Cookie Dough Baked Oatmeal

This cookie dough oatmeal is like eating a warm chocolate chip cookie, with gooey, melted chocolate in every delicious bite!

A variation of the popular Pumpkin Baked Oatmeal.

And now you’ll be wanting a recipe, yes?

Cookie Dough Baked Oatmeal

(Serves One!)

  • 1/2 cup rolled oats (50g)
  • 1/4 tsp pure vanilla extract
  • sweetener, such as 1 1/2 tbsp maple syrup or 1 to 1 1/2 packs stevia (I omitted, but I’ve cautioned you before about my lack of sweet tooth.)
  • 1/4 cup unsweetened applesauce (60g) (Or sub banana… it’s awesome this way!)
  • 1/4 cup milk of choice, creamer, juice, or water
  • 1/8 tsp salt
  • Handful of chocolate chips (and a few for the top, too!)
  • Optional: unless you like the taste of fat-free baking, add 1 tbsp oil, buttery spread, or nut butter (If oil, scale the milk back a little)
  • Optional: 1/4 to 1/2 tsp cinnamon (If you like cinnamon in chocolate chip cookies)

Preheat oven to 380 degrees. Combine dry ingredients, then mix in wet. Pour into a small baking pan, loaf pan, or 1-cup ramekin (or, for mini boats, two 1/2-cup ramekins). Cook for 20 minutes, or more until it’s firm. Finally, set your oven to “high broil” for 3-5 more minutes (or simply just bake longer, but broiling gives it a nice crust). Don’t forget to spray your ramekins first if you want your cakes to pop out.

If you’re like me and are not trying to lose weight, I definitely recommend including the optional nut butter or oil in the recipe for more calories, because this oatmeal cake really fills you up!

I tend to steer clear of cold cereal, because whenever I eat it for breakfast, I’m hungry an hour later! Same thing with waffles or pancakes. In the case of pancakes, I’ll often eat them for snack instead of as breakfast.

      ohmigosh ohligosh +1 to this! larabars are so tiny for so many calories. good for someone who is trying to gain weight and wants calorie dense food (i know you like them for that reason, katie!) but not so good for either people not trying to gain weight or maintain weight, and also unfortunately not so good for people like me who are freaked out about eating something so calorie dense. although you’ve helped me sooooo much with that too, katie!

      anyway, this oatmeal cake sounds like a dream come true. i am already in love with your pumpkin version. and maybe i’ll add some healthy fats on top, with a little coconut butter ;).

            anything too airy doesn’t fill me up. at school they sometimes serve these tiny cereal containers full of cheerios, that hold around 3/4 of a cup, so small. so i just bring in some polenta, quinoa, or oatmeal. Though I have to say i do like popcorn because you can eat an entire bowlful for about the same nutrition as any other hot cereal

    um if your trying to gain weight then why are you eating a breakfast that’s less than 200 calories for the whole thing?

      First: The “less than 200” calorie count is not including the optional nut butter. Please read the beginning of my post more carefully.
      Second: I never said that I ONLY eat the oatmeal cake for breakfast. I most definitely will have something alongside.

    Looking at his post (boy, it’s hard to keep up with posts while on vacation…. ): I kind of wish that the oat cake didn’t fill me up so that I would have room for a second one 😉 But the main point – This looks just waaaaaay too good, and I’m DEFINITELY making it when I get back home!!!! There’s just some things I can’t pass up, and, needless to say, this is one of them!! 😀
    Pretty much anything for breakfast (other than just fruit) fills me up for a little bit, but then I’m almost alway hungry a few hours later 🙂

    To make stay-with-you cereal, I always add a handful of slivered almonds or other nuts, a scoop of nut butter, berries or sliced banana, raisins or cranberries. Kashi cereals have a ton of fiber. Bulking up my cereal makes it just as filling as oatmeal.

    That looks delicious! I love how you make things in single-servings–it’s awesome and makes things so simple!
    Funny thing is that for me, what fills me for breakfast changes with annoying regularity. There are times when a bowl of oatmeal with maple syrup, some sliced almonds, and dried fruit will keep me full for 3-4 hours, and other times when it works for an hour, tops! Same with other past “winning” combos (yogurt and granola, English muffin with PB&J, etc.). So, I end up just rotating them frequently, and trying new things too. Maybe the oatmeal cake will be the magic solution!!

