asked if the blender was getting ready for take off!! So, it’s done and I put it into a tupperware container with a lid. I came back the next day and the stuff was HARD. Is it supposed to be creamy like peanut butter? Or is it like coconut oil which is solid until you heat it up? I’m not too sure how to go about using it as it is all a solid square block inside my container. Perhaps use a spoon or knife to saw off a portion and soften it in the microwave? Or throw the whole container in there? I want to make the sugar free chocolate fudge or your fudge cake. Thoughts? First off, is my consistancy correct? I used organic unsweetened dried shredded coconut. Hmm….

      Depending on your air temperature, coconut butter can be solid just like coconut oil. I’d recommend putting it in a warm oven (i.e. heat the oven, then turn off, then stick the coconut butter in there for a few minutes). If you microwave, it’ll just burn.

    i just made this! we’re on a tight budget and can’t get real coconut butter. i want to make more CCK recipes and many of them call for it. i put the shredded coconut in my food processor and blended it for about 5 minutes. i had to add about 1/4 cup coconut milk and then blended it for 5 more minutes, occasionally opening the food processor to scrape the coconut shreds down toward the blades.

    this really worked! it was actually buttery! i’m so excited to have this new ingredient at such a low cost!

    I love your recipes and I have marked heaps of them to try.
    I tried the homemade coconut butter.. But all I got was very fine coconut powder, and a very hot processor.
    The coconut I am using is dessicated (Finely chopped and dried). It is all I could find other than buying an actual coconut. 🙂
    Is this what you are using? Or do you get a fresher shredded coconut product

(I live in the Philippines and have coconuts in my backyard and still won’t be able to have coconut butter.) Ironic isn’t it.

        Thanks Marla, I live in Qland Australia, and coconuts are easy to get here as well, It seems that the coconut in USA is a lot moister than we get.
        I tried adding some coconut oil and that took the powder to a paste, but not what creamy like I expected to get.
        I have never seen the Artisan Coconut butter here in Australia.

    I tried making the coconut butter twice. The first time I used a food processor and the second time I used a blender. Both times, it took forever. I did a little research and discovered that other people had the same problem making coconut and other nut butters. The solution was to add a small amount of oil. Maybe my machines are not powerful enough on their own; maybe my coconut is extra dry; or maybe both. I do know that once I added a small amount of coconut oil, it blended up much better.

    I FINALLY got this right! lol. I have tried making my own coconut butter several times now and all failed. I finally got it to work (for me) by using a larger qty of coconut (2 cups or more) with a higher quality food processer and lots of patience and scraping. I really had to baby it scraping the processer down every 2 minutes. It took me 15 minutes. BUT it WORKED =) Happy buttering to all

    Blend the coconut in your vita-mix… if it does not have the “buttery” texture yet, give it in a pot and warm the coconut butter up. The oil will emerge from the rather powdery coconut and within 15 to 20 minutes, you should have a creamy coconut butter!

I never had it before, so I don’t know what the consistency should be like. I just made it now, for the first time, and I love it! I was expecting it to be a bit creamier, as that’s the way it looks in photos. I used my vitamix, and ran it until it was fairly smooth, but not like “fluff” or butter would be.     Hi! I just tried making this coconut butter and had a really hard time. I tried it in my blender first being as though I don’t have a vitamix. It wasn’t working. Next I tried the food processor. It wasn’t getting to a buttery texture. It was still a floury crumbling texture. I gave up. I tried adding a little coconut oil and coconut milk and it didn’t make it more like a liquid. Any thoughts??

    I made this to use in the Raspberry Fudge Cake recipe. I live in Southern California, and used a Cuisinart food processor… it made the butter in no time. I had to scrape the sides about 4 times, but it all came together. I think my climate must be similar to Katie’s, because I had no problems. A whole package of the unsweetened “Let’s Do Organic” made about 3/4 cup of coconut butter. I will be making this a whole lot!!!

