Banana Bread Baked Oatmeal

Yesterday morning, I spied a very brown banana hanging out on the kitchen counter. My first thought was:

Score! I can make… Banana Pancakes for One.

But then I got an even better idea.

Banana Bread Baked Oatmeal

Adapted from: Cookie Dough Baked Oatmeal

  • 1/2 cup rolled oats (50 g)
  • a litle over 1/16th tsp salt
  • a little over 2 tbsp mashed, very-ripe banana (40 g)
  • 3 tbsp milk of choice or water (45 g)
  • 1 tbsp virgin coconut oil or coconut butter (Or you can sub 1 tbsp more liquid or extra banana, for a lower-fat version. But the coconut oil makes this recipe so buttery!)
  • pinch stevia OR 1 tbsp sugar (Taste the batter to decide if you want more)
  • Optional: walnuts, cinnamon, vanilla extract, peanut butter, or whatever else you put in banana bread (Chocolate chips?)

Preheat oven to 380 degrees. Combine dry ingredients, then mix in wet. Pour into a small baking pan, loaf pan, or 1-cup ramekin (or, for mini boats, two 1/2-cup ramekins). Cook for 15-20 minutes, or more until it’s firm. (Cooking time varies, depending on whether you use oil or not.) Finally, set your oven to “high broil” for 5 more minutes (or simply just bake longer, but broiling gives it a nice crust). Don’t forget to spray your ramekins or mini-loaf pan first if you want your cakes to pop out.

    Yes my cat thinks she’s a person and when it’s dinner time someone has to feed her, her food or you will have a little fur ball in your face begging for some of yours. I recently found out she loves peanut butter and tofu. Kind of upsetting when you go to take a bite and realize your cat has nicked a lick or a piece.
    Your dog is so cute! I love dogs, but I’m so much more of a cat person.

    I finally made boatmeal this weekend. It was really good. I choose the pumpkin pie version and topped it with more pumpkin and a little coconut milk. The banana version looks really good too.

    My cat likes lettuce, bread, and turky. We joke that we should just make her a sandwich. I prefer not to feed my cats people food but the rest of the family does not agree.

    Harry and Daxter get to eat people noms all the time. But it’s not always bad for them – they love apples, carrots, celery, and spinach! I’m afraid their faves will always be when we’re eating pizza though… they always know that they’ve got some crusts coming their way. 🙂

    Haha, our cats think they are people too. Duke used to be a stray and he’s very clever at stealing people food. Last night he stole mango skins from the sink (and I had to chase him around the hosue to get it back) and the night before he stole tortilla crisps right out of my husband’s hand (he was holding them for himself, not feeding the cat). Ah yes, the joys of furry family members. They always keep us entertained, right?

    Our dog eats nothing but people food. Leftovers. Our cats the same, never cat’s food. It’s funny that our cats eat lettuce (if it’s coated with oil, the better), sour turnip, gherkins, to name a few not so cat-like foods ;). Well our dog eats dog biscuits but only because I call them so – it happened that I made a batch of rock-hard biscuits and I didn’t risk to break my teeth, so he’s lucky to have something hard to bite. So it’s a reward for him to get a “dog biscuit”.
    Weird that once I noticed that cats don’t drink store-bought milk. Too many chemicals inside I’d guess.

    My rats get “people food” a lot. Fruits, veg, cooked grains, organic baby food, treats meant for babies (Happy Baby Puffs, Munching Blocks) etc. I feel more comfortable giving them foods intended for human infants as their treats rather than filler and junk filled “pet treats”. They do get some dog biscuits, though. Cloud Star makes very clean little biscuits that are just nice, whole food ingredients. They also like the sweet potato rawhides that are just dehydrated sweet potatoes, flax and vitamin E.

    They eat a grain mix that’s a mix of cereals with some pasta. This month it’s Kashi 7 grain puffs and flakes and some organic quinoa pasta. They get a vegan staple critter kibble, too, but they are healthier with fresh food included. I usually have a bit of banana left after I measure mine out for my morning oats – so they get the ‘nanner as a brekkie treat. When I make pancakes there is always a tiny bit of batter left so I make each one of them a tiny rat sized pancake! They are so cute and about quarter sized. The rats LOVE them and it’s adorable to see them all sitting around holding these pancakes as big as their heads. ;D

    And Daniel’s been getting his meds in almond butter or coconut butter, lately, too.

