Chocolate-Raspberry Fudge Bites

Gotcha!

That’s what May said to us poor folks in Texas. Throughout April, we were treated to warm, sunny weather. But May hits and—bam!—suddenly it’s pouring rain and 40 degrees!

So much for April showers bring May flowers.

In an attempt to brighten my mood, I turned to chocolate.

My afternoon snack did the trick: chocolate-raspberry fudge.

Expialidocious. Instead of making a cake, as I normally do with this recipe, I cut the fudge into bites this time. Who doesn’t love bites, right? Just looking at the photo makes me smile again. Oh, and now I want some more fudge! So that you don’t have to click back, here’s the recipe again:

Chocolate-Raspberry Fudge Bites

  • 80g raspberries (2/3cup)
  • 3 tbsp cocoa powder (16g)
  • 4 tbsp coconut butter or Homemade Coconut Butter
  • Scant 1/16th tsp salt
  • Sweetener: I like 5g agave, but my testers like 1 1/2 to 2 tbsp (20-30g)

Melt your coconut butter, then add the raspberries (I like to use frozen, thawed berries and melt them a little too) and other ingredients. (I have not tried this recipe with coconut oil, and therefore I can’t vouch for the results if you make that substitution.) Mash until it’s completely smooth, like chocolate butter. (If you wish, you can use a blender, but I never do. I just put it all in a Magic Bullet short cup and mash with a spoon. Use as frosting, or fridge/freeze. (If you freeze, be sure to thaw before eating.) This makes a very small serving (I used a mini springform for the slice in the photo), so if you want a regular-sized cake, make a bigger batch!! (Triple or quadruple for a normal-sized cake.)

(This version probably has fewer calories because raspberries aren’t as calorically-dense as bananas… but what’s a calorie-count anyway, if not an estimate?)

Unfortunately, while chocolate and raspberries work wonders for one’s mood, they have no effect on brightening dismal weather. It continued to rain all day… with more rain predicted for tomorrow. Yuck.

But before my great escape, I managed to make some yummy things in the oven. You might have heard me talking about these mysterious yummy things, yesterday, on Twitter. 😉

    I’m excited for desserts! cake batter donut will be delicious to have this week. I might make fudge bites too, but argh, it”s just so much at one time! lol. But wow, I have a paper to finish 🙁

    When I am stuck in the house all day, I can feel myself getting lazier by the minute, and I HATE it! LOL! If it’s planned, I’m ok, but if it’s because of the weather or something like that, I get so irritated!

    RAIN!>!!? EW EW! i wish i could send you the sun over here!!. um LOVE FUDGE- even better when its bite sized because eating lot sof little bites seems less naughty than eating a giant piece- even though Id probs eat the whole batch anyways! um this week sounds like a DELICIOUS LINEUP!

    Mary Poppins was one of my favorite movies as a kid, along with Cinderella.

    Haven’t seen Mary Poppins in ages! I think my favourite parts are still the ones that involve Bert, however you spell his name. 🙂 The chimney sweep! I loved when they went to that world in the pavement picture, haha.

    And yes, you’re definitely not alone in terms of feeling like you’re going insane when stuck inside all day. I even get cabin fever like that when I’m sick and am supposed to stay put! Haha, it’s good to hear that you got out, even though the weather was blah.

    I had my wisdom teeth removed on Saturday and I’ve been stuck inside for the past three days! It’s awful. It’s rainy here too, and I’m going stir crazy. Can’t wait for my chipmunk-sized cheeks to go back to normal so I can get up and exercise…

    Usually I feel stir crazy when I’m cooped up inside all day (like yesterday!) but I actually enjoyed it — laying around and watching tv was the perfect way to start my week! 🙂

    I am studying for finals all week so I’m feeling very stir crazy, especially because it’s so sunny and pretty out (though still sort of cold…low 50’s, wind) in Boston. I’m sitting in the living room with all windows open and blinds pulled up though, trying to feel a little outdoor spirit!