    First time trying this. I used two 8oz bags of medium shred Organic coconut that I purchased online. I used our 11 cup size Cuisinart. I started with one 8oz bag of the coconut and when it started to clump I added the second bag. When I noticed the base of the Cuisinart getting warm (before this process was complete), I shut it off for about 5 minutes and came back to it. I did this twice and I think it took 3-4 minutes of total running to make the butter. We don’t have refrigerated air in our house, just fans. Here it is 9:am, 75°, and just barely out of August in San Diego. So the temps are running at 75°- 80° on the coast with 90%+ humidity. Cuisinarts do heat up after 3 or 4 minutes (in my experience making hummus).
    I just went back to check on my newly made Coconut Butter and it’s turned somewhat soupy in it’s container, but still thick and still delicious! The soupy-ness is not because of the recipe, or the brand of the product, it’s the nature of beast in this heat. Coconut oil does the same thing (the melting point is around 76°F), and a warm food processor is only going to contribute to the heat factor. I do have a Vitamix and will try that next time. Probably when the weather cools down! I just could not wait another month to try this! I wish I could refrigerate this stuff but I know it will just turn into a solid. Katie, do you know how long his will last sitting on the counter/pantry? Provided it doesn’t disappear in a couple of days!
    I want to mention this about Coconut Oil (and shredded coconut does contain coconut oil). I use an organic coconut oil mixed with two other ingredients to make deodorant (cornstarch and baking soda). Works quite well. But it didn’t at first. I got rashes from it. I thought it was the baking soda at first, so I adjust the amount, but it wasn’t the only contributing factor to my rash. Coconut oil (not the kind processed with high heat) contains some wonderful properties: antimicrobial, antifungal, antioxidant,and antiviral. When heated in a microwave, all those good properties are completely destroyed. I was killing off all the good stuff heating it in the microwave. Now I just set my jar of coconut oil in a bowl of warm water (no warmer than your hand can stand it), for a few minutes and that works fine. Patience is a virtue in this case (not opting for the convenience of the microwave) to preserve the benefits of this stuff. That’s my rule: never, ever heat coconut oil in the microwave.

I kept it at a low setting and spooned it every minute or so, but it’s still coconut flakey after like 20 minutes. Any tips? I tried adding a tiny bit of water and coconut oil.

    I make my coconut butter with fresh coconuts and it’s perfect every single time. I dry the coconut in my oven and churn it in my ninja. It’s really easy to do and so good. I think people that have trouble with making it are using the wrong type of coconut shreds. Most coconut flakes have had all the oils and most of the flavor removed… all that’s left is the dry fiber. It will never turn to butter without the oils. Hope this helps. 🙂

    Before I washed my Cuisinart bowl, I scraped the remnants out and rubbed on my hands. It was a bit gritty and sloughy so I rubbed on neck and face and let sit a few minutes. When I rinsed it with warm water I found my skin as smooth as a baby. Don’t let any go to waste, this makes a fantastic facial!!

      For me, 3 cups coconut plus two spoons coconut oil (i had to add this bc of my coconut being too dry) yielded one cup butter (two 4oz jars)

    HELP HELP the Vitamix is SMOOOOOOOOOKING!
    So I’m trying (now) 2 make this coconut butter but I’m not sure at which setting 2 do it at so I chose LOW and finally went up 2 “10” but all that’s happening is it’s smoking & getting really hot. And has lost the orginal shape but is like granuels not buttah, Whaaa Happa???

    I tried this with FRESH coconut, but its soft and somewhat smooth, but not creamy or meltable, I used my vitamix, it was steaming hot, I even added coconut oil, but then it was oily and not creamy, HELP>

      I just post how to make it works: it’s necessary to dry the meat before. I put it in the oven until golden, but next time I’ll use the dehydrator to keep it raw. However, i really liked the roasted taste from the oven! Good luck!