    My Mollycat LOVE non-dairy milk, nooch(!) and popcorn. Also tofurkey and other mock meats! Hah. I don’t give her the Tofurk, etc. any more, though, as they have garlic and onion and neither are good for cats. I’ve even seen her eat one of the ratties’ vegan kibbles off the floor multiple times. I used to foster cats for years and we had a lot of kids eating weird stuff. One foster chewed open a bag of bread, took a bite out of EVERY slice and then left it. Jerk.

    My dog Wilbur adores carrots, apples and popcorn. I don’t give him popcorn very often btu apple and carrots are a pretty regular treat!

    thats so funny that your dog likes bananas- the only thing, besiides watermelon, my dog will NOT eat is bananas! everytime i give her a slice, forgetting, and then she licks and spits it out. lol its too funny!

    Loooove banana boatmeal! I followed a recipe that called for agave nectar as a sweetener and had toasted walnuts on top. It was so good! I would totally add chocolate chips–great idea! So I was wondering if you had any thoughts about what to feed dogs. Do yours eat normal dog food even though you’re vegan? I have a friend that went vegetarian and then found some veg dog food and decided to put her dog on that and it seems to be working for her. But I admit, turning a dog vegetarian or vegan concerns me since, unlike us, they are actually meant to eat meat only. That’s what wild dogs do, except for the occasional grass craving, apparently. LOL! Anyway, I know you’re not a vet, but I was just wondering if you’d ever thought about that.

      Dogs, unlike cats, aren’t obligate carnivores and do quite well on vegan diets. In fact, the kibble I feed my domestic rats (rodents) is a vegan dog kibble that is intended for dogs with allergies to all meat/animal protein. I guess allergic reactions to some/all animal proteins are somewhat common in dogs.

      My cats eat grain-free, absolutely not vegan food (it’s just riskier with cats and they ARE obligate carnivores… I don’t like it but there you go) but my ratties are happy little vegans. Rats are scrappy omnivores like us so they do very well sans animal protein – I’ve actually had very few tumors partially due to their diet, I believe.

      Animals like cats, ferrets, hedgehogs, snakes that are obligate carnivores/insectivores really do need meat based foods. Dogs, rats, etc. can do veg or vegan in a healthy way relatively easily.

      My dogs actually aren’t even vegetarians, because my parents are the ones who buy their food and feed them. I have to admit that I haven’t done much research into veganism for dogs. But when I get out on my own and have a dog (and I most definitely will), I’ll look into it more.
      Melissa’s comment was great! I know some dogs that are vegans (blog-friends’ dogs), and are perfectly healthy. But cats… yeah, even vegans usually feed their cats meat. Humans have no canine teeth (which is further evidence that we started out as herbivores, not omnivores… but that’s a whole other debate lol). But cats and some other animals (snakes, etc) DO have canine teeth and are supposed to eat other animals. Dogs have canine teeth too, so I agree with you that they’re probably naturally supposed to eat meat. But I think they seem to be ok even if they don’t… then again, I really don’t know lol!

        Thank you and Melissa both for your answers! Mel, you made me feel better about my friend’s veg dog. 🙂 Thanks for satisfying my curiosity Katie. I’m sure it goes with the celeb territory (you know you’re famous!), having everyone butt into your business. hehehe! I suspect that before the flood, we were herbivores and ate no meat because after the flood, God said we could eat animals and to me, I don’t think He would have said that if they were already eating meat. Just something I’ve thought about from time to time. I just wonder, if that is true, why he changed His mind? Perhaps eating flesh was symbollic of something–like our sinful nature. I have no idea! It’s something I’m interested in researching further in the future.

    Henry and I have got a lot in common.. brown hair and love for bananas… my kinda dog!!! YES my dog eats lots of human food- but lemme tell yea.. he sure aint a vegan.. my parents always give him all their meat.. BLECH.. one day ill have a vegan dog- WOO!

    I love your dog he’s so cute! I tend to feed my dog people food, but only if it’s like crust of a pizza or if something drops on the floor(that dog’s can eat! of course). The crazy thing is when i’ll be making sweet potato fries a large chunk will fall on the flour and my youngest dog will actually eat it…raw sweet potato…I still wonder why she’ll eat it and not spit it out.

    my kitty has a thing for cereal and milk. when she was a baby she clawed her way into a box of cornflakes and started to munch away, and last week I discovered she likes hemp milk. i also once had a cat who really enjoyed potato chips and popcorn.

    Our cats dot care for people food at all, besides tuna fish. However, lately obe of our kitties gas been begging fir people food. He likes potato chips! LOL he only eats one bite to feel special, though.