    I have to be outside…I am completely dreading my 3-day long car trip next week. 3 whole days stuck in the car while I look around outside and see beautiful, Spring weather and all the budding flowers….blech!     Worst was inpatient treatment… nine weeks of not going out much at all. I swear, going to the grocery store seemed exciting after that! :L

    We had similar – 27C summer last weekend and now still sunny but cold and with a bitter gale force (feels like) wind. Not good.
    I hate being cooped up; when we had mental amounts of snow, I walked up to do the horses, just to burn off some energy!
    And I loved Mary Poppins – me and my sister used to watch it every day. I think we knew all the words 🙂

    DESSERTS <3 My favorite! I'm so excited for the donuts!
    I've been meaning to ask you how you would recommend I use cocont butter. I finally nabbed a sample packet while I was in California. I've been hesitant to buy a full jar because it's so pricy and I wanted to try it first. How would you recommend I use the two tbsps? You are coconut butter queen after all!

      Oh my gosh… two tablespoons… that’s like a tease… how on earth can I pick just one favorite way? Too hard!!! Next question please! 😉
      I’m thinking, you gotta try a little straight-up, first. And then… well, I’d say this fudge, but you need more than 2T. So… either on pancakes or as melties. Or raw macaroons. Or mixed with melted banana and then spread on toast. Or… oh wait, that’s way more than one idea. Oops!

    For me, Gotcha is a game I just learned where a group of people stand in a circle with one palm open in front of the person to their left and their right finger hovering over the open palm of another person’s hand in front of you. On the count of 3, you try to catch the finger that’s hoverinh above your hand, and you try to prevent your other finger from being caught.

    OK – made the raw fudge cake tonight. Made a few changes to give it a protein boost. Went with: 1 TBSP cocnut butter, half banana, 1 TSP cocoa, 1/2 scoop chocolate protein powder, and about 2TBSP greek yogurt, couple drops stevia. Frozen chocolate fudge heaven. Keep those ideas coming!! Love this blog!

    I’ve been known to get some mad cases of cabin fever, too. On weekdays, when I’m home alone with my youngest child, I actually look forward to our walk down to the bus stop to get her brother in the afternoon. The daily dose of vitamin D peps me back up again.

    But, on rainy days, I dread it. I’ve gotta strap Hayden in her car seat and drive down to get him, unless its only a slight sprinkle. Then, we have fun with our umbrellas.

    Love Mary Poppins! I consider my purse to be my “Mary Poppins bag”! I’ve been known to pull all sorts of stuff from there! Haha!

    I definitely go stir crazy if cooped up all day! I have to get out at least for a little while so I can breathe!

    I spent from december until march inside. It was just way too cold for a brand new baby. Yeah, I think it might have made me a bit crazy.

    I am currently waiting for a ‘triple the recipe’ to freeze right now. I also used coconut oil….and a very tiny sachet of decaff coffee (in place of a certain amount of cocoa powder) as my boyfriend hates caffeine but loves the taste of coffee. I tasted the mixture before putting it in the freezer and wish I hadn’t =( doesn’t taste very good so I reckon that was a huge mistake!
    I hope it will be better once it has settled and such.
    I will keep you posted!

    WOW! i made these delicious drops of heaven (choc rasp fudge bites) and they look exactly like the picture!! so quick and easy they literally melt in my mouth!! everyone considering making these definately should! EAT YOUR HEART OUT KATIE! XX

    I like that their is snacks , food that are healthier for some of us who have to & the ones that really can’t tell they are eating healthy without losing flavor !
    I don’t miss the things I can’t have . When I go out I eat a little before & pick carefully depending where I go. @ family events I bring some stuff I know I can have since I know I’m asked to bring things I know I can’t , but I still enjoy making them for family .

    Hi Katie,
    Your chocolate-raspberry fudge bites look DEE-LISH! I have a question though. How does coconut oil differ from coconut butter? I have a jar of something labelled coconut oil and it’s white and solid. I REALLY want to make this recipe and will probably use what I have because, although I live in France (SUPPOSEDLY the gourmet capital of the world!), it’s very difficult to find anything that’s not garlic, frogs’ legs or chickens’ feet!!! (Well, almost!)