    I tried the recipe using whole coconut and it works! 0nce opened, I removed the hard brow skin next to the flesh, then I shredded the coconut meat in an blender. Then, you need to dry the meat in the oven (or dehydrate it) to remove moisture. Next step is the vitamix. Within 3 minutes of blending, it was all smooth!

    When I first saw this recipe I knew I wanted to try it – so I purchased bulk unsweetened, grated coconut when I visited my daughter in Austin – last July!!

    After I returned home, I forgot about the coconut until yesterday when I was looking over your delightful recipes again – and I thought, Oops!!! Maybe I’d better try that out now. It didn’t work. I was wondering, could the problem be that the coconut dried out? If coconut can dry out, then it might explain why others have had problems. It’s not the method, it’s the product. If it can’t dry out, then I don’t have a strong enough food processor or blender :(.

    I tried this with a fresh coconut since I couldn’t find unsweetened shreds at the store and it did NOT work–so just some advice to anyone thinking about starting with a freshy! There simply isn’t enough meat inside one coconut (or if there is, we don’t have the tool to get it all out.) Since the Blendtec blender blade sits up a bit above the bottom of the container, half the coconut would end up under the blade with the other half shooting up the walls. Next time, I will do this with bags of shreds as Katie suggests!!

      You have to do a lot to get the meat out. It isn’t that bad but it takes work. Plus, you have to basically make your own shredded coconut by drying it out in the oven. That is what I was told. I got organic and am going to do it. Do you add water to this to make it when you blend? Or did you?

    Hahaha!! Little did I know I have been making a rough equivalent of coconut butter all along. I love the flavor of coconut, but I am not a fan of the texture. I have been grinding up coconut in the food processor until it is finely chopped or almost a paste and putting it in recipes in place of shredded coconut or coconut flakes. That way I can still get the wonderful flavor. Now I know to just continue and I will have marvelous coconut butter. SWEET!! Thank you for the tutorial!! I am doing the happy dance, in case you haven’t noticed!

    I am so glad you have come up with some very easy and interesting ideas. I volunteer at our local Human Services Center (in the geriatrics unit where my husband is due to being aggressive) and I take in deserts of all kinds. Many of the patients just stop eating and so I try to keep them interested-as well as the wonderful staff. I have spine issues so baking for long times hurts my back. I will definitely pass along these recipes since they also make goodies there all the time and need easy to make items. Thanks for sharing. Judy

    Just made this and it turned out great! I used the ninja mega kitchen with the small bowl food processor attachment, filled it completely with unsweetened coconut and two spoonfuls of coconut oil (it would not smooth out otherwise – I think maybe the shredded coconut I bought may have lacked some fat). Blended for about 12 minutes and it came out smooth and so delicious. I’ve also made your chocolate butter recipe to frost a ww vegan carrot-zucchini chocolate cake, and it was perfect!

    I just found your site and love it.
    I’m hoping you can answer a couple of questions I have.
    How much does a bag of unsweetened coconut weigh? I got something called coconut powder (which isn’t a powder) at an Oriental store and it weighs 2 lbs, so I don’t know how much to put in the Vitamix.
    Also:
    If you make Almond milk from 1 cup of almonds, how many carbs are left in the pulp?

    Oh my, you weren’t kidding! You’ve totally made my night. I just spent nearly an hour at my local grocery store, wandering the aisles of the health food section (even when the attendant said they didn’t have Artisana) and finally settled for a packet of Justin’s Raw Nut Butter to fill my craving. Still not satisfied, I came home and found this. And it works! I use Bob Red Mill’s unsweetened shredded coconut in the Vita Mix and it tastes JUST like Artisana! Wow! Thank you!!