    Katie – THANK YOU for thinking of us calorie-watchers. I’m not a calorie-counter persay but I do have to watch what I eat, even though I eat healthy vegetarian (mostly vegan, and entirely vegan right now for Lent, actually!) foods. I know some people say if you eat healthy foods you’ll be skinny and it won’t matter what you eat but that certainly isn’t the case for me. I’m at a healthy weight but if I don’t watch it with the nut butters and coconut butter and portion sizes, watch out!! hehe. So thanks for considering us non-metabolically-blessed folks… I appreciate it!

    I love getting a lot of “bang for my buck” when it comes to my food. This recipe is not only yummy, but it is also nutritious and filling (who knew breakfast could be oh so good?). Between your oatmeal/boatmeal/muffin recipes you have reinvigorated my love for the usually hum-drum meal called breakfast!     I hear you on the cold cereal not filling you up! There is something about cold cereal that is comforting (maybe because it reminds me of my childhood?), but it never does the trick in regards to long-lating energy. I find that oatmeal, or a vegan breakfast burrito usually do the trick, so those are my go-to breakfast items 🙂

    Hi Katie – Love your blog and recipes. I discovered it just a few weeks ago and have been inspired to come up with some tasty new dessert treats. Anyway, I was just wondering how exactly you put on weight when you were trying years ago. I have a similar problem where I turned to a whole foods/plant based diet (though not vegan) and I guess I have not kept my calorie intake up enough to match my activity level (yoga, walk everywhere!, a little resistance work, heart problems and diabetes run in my family plus I feel better when I exercise). I seem to be in an eating routine and need some ideas on new things to add and try in order to put on some weight. You may have given more specific food ideas corresponding with your active lifestyle during that point in your life in previous posts, but I can’t seem to find them. Plus, I get distracted by all your great looking food and just keep clicking on recipe after recipe!

    Anyway, if you have a second and can give any more advice I’d really appreciate it! Have a great day. Never tried baked oatmeal, but plan to soon! With nut butter for sure!

      Hi J!
      I’m unfortunately probably not the best person to ask. When I went through my “eat as much junk as I possibly can” phase, I didn’t see ANY lasting weight gain because I’d stuff myself so much at one meal that I’d not want to even look at food! Eventually, I just gave up and learned to accept myself the way I am–skinniness and all. I’d love it if more pounds came along, but honestly no one is ever completely satisfied with how she looks, right? 😉
      But I guess I DO have strategies for not losing more weight that might help you: eat calorie dense foods, don’t include a lot of foods with bulk in the same meal (i.e. steamed veggies with nothing on them or salads, cauliflower, etc), and look into raw desserts for healthy–yet calorically dense–treats. And if you have a medical need to gain weight, probably seeing a doctor would be the best thing, because I am definitely not skilled in that area. All I know are my own experiences, and I know everyone responds to things differently. In any case, I’m glad you found me!

    I know it’s weird, but eating oatmeal for breakfast actually makes me HUNGRIER than before I started. It’s very odd. Cold oats fill me up okay, as does cereal, toast, etc. I think my stomach is mixed up. 🙂

    I also noticed that if I don’t have a nut butter with my breakfast, I get hungry an hour or two later. Not cool 😉

    Yum YUM!!!! I just made some oatmeal bars with nuts and unsweetened chocolate….mmmmm….yummy 🙂 And so good when topped with banana slices!!!

    Oatmeal usually fills me up really fast at first, but I digest it so quickly that I get hungry soon after. I find that when I eat a protein-filled breakfast, I feel more satisfied!

      Nope, keep the applesauce too! Well, maybe you could sub it… but I’d keep the applesauce (for moisture and sweetness) and instead cut back on the water/milk. In other words, if you use 1T oil, cut back 1T of the liquid. If you use 2, cut back 2T of the liquid. Does that make sense, or did I completely confuse you? I’m so bad with directions!

      and to all the calorie-counting people: you will most certainly NOT gain weight, when consuming high calorie HEALTHY food.
      a friend of mine is following a vegetarian whole foods diet. that includes eating butter, cream, whole fat milk, cheese (yes, I really did write those things down), and of course, healthy oils, whole grain products… and she is, just like other people following this diet, super skinny.
      sure, there might be exceptions, but in general, it really depends on the type of food you are eating, not the amount of calories. I did experience the same thing!

        Nooooot actually true.

        When you eat a whole foods diet you tend to eat less calories since packaged stuff is nutrient low/calorie dense. With whole fat animal products like what you listed, the fat is filling and so folks eat less mass, which means less calories. That’s how things like Atkins work – they are actually quite low calorie diets but the sheer amounts of fat/protein in them mean folks feel full and eat less total food. Also, boredom at only eating animals probably plays a role. It’s a limited diet and seems sort of bland, IMO. Gimme a wide variety of carby plants!