    I don’t have any pets, but when I was growing up our dog would eat ANY food that fell on the floor immediately. It was like having a live vacuum. Now that I think of it, that would be great with a toddler in the house who is constantly leaving a ton of crumbs under her chair. Hmmmm….maybe we need a dog?!

      LOL yes it’s surprisingly-filling… like an oatmeal brick? But much more appetizing than that sounds. I especially love the raisin one with 2T coconut butter added… but then again, is there anything that’s NOT better with coconut butter? 🙂

    I just had baked banana oatmeal for my post workout treat this morning, although it didn’t have that lovely bar form – just scoops of mush in a to-go container. 🙂

    My doggie eats carrots and dehyrated sweet potatoes. He’s allergic to anything grain, so veggies it is!

    My cat probably wouldn’t eat people food unless it was fish anyway, so she sticks to her cat food. My mom feeds my dog off of plates though which is kind of annoying to me. It’s not a big deal, but he’s gotten into the habit of begging because of it..oh well! As long as he’s not breathing on my food I guess it’s no big deal. 😛

    Since I’ve become so obsessed with boatmeal lately, I should definitely try some of the other flavors to mix things up. I’ve been making the standard one with raisins every time. I’m still not sick of it though! But banana and chocolate are definitely on the to-do list.

    My pup loves people food but her faves are: carrots, apples, peanut butter, and tuna (not all together of course lol)! She will literally come running from anywhere in the house if she hears me cutting up carrots!

    I LOVE banana bread boatmeal! I made it for my mom’s birthday last year.

    The only human food I give my dog is the occasional apple core. Or I will fill his bone up with peanut butter 😉 His favorite! I guess it isn’t just us humans who like the stuff!

    My cat, Tiger, LOVES yogurt…I usually let him lick the container/bowl when I’m done eating! And weeks ago, I dropped a bit of coconut butter on the floor and he licked it right up and then looked at me like, “where’s the rest?” haha!

    Omgosh! My dog loves carrots too! Especially the carrot peels! I can’t peel a carrot without an audience. Even if Sunny is downstairs, the second I start peeling it, he’s scrambling up the stairs to beg. 😛

    I just realized but this recipe is a DOUBLE boatmeal

    I’m eating this as we speak! I’ve tried your other boatmeal recipes and they were great, but I think this is my favorite! I used almond milk and added cinnamon and it tastes delicious! After baking, I “iced” it with peanut butter (which got all melty because the cake was still warm. Yum!) and topped it with some more sliced bananas and cinnamon! It was so pretty that I took a picture :p Keep up the good work!

    I really want to try your boatmeal, but I’m living in a dorm (woot college!) and don’t have an oven. I do, however, have a microwave. Do you have any recipes up your sleeves that only necessitate a microwave beside your basic oatmeal? Thanks!

      Do you mean oatmeal recipes, or recipes in general? I have a TON of recipes that can be made in the microwave (or that don’t require cooking). As for oatmeal, I’ve never tried the boatmeal in the microwave, but it *might* work.

    MMM! I am going to make two “mini boats” in smaller ramekins and sandwich them with natural peanut butter (rather than adding to the mix) and maybe some extra banana slices- wish I had some chocolate chips in my pantry! 🙂 Sounds delicous! Can’t wait to bake these- thanks!

    I am ALWAYS looking for new ideas for my bananas, i buy a bunch on sale and they turn too fast for me to eat them all! Do you think this would work in a larger pan if I scaled it up but still kept it thin? There is no way 2T of banana will make a dent in my ripe pile!

      Oh girl, I wish you could send me some of those bananas! I constantly find myself wanting to make something–my chocolate fudge, a milkshake, banana bread, etc–that calls for an overripe banana… and I have to wait days and days for them to ripen!

      To answer your question, I don’t see why your idea wouldn’t work. You might have to cook it longer, though. In any case, it’s a really great idea! (Also, if you can’t use bananas before they go bad, a good thing to do is to peel them and then freeze them for later. Thawed frozen bananas will work in almost any recipe that calls for an overripe banana.)

        hahahaha, that’s why I buy a huge bunch whenever they are on sale! then I can give presents to all my friends (the guys love it!) and freeze individual portions for myself =) I do freeze them occasionally, but my freezer is the size of a shoe box, and i need that space for icecream 😉

    Just made this but with unsweetened applesause in place of the coconut butter, added vanilla extract and 1T dark chocolate chips… Then baked them in heart-shaped silicon cupcake moulds 🙂
    Freakin’ delicious.. They were soooo yumm!