    Hi Katie !
    I just tried your coconut butter recipe for the first time and thank you! However it wasn’t as easy as it seemed! My hour long journey took me to some grainy places . I think you’re right about the climate, but perhaps also how the coconut shreds are stored. If they’re frozen I’m sure it wouldn’t work as well as those naturally dried. I was blending my heart out and all I was getting was really finely grained coconut. I didn’t have any coconut oil to help it along so I added my homemade ghee (clarified butter) and what a difference it made! I switched from my blender to a food processor and just kept going and scraping and stirring and blending until finally my food processor was making a weird noise and I knew my butter was ready!
    I just wanted to let you know for those who are having a hard time, persistence pays off.

    Re previous message. I can buy coconut butter from a supplier on the net (in Australia). So great. With coconut oil, when I was younger and not as knowledgable, a lot of Aussies used coconut oil to get a suntan (now we all avoid suntanning because of skin cancer). We used to buy it at the chemist.

    I’m curious to know if you or any of your users who have done this in a Vitamix have had the container heat up to REALLY hot? I see these blending times and I’m blown away. In just about 2 minutes the vessel was too hot to handle with bare hands so I turned it all off. The process was creating steam from the top of the vitamix and it wasn’t even on the highest (switch) setting. The dial was all the way up but the turbo switch was off.

    Do I just need to be brave and keep running the Vitamix? Or should I expect to have to do it in intervals and let it cool repeatedly?

    As a point of reference I was processing 250g of shredded (dried) coconut.

      OK so back to this… Now I’m pretty sure that even though the shredded coconut I bought (bulk) wasn’t labeled as such, it was sweetened. Which would lower the fat ratio. The fat being the necessary component to making a buttery consistency. So I went to the sore, bought 2 coconuts, cracked, scraped, shredded and dehydrated them. Perfect Vitamix butter in about 2 minutes.

      Next time I wont buy the coconut unless it’s specifically marked unsweetened.

    I have a question… It is my third time trying to make coconut butter and I end up giving up because it wont turn into butter. Do i have to put in my Vitamix only DRIED shredded coconut??? I think that my experiments are failing successfully due to the fact that my shredded coconut is not fully dried. I try just to dry it in my oven and I dont know what else I can do…

    P.S. I blended for about 1.5 minutes and the container was so hot..any risks??

      Yeah I’m sure it has to be dried. Coconut meat produces a lot of liquid. I make coconut milk in the Vitamix regularly and only have to add a little bit of water to get it to move around in the blender. How long did you dry for? In my Nesco Gardenmaster it took a full 6 hours. I cant imagine leaving an oven on for that long.

      The hot Vitamix scares me too but with dried unsweetened coconut it turned to butter before the vessel got hot. The metal plate gets hot but not the container.

        You are perfectly right! I dried them in oven at 50 Celcius for whole night and when i tried again Vitamix turned it into delicious butter in matter of 20 seconds at most :)… So DRIED coconut is a must..thanks again!

        P.S. Vitamix is a wonder!

    I tried this in my food processor and nothing happened. It just made the shredded coconut finer. Really disappointed as I love coconut and really wanted to try it. I processed it for 15 minutes and nothing.

    I’m in the process of making coconut butter. It’s not as thick as it seems in the photo above, in fact, it’s quite thin. I did have to add a little coconut oil to it in order to get the blender to move. Also, it’s still a bit grainy. Should I keep processing it? Will it work for the peppermint bark if I use it as thin as it is? Should I add more coconut? Should I leave it as is? Should I give up and toss the whole deal? Thanks! Oh, and I’m using a regular blender as I am without a Vitamix,:(

    Hi
    I just found your site and just finished making coconut butter. Had to figure out the best setting for my processor but once I did it was a breeze. Not as smooth as most would prob. like it but Hey, I like chunky peanut butter, too. BTW it isn’t chunky just not really smooth. I only used one 200g bag to try it out and actually wondering if two or three bages would work better.
    As for the consistency – in my kitchen coconut oil only liquifies in the summer, so the butter will be the same. Never melt the oil, just use it. Funny thought is that I am glad the oil jar is labeled 😉

    OMG! I just made the coconut butter. It’s absolutely amazing!! I hate the texture of coconut, but love the taste and this is perfect since the coconut flakes are pulverized.     When I make this in the food processor, I’ve noticed that the dryness of the coconut flakes affects whether or not it comes together into a butter. I had some older dryer unsweetened coconut flakes that wouldn’t come together into a butter. Newer unopened packages of coconut flakes with a lot of oil in them turn into a butter without any issues.