        It does matter what you eat – whole foods will provide nutrients that make you body feel nourished and can help you avoid cravings, they tend to have fiber (at least non-animal stuff does) to aid feeling full and satisfied and whole plant foods are mostly nutrient dense while being low calorie (exceptions are nuts/seeds, avocados, etc.) – however, calories still count. I can gain weight eating nothing but whole foods if I go overboard on nuts, dry fruit, nut butters, avocados and whole grains. All are very calorie dense and not particularly bulky which means you can eat a lot of calories without feeling stuffed.

        Weight loss and gain isn’t as simple as calories in vs calories out but that DOES play a large role and it’s not correct to say, across the board, that it doesn’t matter and you won’t gain doing X, Y, Z. Every body is different and every person eats differently – your friend and you and don’t gain, I and others do.

          Thanks for your opinion!
          Well, I am interested to know whether you would gain weight, if you would be on the whole food diet WITHOUT going overboard on anything, only eating when you are feeling hungry.
          And let´s just say you would eat a roll spread with butter. The whole wheat one with butter would definitely have more calories than the regular one with margarine. But last version would make you gain weight. That is proven.
          With all diets it is the variety and the not-going-over-board-thing that matter, and not eating when you feel full, anyways.
          I believe that there are a lot of other reasons that are the source of you are gaining weight, like emotional stuff, but that is only my personal opinion and I very much respect yours.
          And I said “in general”, because I kinda knew somebody would respond to this 😉
          I just hope I didn´t upset you with my comment, but this is how I and many other people think about it. (There is a great German book out there, called “Fat doesn´t make you fat”, I can only highly recommend it!)

            I’m actually thin and healthy. I run marathons and such. 😉 I’m not an emotional eater and actually tend towards the undereating/restrictive side of things but that’s neither here nor there. I just want to clarify. I eat a totally vegan, 80% plus whole foods diet avoiding added sugars and oils, for the most part. I don’t shy away from whole food fats, though, like nuts and nut butters. I just eat them in moderation. I know fat doesn’t make you fat. It’s about the calories, not the fat. Fats are satiating and necessary for optimal health! 🙂

            I’m saying if you burn 2500 calories a day via exercise and your basal metabolic rate and eat 3500 of whole foods a day, every day, you WILL gain weight. It doesn’t matter what food you’re eating – a calorie surplus will equal weight gain. That’s biology. It’s how animals, including humans, survive in lean times. When we overeat we put on body fat so that if we find ourselves in a lean time, we have bodily resources to burn.

            If someone stays lean on a whole food diet is it not because they can eat a calorie surplus and the whole foods magically don’t turn to fat. It is because whole foods generally are less calorie dense (since they lack all that added sugar and processed oil!) and are more filling/nourishing so folks eat less overall calories. Less calories in = weight loss or maintenance. It is much harder to eat tons of calories when you’re not consuming all that processed flour, sugar and added oil.

            I just wouldn’t say it’s *impossible* to gain weight on only whole foods. It’s harder, sure, but not impossible. 😉 I’ve had some super amazing raw desserts that were calorie bombs while still being made of whole, unprocessed, totally healthy foods! And, as Katie has noted, those foods aren’t very bulky so it’s easy to get a fair amount of calories without a wicked full tum! It may not even be a matter of eating past fullness or what have you. Some foods are just richer in calories per serving and those foods are quite tasty, usually. Dates and coconut, I’m looking at you.

            It is still very much an issue of calories eaten vs calories burned. Calories from whole foods are certainly healthier and offer way more bang for your caloric buck! We agree there. 🙂 I also think that, when one eats mostly or all whole foods one naturally eats less calories. We agree there.

            I’m just a stickler and after nearly three years of calorie counting, 60 lbs lost (and maintained for 1.5 years) I’m hesitant to say any thing is a sure thing when it comes to weight loss/gain! Even with hard numbers and science behind some our ideas, the body can be a super screwy little machine and just blow it all to heck by behaving completely illogically! 😉

            I’m just saying that calories still matter even when eating a whole foods diet. It just happens that many folks on whole foods diets don’t NEED to worry about calories given the benefits that way of eating has as far as satiation and nutrient density goes.

            I’m just still very control freaky with my food and couldn’t relax if I didn’t count, even eating healthy whole foods. I’m working on that. It’s rough.

            oh yes, we are so in agreement! although it may have seen otherwise, at first sight. I apparently didn´t make my opinion clear. I would never deny the fact that when you are consuming a lot more (or just more) calories than you are burning, you will most certainly gain weight. But if you eat the “right” amount of calories, the kind of food your having will matter.
            But what I wanted to say concerning the emotional part, is that I didn´t mean eating because of emotional reasons. I meant gaining weight or not loosing it, because of emotional reasons. This is another topic 😉

            I really hope that you will, some day, stop counting calories. I have been there and done that, too. And I surprisingly lost weight after stop counting. Just saying 😉
            No, seriously, I know how tough it is, and I believe it is especially hard for women!!