    Wow. You are amazing! I have tried a couple of your recipes, and they are sooooo good!!! I can’t wait to try this…now I just gotta wait for my bananas to turn brown!! I do not have a dog at the moment…but my two cats LOVE people food…even broccoli. I do not like for them to eat people food bc I know it’s not very good for them…but with a four year old in the house, it’s very easy for them to find treats :p

    We just moved and have zero baking dishes. And out of necessity comes creativity right? So I made these in the toaster oven & poured it onto a baking sheet & cut them into square cookies. They turned out amazing. Still 15 mins at 400 & then up to 450 for 5.

    Used a lower glycemic fruit: pears (instead of bananas). Apples would be great, but pears are cheaper this week. I made “pear sauce” by steaming pear slices in the microwave in a magic bullet cup & then giving them a whirl in said Magic Bullet. Literally took 2 mins.

    Left out sweetener & oil. Pears did the trick, and I also added some peanut butter. I find that anything that needs to be sweeter gets delicious with a bit of pb.

    And can I say CCK that I love you? I am always making sugar & flour substitutions, and your recipes are amazing & delicious “as is.” You make this world an even better place 😉

    Favorite CCK recipe ever!
    Makes my life a bit more exciting by combining the boring stuff I usually eat – banana, oatmeal, milk, walnuts – into BREAD. A pretty one, too! I always sprinkle a bit of cocoa powder on top to make it even more special. Then I take tons of picture the moment it comes out of the oven.
    This thing is real. Someday I’ll quadruple this recipe and make a whole Banana Oatmeal Cake. Seriously, I wish someone baked me this for my birthday.

This is going to sound crazy, but the other day I was in the pet store and they had all natural PB&J dog treats, and they happen to be 100% vegan!     Oh wow. I’ve made the cookie dough and cinnamon roll boatmeals and loved them, and today I made this and the Irish soda boatmeal. The Irish soda was yummy for sure (especially with the raisins!), but the banana is outta this world!! I was surprised this still called for sugar since the banana replaces the sugar in your regular oatmeal recipes, but I used 1 T just in case and it was marvelous. (Also used 3 T water and 1 T Canola oil.) I didn’t have any fresh bananas, but I have loads of frozen ripe ones so I used one of those and melted it down. I think I could eat this every day and not get tired of it. 🙂

    Wow, this will probably me my new favorite breakfast! I mixed it up and put it in the fridge the night before, then stuck it in my toaster oven to bake while I took a shower and got ready for work. My house smelled AMAZING, and it kept me full until lunch time. I can’t wait to try the other flavors too!

    Just finished making this banana boatmeal, and it was AMAZING!!!! I used an extra tbs of banana instead of the oil, but also added 1/2 tsp cinnamon and topped it with melted peanut butter. YUMMMMMM 😀 Thanks sooo much for the recipe!

    Anyway, YES. I swear, my animals are definitely not normal. Both of my dogs LOVE veggies and we often feed them the extra broccoli stalks. Also our little kitty used to love bread a while ago. We had to hide the bread in the cabinet to keep it away from her haha. She now has a strange obsession with peppermint chewing gum though…

    If you cooked one of these “boatmeals” the night before, and then heated it in the microwave the next morning, do you think it would be good? I looooove those oatmeal to go things, but they’re so bad for you and high in sugar. Do you think it would stay good overnight and then reheated?

    I made these last night – i was craving something delicious but we had no fun ingredients, these were perfect because i always have oats and a banana that is hanging dearly close to the edge! I made ’rounds’ in a large muffin tin and also used rice bran oil instead of coconut and i added some LSA. If i were to make them again i’d chuck in a bit of extra sweetener and maybe some cinnamon or something to spice them up a little.
    I loev that so many of your recipes can be altered depending on what we have in our cupboards – makes me so much more likely to try them!

    OMG!! I made this for breakfast this morning, it rocked!! My new fav way to eat oatmeal! All I did was use brown sugar, added cinnamon and walnuts. SOOOO good. Have you tried making this the night before and then baking in the am? I didn’t…but I would prefer to do that, except I like my oats kinda crunchy, not super soft…..

    We have a Henry and Molly too! Hey, I was curious if these baked banana bread oatmeal things can be frozen and thawed/re-heated, as needed. I’d like to make a larger batch since these are so yummy, but just didn’t know if they store well. THANKS!