    I used my magic bullet took a lot of scraping and I always added a little bit of coconut to the mixture to blend thoroughly, instead of just chucking the whole lot in the magic bullet. It’s creamy like the photo, tastes good too.

    I made it yesterday and it worked after I added 2 tbsp of coconut oil. I do not own a vitamix but my food processer worked,too. Thanks for the recipe. I haven’t even heard of coconut butter before- probably because I live in germany. Germans do not care about healthy food as much as they should. I have also tried some other recipes you posted.     I tried this about 4 days ago in my Cuisinart food processor. I had my doubts with the finished product. Mine was nowhere near a “butter” state, but very creamy looking and smooth. It was also extremely warm from the processor running for so long. It’s been sitting on my countertop since with anyone coming into my kitchen asking “What is that?!?”. I just couldn’t justify throwing it away. I figured I’d find a use for coconut goo somehow. I’ve checked it everyday and now glad I didn’t just toss it. It got a little firmer along the edge by the second day. Third day more solid but liquidy in the middle. Low and behold my surprise when I opened the jar and realized my goo had solidified completely this morning after 4 days! It’s now spreadable and I am thrilled!! For the small price of my 8oz bag of coconut ,$2.36, I have half of a 12oz jar of coconut butter. Thanks for this idea! I never thought one could make it at home. A little patience and determination makes a huge difference!

    there’s a lot of fiber in that coconut meat, so my guess is it will always turn out a bit gritty. And that’s no matter how creamy it gets and looks. a vitamix is strong enough to drive a car so you can’t do more. if you extract the oil you are left with what’s called copra. many industrial fibrous uses there. big time in bygone days.

    I secretly hope that your recipes don’t taste a quarter as good as they look. I am getting over sugar addiction but I want to have no-sugar-added/fruit-sweetened desserts. Though, I’m a bit scared to use dates as a single date has 16g of sugar. Although it’s fruit, that’s still a load of sugar in a single date.

    Anyways, point is that all these recipes are still very calorie dense and I’ve been doing so well eating vegetables and I have difficulty refraining if I eat a snack/sweet. So, if they tasted still ideally like real food (i.e. like full-fat greek yogurt with fresh fruit – yummy but not addictive like junk food desserts) and not as sweet and delicious as they look – then I think I’d be safe.

      You can try with the food processor, and let us know how it works. As for coconut oil & coconut butter, you can google it to get more information, but the quick answer is that Coconut oil is the oil that’s been extracted from the coconut meat, while coconut butter is made from coconut flesh that’s been ground into a spreadable paste.

    Even though you have tons of comments, I am going to leave mine as well…. I found a partial bag of shredded coconut in the pantry and decided to try it. It looked dry, I put it in the food processor, but nothing was happening. Then threw it in teh small container/Twister Jar of my Blendec and within 90 seconds- it was liquid. It did harden up once cooled. Never bought the commercial stuff…but this is very delicious….

    You are correct, this is addictive! Mine has a slight golden tinge to it, not white like your photo. Could it be the brand I used? Bob’s Red Mill. And I think I processed a tad too long as it’s not as firm looking as yours. But, it is my first time (and won’t be the last) so I’m pleased.

      I would highly recommend getting a Cuisinart food processor if you can only get one thing. It can be used here, and it can also be used to make Katie’s recipes such as the unbaked brownies, black bean brownies, cookie dough dip, and others that she says to use a food processor instead of a blender for.