    I made an oatmeal raisin cookie version of the Irish Soda Oatmeal Cake you posted the other day. It was huge, and so filling! This is my new favorite way to eat oatmeal! I’m going to make a bunch of them to take for breakfasts all week! The thing I like about these is that I don’t feel like I have to add a ton of sugar like I do with a bowl of oatmeal. Just a couple drops of stevia did the trick!

    Also, I hope you don’t let the suckers get you down. I’m not overweight, but I watch what I eat and exercise because diabetes and heart disease run in my family, and because exercise and taking care of myself feels good! People always ask “Why?” It’s not really any of their business, but I don’t want to wait until I have a health problem to start taking care of myself. Prevention is better than any medicine!

    Anyway, sorry for posting a novel, but I wanted to let you know your recipes and ideas are very much appreciated!

    I have to say that I don’t really buy into the whole less fat makes you lose weight. I lost weight eating a lot of fats. My body does better on higher fat and less carbs. So I would just say stay off the oil to lose weight. A bit of coconut oil can help one lose weight, they’ve done studies and someone even wrote a whole book on it.

      Ooh maybe my post was confusing? I meant that people who weren’t trying to lose weight should include the extra fats because it gives extra calories without making you feel like you’ve just eaten a brick for breakfast lol. I definitely agree that even people wanting to lose weight shouldn’t eat a fat-free diet, as SOME fat is necessary in any diet. (I know some people will disagree with me, and that’s ok. This is just my opinion.)

    Looks like a perfect breakfast for me – I would put nut butter in or on top! I need to try the baked oatmeal thing. I always think I don’t have time in the morning, but if I remember to preheat the oven and just let it bake while I’m getting ready, it would be easier than making something else!!
    Cereal, bagels, waffles don’t fill me up either – I need something more substantial with proteins and fats to keep me full.

    I'll have to wait 'til either my grandparents toaster breaks and I convince them (or..rather, suggest) they get a convection oven for toast too, or…wait 'til I move out and get my own..OR, just make these when they're out of the house, because we have no air conditioning and it bugs my grampa when I turn the oven on XP Either way…I will try it ..someday! lol…

I agree cold breakfast cereals never fill me up, unless it’s muesli, that always seems to be ok, but the best filler has got to be good old porridge/oatmeal, so satisfying!

    Cereal does not fill me up… it is so full of sugar that it just spikes my blood sugar and then makes it crash… leaving me left hungry in like, an hour! No bueno. I do, however, love eating cereal as a desert…isn’t that horrible?! Cheerios especially 🙂

    Cold cereal doesn’t fill me up either, though I love it dearly. I’ll only eat it when I just need a quick bit of energy to fuel me for a run or a yoga class, after which I’m likely to replenish with a more satiating, oatmeal and nut-butter-filled breakfast.

    This looks awesome! Most breakfasts fill me up… I’m always starving first thing, but I find that it’s more from thirts than anything. A huge glass of water, cup of coffee, and a regular serving of oats/green protein shake/greek yogurt creation = fuel tank filled.

    If it doesn’t do the trick, I just eat lunch early. Or a spoonful of PB. Or both. 🙂

    Any breakfast could be filling depending on what you do (or don’t do) after it. Cold cereal is enough if you spend the whole morning in front of the TV but if you do a workout, go to school or work or whatever, it is definitely not enough. Another not filling breakfast I just discovered is millet. Either my portion was too small or millet just too light but I am munching baby biscuits while checking my reader and it’s not something I usually do. A warm portion of boatmeal sounds much more filling and, of course, tasty.

    I’ve been looking for different ways to make oats. The idea of eating them out of bowl seems so boring and cumbersome. I’ve wanted to try the breakfast oatmeal cookie, and now I’ll be trying this too!
    For breakfast, smoothies don’t usually fill me up. So I have to eat pb toast on the side or something. Also, (when I used to eat them!) eggs! The traditional breakfast of eggs, toast and “sausage” would leave me starving an hour later. The most filling breakfast I eat is pancakes, or anything that involves home fries. hehe 🙂

    Cereal and granola totally don’t fill me up – I need a little more fiber and volume in the morning! Smoothies normally made don’t fill me up either, but lately I’ve been using nut milks, more banana, spinach and adding psyllium husk to bulk them up a bit – the psyllium husk totally helps satiate!