      Absolutely! I often make 4-8 of these over the weekend and freeze so I can pull them out each morning for breakfast during the week. 🙂

        Thanks for the info! Making more of these tonight! Also, our Henry and Molly think they are people, as well. Every now and then I walk into the dining room and Molly is sitting upright in one of our dining room chairs. As if that is where we need to serve her her dinner. I find myself screaming “You’re a DOG” at least 3 times a day.

    I just tried your Baked Oatmeal recipe. Unfortunately it turned out a bit hard (?) and really bread-like … i doubled the recipe to get more out of it. Can you tell me what i possibly did wrong? I added so much water until the mass became sticky and smooth … could it be too less? Otherwise i was afraid to make it nearly liquid …

      Unfortunately, I’ve never doubled the recipe. Sometimes you can’t just double a recipe because the proportions don’t work that way for some odd reason. Maybe that’s the case with this recipe.

      I’ve successfully doubled the recipe, but I still baked in two mini loaf pans and cooked the same time as suggested above. It should be more dry and loaf-like after baking than when you microwave, though… Not hard, but you should be able to pick it up and have it stay in one piece. Maybe your oven is just stronger and you need to bake a bit less time? And just in case, it’s 380 degrees Fahrenheit, not Celsius. 🙂

    This is great! I’m trying to bake this now but my boatmeal is falling apart 🙁 The oats stay in little clumps and wont stick together should I add liquids? I’m going to bake it soon but I’m going to try again if it doesn’t come out right, thanks 🙂

    My cat obviously wants to be vegan. She likes raw tofu, black beans, corn, tomato sauce, and frozen peas (she bats them around the floor until they thaw enough to eat aka hunting). Then again, she has a serious weakness for canned tuna, and likes to lick the butter off your toast if you aren’t looking.

    We used to have a cat with a serious sweet tooth, too! He once licked all the cream filling out of my mom’s eclair when she got up to answer the phone.

I love the single serving recipes most of the time, but with school starting soon, I’m looking for some easy breakfast recipes to make at the beginning of the week, freeze, and then just reheat every morning.     I made this but added a scoop of Vanilla Protein powder and made 2 bars. It works out to 22 g of Protein for one. Because I have had RNY I can’t even finish one of them. They are awesome! Thanks so much for the recipe

    Just made this but used coconut oil for the first time! Made the mistake of adding it after I added cold milk and it made it clumpy. I had to remove it and melt it in micro than add it back! Can’t wait to have it tomorrow for breakfast!

    My pets are terrible for eating human food, the cats tend to get into the cupboards and on the table, and eat whatever they can get (we have 4, well we have 5 but one seems to live somewhere else and eat there most the time) 2 of our dogs eat some though 1 of our 3 dogs can’t eat human food cause he has loads of allergies, he even has to have special dog food, not that that stops him from nicking food.

    My dog loved carrots and cheese, and when she was recovering from an operation she had some scrambled egg. She also had a corner of Mum’s toast every morning.

    I just made this recipe and it was delicious!! I will be making baked oatmeal from now on as a breakfast food and dessert! It’s so easy to modify based on what it’s for- sweetness, additional mixings! I threw in some chopped pecans and raisins and used 1 Tbsp Maply Syrup for the sweetener.

    I found your Blog a couple of weeks ago and have been trying out recipe after recipe and I think this is the BEST one I’ve tried so far! I added some crushed walnuts, cinnamon and a little vanilla and topped it off with peanut butter and more banana! And the peanut butter actually melted when I spread it on top! It was so delicious and looked so amazing that I even took a picture of it :D! I also love your chocolate chip cookie dough but this one tops them all! And it was super filling as well!!! Keep up the good work! I love your blog and spend way too much time scrolling through all the recipes!;)

    Ive made the banana bread boat meal today and it was absolutely delicious! I added the peanut butter but next time I’m going to add some crunchy nuts too. I had it for my dinner. I felt very naughty and satisfied eating this, it was plenty sweet enough with no sweetner. It was that good I feel guilty although really it is 100% healthy. I am going to make every single recipe of yours Katie until I’ve completed the lot, one a weekend 🙂 thank you for such fab ideas, I find it a great help as I’m dairy, wheat and sugar free, thanks xx

    I wasn’t paying attention and read the recipe wrong. I added two mashed bananas instead of two tbsp of mashed banana. Came out amazing. This version made four good size muffins at 127 calories each. Thanks for the great recipe!

    Made the Cinnamon Roll Baked Oatmeal last weekend. I omitted the frosting, baked in the ramekins and popped them out of the baking dish and added fresh strawberries. Loved it, and so did hubby! Great recipes.