    I agree – pancakes are generally more of a snack for me on the weekends (if I ever eat them). They just don’t quite seem like an appropriate breakfast food to me for some reason. …and I definitely prefer savory to sweet in the am. I’ll take some salty oatmeal or a tofu scramble any day!

      Also, even though i’m not counting calories I don’t think that 200 is accurate because 1/2 cup of oats is already 150, plus applesauce and the other ingredients it seems like it would be over 200.

        Lorin, yes the calorie-count is accurate (See the “nutritional info” link for more specific numbers.) The oats, applesauce, and vanilla extract are the only numbers you add up, because the nut butter is optional. So 150 plus about 30 plus maybe 10 is actually less than 200.

        As for banana… if you try it, please let me know how it works. I’d be very interested to know (but I think it would work fine).

          I tried it with banana and it did work. I saved a little bit of the banana to put on the top. The banana adds a natural sweetness to it, although I did add 1/4 tsp brown sugar. I realized that I have made these before because I used your original boatmeal recipe and then just added chocolate chips for fun. I don’t have a ramekin, so I just use a muffin tin, still delish!

      I’m weird and actually like most of the flavors cold from the fridge… but with the banana bread flavor, I really like it best re-heated in the microwave for 40-ish seconds. I almost always make them up the day before. And I haven’t tried freezing, but others have left comments saying it works well. I’ve been meaning to try the multi-batch thing (i.e. in a bigger pan, then cutting into squares). If you try it before me, let me know how it works!

    So I just took a stab at making this…and OMG I’m pretty sure I melted, recongealed, ate another bite, and melted again. I didn’t make them vegan (sorry!) but rather sort of just used what I had on hand. I also put the batter into greased muffin tins instead of a loaf pan, and they came out sort of like what would happen if oat banana muffins and chocolate chip cookies had a baby! I topped it off with a tiny scoop of vanilla ice cream, mixed a dollop of peanut butter and Nutella together, and microwaved it till it was smooth, then drizzled it over the ice cream. Holy *#(*#*$&#$& I’m in love. You are totally amazing! Of course my version is probably not as healthy as yours, with the ice cream and all, but it made the perfect after dinner snack that didn’t make me feel huge! Keep up the awesome recipes, girl. You’ve got a loyal follower now!

    I made the cookie dough oatmeal cake today for my afternoon snack. So good! I dropped it to 1/4 cup oats (and used slightly less than the 1/4 cup apple sauce and almond milk), and then added 2 tsp of warmed coconut butter and 1 tsp organic evaporated cane juice (as the sweetner). Divine.

    Having just finished my grad school exams for the semester, I finally had time to make this this morning. I whizzed half a banana in my vitamix with soy milk, vanilla, a dash of salt, and about 2 tsp of coconut oil. I stirred in the oats and chocolate chips and let it bake while I did Jillian’s 30 Day Shred. When I finished my workout breakfast was ready, and it was AMAZING!     I tried this recipe yesterday, minus chocolate chips since I’m out :(, and added carob powder and peanut butter and YUMMMMM! I used mashed banana instead of applesauce and I found that made it plenty sweet without adding maple syrup or other sweetener. I have another one in the oven as we speak, but this time I put a blob of peanut butter in the middle too :).

    Your blog is great! I’m celiac and lactose-intolerant, so it’s exciting to see so many recipes I can actually EAT!

    I’m studying for my med school entrance exams right now so I’ve been stress baking up a STORM. Just tried these oatmeal cakes, and they were amazing. I tripled the recipe so there would be enough for my room-mates. Used one really ripe banana and one single-serving cup of applesauce, which was perfect. I also used flavoured agave syrup for sweetness. Not sure if they have this where you live, but it gives it a really cool flavour! The one I used was hazelnut 🙂

        I’ve had the caramel one too! It’s great on pancakes – I use it instead of maple syrup. Agave is a lot sweeter, however, so you need less. Surprisingly, I found the caramel one at Winners (in the food aisle).

    I love my boatmeal a little soft. Only crunchy on top. I don’t think I’d want it to be firm. It’s like the best, warm, gooey, yummy-ness…. it is so awesome. Even for those watching their weight, like myself, 1T of Coconut oil may seem like too many calories but it’s actually a very healthy fat made of medium chain fatty acids which eat other fats in the body. On top of that it satiates. A boatmeal made w/coconut oil keeps me full for 5 hours! Some times the extra fat/calories are much better for you than going w/out. I love you for creating these boatmeals. I’ve made a chasew and date icing for the top of the cinnamon bun and my husband LOVES it and really thinks he’s eating a cinnamon bun. That is really saying a lot. The pumpkin boatmeal w/choc chips truely makes me think I’m eating a decedant dessert that I shouldn’t be. I just wouldn’t skimp on the coconut oil. It’s worth every calorie. 🙂 I just realized I should try carmalizing w/coconut sugar on top instead of brown sugar. Hmmm… can’t wait to try it. You’re the best Katie!

I just find that during the week I’m super lazy in the morning and don’t want to be baking and making things before work.       Hi Jessica!

      Do you mean the baked oatmeal? If so, I have definitely made up multiple batches at once. You just multiply all the ingredients by however many servings you want. (For example, I often multiply all the ingredient amounts by three and then portion it equally into three mini loaf pans.) If you’re having a hard time with the math, you can always measure the ingredients into separate bowls and then just bake all the individual servings at the same time, if that makes sense.

      I also know other people have told me that these freeze well! 🙂

    I made these as muffins with
    3 cups of oats
    500grams of bananas about 4 large
    1 cup of water
    1/2 cup of sugar
    1/2 cup of chocolate chips
    2 tsp of baking powder
    I read how substituting bananas for eggs and oil can reduce calories in baking and these came out HUGE for about 195 calories each! And they had a really nice texture!
    I’m so hooked on this website and I’m very excited about eating chocolate everyday and still loose weight after having a baby!

    I love cold cereal but it’s not filling at all! And mostly loaded with sugar. That being said, this oatmeal is DELICIOUS! Perfect for this rainy, freezing cold Sunday. My kids INHALED it.

    I used 1T agave nectar for the sweetener, 1t chocolate chips and 1t peanut butter. Equalled out to 8 Weight Watchers points if anyone’s counting. I usually burn a lot of points for breakfast so this is fine for me.

    My kids are always begging me to buy instant oatmeal for them but it’s so sugary I can’t bring myself to do it. They unanimously voted that they’d rather have boatmeal! YAY!

    I keep expecting to run into something I don’t like on your site but you keep kicking butt. Thank you!

    I have to admit, I was skeptical about this tasting like a warm chocolate chip cookie. I thought there was no way you could make oatmeal taste so good! But holy cow this was yummy! Breakfast has never been so healthfully delicious. Also, I used a mini bundt pan, and I thought it was going to be SO CUTE coming out, and then it fell apart in a little mess on my plate. A delicious mess though 😀

    Just made this and it actually did not work for me. it didn’t bind. i ate it as a “mush” and it was great, but i really wanted the cake so it would be portable. i doubled the recipe and split them into 2 corningware ramekins…perhaps it needs a smaller ramekin to firm up? any ideas?

      I just tried it tonight and LOVE it, but I was also going to post that mine didn’t seem to firm up into a cake like it should. I’m guessing in my case it’s because I used a nonstick mini loaf pan and not a ramekin? After about 30 min. the sides were getting nice and brown, but the top was still light and the inside wasn’t as “dry” as I expected. It still tasted awesome, but I’d like to be able to take these on the go as well. I used 1/4 cup applesauce, 1 T canola oil + water to 1/4 cup, and 1 1/2 T sugar. I also threw in 1 T each mini chocolate chips and sliced almonds, but I doubt either caused the slower cooking. Maybe just my oven, too?

        I often use a loaf pan.
        Maybe it’s the combination of sugar and oil… I’m not sure, but I’ve always used stevia when I use oil. So maybe the sugar is too grainy to hold up? Maybe try either stevia (or try a liquid sweetener like maple syrup or agave, and omit the milk/water)? I’ll have to try this with your combination and see if I get the same problem!

          Okay, you have me curious so I’m running a little boatmeal experiment, hehe. I have 3 in the oven now made exactly as yesterday except:
          1) omitted the oil
          2) omitted both oil and sugar
          3) omitted the sugar
          I’ll let you know in a bit how they turn out!

            Here’s how they turned out after 20 min. at 380 degrees and 5 min. on high broil:

            1) no oil – probably the least cooked through in the middle, but the top and sides were nice and brown and the flavor was good
            2) no oil or sugar – slightly more cooked in the middle but less brown on top, and the flavor was a little blah
            3) no sugar – this one looked the best as far as even browning, but the middle was still a little chewy and the flavory was more savory (buttery?) than sweet.

            It seems like maybe I just need to cook slightly longer in my oven to get the middle drier, but cut in half these would still be portable (just a little soft). I may try next time with the oil and less sugar. 🙂

I would love to be able to make a bunch at a time so my hubby can eat them in the morning without me having to get up and make something every morning for him, he wakes up at 3:30am.     I just tried this last night for dinner and was seriously impressed! I did find that when making this, the calorie count is closer to around 300 calories (even when subing almond milk for the milk portion), but well worth it and well within my limit for a meal. Stayed full and found that I didn’t even want my nighttime snack! Really big and filling, warm and comforting ion last nights chilly temps. I just discovered your site a month or so ago and am already looking forward to trying much much more of your ideas! I also just started trying to jog – though I think my shins are asking, begging, neigh screaming for me to go back to my normal hiking 🙂 Keep on keepin’ on Katie! You rock!

    I made this for my sister and I this morning (mom opted out of the chocolate chips so she had the cinnamon swirl one) and we ALL loved it. I don’t have ramekins so I had to use muffin tins. Because of that, they got deformed when I took them out, but still tasted AMAZING. Super filling and low calorie, which is always a plus. I wake up at 6:30 to make it and I love that it only take a couple minutes to put together and then when it cooks I can rinse off and get dressed. Keeps me full throughout school. Great recipe, love your blog. I gotta get around to buying those ramekins 😛

    As a quick question, do you know if there’s anything I can substitute for pumpkin in any recipe? My dad is allergic so sometimes it can be hard to find recipes (since he eats about 3/4 of everything I make, usually in 5 minutes..)

    I think this was the first recipe of your’s I made after the chickpea cookie. This might have been a year ago. It tasted great, but it wasn’t in cake form. For some reason I tried again today, and it was perfect! I’m not sure what I did last time, but I probably tried to sub too much. It is so hard for me to follow a recipe exactly, because I love the experimentation aspect, but I usually have the best results when I don’t sub. I guess the best thing to do is make it correctly first, so I know what it is supposed to be like, THEN sub and experiment.

    This one is definitely a keeper, as written!!

        I’d prepare the dry ahead of time, then just add the liquid in the morning. Or bake it the night before and fridge overnight. Or you can even bake many ahead of time and freeze. They thaw well :).

    Dear Katie,
    I tried this just now and absolutely loved it. Cannot still believe that such a simple recipe can taste so good.

    Here is what I did:
    I had mint chocolate chips, and no vanilla at hand. I rested the dough for 20 minutes. Sprinkled dried coconut flakes on the top before baking and the result was yummy. I was hesitant initially and hence tried with just half cup of oats.

    After tasting and finishing almost half of the boatmeal, I prepared the dough for 2 more batches :D. One with the same mint chocolate flavor and another one with coconut flakes, raisins and berry flavored protein powder.

    Have been looking for healthy and sugar free breakfast options, this will be one of favorites from now on. It is hard to find truly healthy and simple recipes.

    Though this is the first recipe I tried from your blog, I am sure that I am going to love each one of them.

    Oh my goodness, Katie, you’re the Angel of All Thing Delicious!! I just made this for the very first time. First of all, it’s a snap to whip together. I baked mine in a mini bundt pan and it popped out all adorable like a pretty dessert. I put a spoonful of fat free cool whip in the center and dug in. The first bite!!! Crispy, cookie-like crust, ooey gooey chocolatey creamy center!! This is not a breakfast, it’s a molten, decadent dessert! I’m STUFFED, too.     Hello my name is Katherine and I am a boatmeal addict. Love, Love, Love boatmeal. I make it once a week and multiply it by about 12 or 16 and put it in muffin tins then freeze it. Muffin size is perfect for my ‘little people’. My husband, children and I eat boatmeal all week. Our current favorite is cranberry, coconut, chocolate chip with applesauce and almond butter.

    I love these baked oatmeals! I’ve already made the reeses, cinnamon bun and now htis one today. I love them all but my favorite so far is the reeses! I think you should try making a coffee one or mocha and maybe a carrot cake or gingerbread flavor!

    Just a small query that I’d really appreciate an answer to. How is this boatmeal recipe only 180 calories if 50g of oats is around 190? (Without the other ingredients) Perhaps I’m using the wrong calorie counter?

    I have been making this recipe (as well as the chocolate peanut butter baked oatmeal) for months now. Love them! I usually make a 4x batch, bake them in muffin cups and freeze. I will reheat two “muffins” for breakfast during the week. Over the weekend I was making a batch and forgot to add the optional oil (which I always add). I remembered while they were in the oven! Anyways, it turns out that I don’t even notice it missing! Saves me some calories and I don’t lose the taste 🙂 I have a big sweet tooth and honey works better for me as a sweetener than stevia. Just personal preference.

    Made this with stevia, coconut milk (not the canned version!), and added a tablespoon of peanut butter for the extra calories (and because peanut butter to me is chocolate to you!). I used raw cacao nibs as the chocolate, so unfortunately it wasn’t warm melted chocolate! The turn out still was delicious though 🙂

    My new favorite breakfast! Although, I find it a bit misleading that the calories are listed at 180. The only way to get it that low is to use unsweetened almond milk and applesauce, leaving out the chocolate chips and sweetener. 200-250 would be a more realistic estimate. Which is not a problem for me, I like a good breakfast. But I know some people don’t.

    Honestly, Katie, you cannot go wrong. I’ve yet to make anything on your site that doesn’t come out amazing. I made this recipe just now, but I microwaved it rather than baking it. Took about 3 minutes, and it came out more of a thick, chewy oatmeal texture rather than like a muffin or cake, but so good! I forgot to add the nut butter, so I spread a tsp of almond butter on top while it was still warm…OMG I am totally making this for breakfast every day this week! I did use cow’s milk because I haven’t had the chance to get to the grocery store this weekend to get more vanilla almond milk, so it wasn’t vegan. But still…wow!

    My kind of recipe, thought I was the only one who likes not so sweet, not too rich deserts. This dessert you could eat for breakfast! I would sub raisins for the chips. I just don’t believe in mixing chocolate and oats. Some things are sacred. 🙂

    Had this today and wow..YUM! I did all the add in options and with oil and maple syrup it took 25 mins to really bake and I should have gone 30 as they fell apart as soon as I turned then out. AND it made enough to fill two full one cup ramkins! I calculated the nutrition facts and woops haha… I will make a healthier version next time! For the full recipe it was over 500 calories, I only ate 1/2 and was super full so about 260.
    Next time I will use stevia, banana, and no oil… Or maybe soy butter… I have but allergies.

    First off, I have to say i’m a HUGE fan of your recipes! Of all the ones I have tried, to which there have been a lot, I would have to say that “boatmeal” is my favourite since I literally eat it every day. I have used this recipe many times and have changed it around a bit (ie add various nut butters, add ground flax to help keep it together, add cranberry sauce and pecans, etc, etc, etc) and its always amazing! thank you for revolutionizing breakfast for me!
    I would love to take boatmeal another step and make it savory. Have you ever attempted a savory version? maybe adding Daiya cheese, nutriontal yeast, smoked paprika, etc? Has anything NOT worked out?

    I know you probably have a million and one recipe ideas on the go, but I just wondered if this could be a thought among many….

    This was super delicious. I multiplied by 4 and baked in an 8 inch dish – it took about 40 minutes to get done. Instead of the applesauce, I used banana like you mentioned – a very large one for the 4 servings. I used two tablespoons of coconut oil total – my kids LOVED IT! Thanks! 🙂

    First of all, I have made this recipe so many times. My kids and I LOVE it! Today, however, I was really craving a chocolate-covered strawberry boatmeal. So, I used this as a base recipe, adding 2 heaping tbs of dark cocoa powder to the dry ingredients and a couple of tbs of ground flax (because it’s just so good for you). (I use liquid stevia from Trader Joes, so I probably added about 10 drops of that….normally I don’t add sweetener at all to this because I think it’s sweet enough as is). I placed the strawberries on the bottom of the pan and topped with the chocolate oatmeal. It was delicious! I think if I reduced the amount of milk, it would probably get very fudge-y and brownie-like. I love how decadent it seems without being full of sugar and fat (I always use the lesser amount of coconut oil). Thanks for the inspiration!!

    I’ve made this recipe a number of times over the years (ate it this morning) and absolutely love it every time. The aroma, particularly when made with banana, is reminiscent of banana bread and the dairy free chocolate chips take it over the top. I’ve taken to adding PB2 for an added boost of protein. Thank you for creating this recipe!

    Disclaimer: I am not a healthy eater at all, though I try to eat a lot of veg to compensate, and I really love food.

    This was DELICIOUS. I added a scant 1 tbsp of olive oil (forgot to scale the milk back), used mashed banana instead of applesauce, used 1 tbsp of honey in place of the maple syrup, added 1 tsp golden flaxseed that I ground with a mortar and pestle. I divided the batter into 2 standard size ramekins and added 1 fresh chopped strawberry to 1 ramekin to see how the extra moisture would affect it. They’re still pretty hot but even with the added moisture it’s set pretty well. Hopefully these stay delicious the day after as I’d like to double the batch to make breakfast for the week.

    Is the 380 degrees correct in the recipe? I’ve never seen that before. It’s always 350, 375, etc. I’ve made this many times and love it. But I’ve always wondered about the temperature thing.
