Chocolate Zucchini Muffins

There’s a zucchini in my dessert!

I love zucchini: the taste, the color, even the name. (It’s fun to say, right?) Therefore, it is only natural that I’d enjoy zucchini paired with one of my other great loves: chocolate!

In general, zucchini lends moisture and softness to recipes without leaving an offending flavor. So, although it might sound strange, the squash makes a great addition to desserts.

I’m not the only one who likes zucchini in her desserts. My friend, Lindsay, does as well. And if Lindsay likes it, it must be good… because Lindsay is a best-selling cookbook author!

Lindsay and I first became friends through our blogs, and I’ve been so excited to watch my sweet friend flourish into a vegan-cookbook phenom. You might know her super-cute blog, The Happy Herbivore. Today, I am honored to have Lindsay as a guest on my blog, highlighting a recipe from her cookbook—Chocolate-Zucchini Muffins!

In Lindsay’s words: Moist and chocolatey, you won’t believe that these muffins are healthy, almost completely fat-free and have a veggie slipped in! This is also a great way to use up all that leftover summer harvest zucchini!

Chocolate Zucchini Muffins

Servings: 12

  • cups whole wheat pastry flour
  • ¼ cup unsweetened cocoa
  • tsp baking powder
  • ¾ tsp baking soda
  • ½ tsp salt
  • 1 tsp cinnamon
  • 1 whole banana, mashed
  • ½ cup raw sugar
  • ½ cup unsweetened applesauce
  • ¼ cup non-dairy milk
  • 1 tsp vanilla extract
  • 1 cup shredded zucchini
  • ½ cup raw sugar (optional)

Preheat oven to 350F. Grease muffin pan and set aside. If using paper liners, lightly spray inside of liners with cooking spray to prevent sticking. Whisk flour, cocoa, baking powder, baking soda, salt and cinnamon together. In another bowl, cream mashed banana with applesauce and sugar (use extra 1/2 cup for a very sweet, dessert-like muffin). Add in soymilk, vanilla, zucchini and any other optional add-ins you might like such as vegan chocolate chips or chopped raw walnuts. Stir until evenly combined. Add flour mix to wet mix in 3-4 batches and stir until just combined. Spoon batter into greased muffin pan and bake 18-25 minutes, or until a toothpick inserted into the center comes out clean.

Chef’s Note: These muffins store well both in the fridge and freezer & the raw sugar in this recipe may be reduced to 1/2 cup.

    Mmmmmm I love Lindsay’s recipes! My mom and I are awful gardeners but our neighbors are generous enough to give us their surplus of zucchini. I love shredding it to make raw pasta noodles and topping it with marinara sauce and nooch.
    My favorite muffin flavor is probably pumpkin. Actually, anything pumpkin is my favorite.

    Chocolate in zucchini bread???? When I was a kid, my mom used to make zucchini bread that was to-die-for! Can’t wait to try this! I loooooove zucchini. I use it in so many things. Lately, I mostly use it as a raw pasta substitute, or in raw miso soup.

    My favorite DAILY treat is an adaptation of Elana’s Pantry Chocolate Chip Zucchini Muffins. I just add more zucchini (tip from HH!) and flax seed instead of eggs and oil then add a little less agave, which sweetens it perfectly, and it comes out a gooey mess!

    I have three favorite ways to use zucchini. I LOVE it sauteed with red peppers and onions, I enjoy it “spiralized” and served with pasta sauce, and we have a fabulous chocolate chocolate chip zucchini bread recipe.

    Mmmm, I love zucchini! Bread, muffins, raw pasta, ratatouille, you name it. In the summer I could (and often do) eat plain ol’ sauteed zucchini for dinner every single night and not get bored because it’s just that delicious.

    My very favorite muffins will always be lemon poppyseed, though . . . still gotta try your recipe! 😉

    My favorite use for zucchini: mini carrot-zucchini muffins that are so good the neighborhood kids come and ask me if I have any for them! Also I love it sauteed with a little garlic and olive oil. Yum.

    Eeeee… you know THAT Linndsay! Wow! I love her book; it’s sitting on my kitchen counter right now (because I didn’t put it away after making dinner last night.) That’s not to say I couldn’t use another one to gift to someone. 😉

    As for cougette/zucchini, chocolate cake is the recipe everyone loves most around here, but I like it best in a courgette/zucchini orzo pasta dish. It’s so subtle and delicious!

    So it may not be toooo healthy, but every summer for as far back as I can remember, we would have fried zucchini sandwiches. You put the fried zucchini with lettuce, tomato, onion, horseradish sauce, and may all on bread. Probably horrible for you, but soooo amazingly delicious! One of my favorite memories of summer!

    And I love blueberry muffins and chocolate chip muffins! 🙂

    I love zucchini in almost every way, sliced into “noodles,” stir-fried, roasted, grilled, steamed, or baked into goodies. Lately, I’ve been enjoying it sliced thin and sprinkled with some nutritional yeast, salt, and onion powder (and any other spice that catches my fancy :)). So yummy! Thank you for your blog, Katie!

    I love grilled zucchini and zucchini in stir frys! Actually, I love it no matter how it is prepared. I’ve made baked goods it before but not very often.
    Don’t enter me for the cookbook, I have it. Can’t wait for her next one! Though between all your fantastic recipes and Lindsays it makes it pretty tough to decide what to make next!!

    Those look so yum! Looks like I’m doing some baking today (or maybe this evening after things cool off!) I love love love zucchini bread, who doesn’t! There is a cake that a local bakery makes here called “Spring Fling” cake that is out of this world and uses Zucchini. It’s not vegan, but I am sure it can be modified. It’s topped with a beautiful arrangement of fruit that makes it almost to pretty to eat!

    I love love zuchinni! My mom taught me this recipe where it’s simple yet delicious as a side. You slice up the zuchinni as a you would a cucumber and cook it on the stove. On the stove you have a mixture of balsamic vinegar, olive oil, and some Mrs. Dash. Mmm they become to moist yet crunchy and delicious!
    I love cookbooks as well though ;D

    I’m a big fan of grilled zucchini–it’s on the list of veggies I haven’t put in a baked good yet (and that’s a short list!) I’m actually attempting an eggplant bread-pudding, in the oven right now, maybe zucchini would work in that too?

    I used to work at a cafe all through high school and the zucchini muffins were by far my favorite – tasted even better when toasted with a smear of butter. For some reason it was one of the least popular (blueberry and double chocolate were always sold out) so I was always very happy to take all the leftover zucchini muffins home at the end of the night. 🙂

    We once had a cat named “Zucchi”! I love zucchini raw, grilled and in chocolate zucchini bread (yum!). Zucchini is great in a savory breakfast muffin, too. I’ve followed Lindsay’s blog for years and I ordered the book, but it sold out. I noticed that the book is back in stock, and Amazon never bothered to fill my order. Hmmph!

      Hi Christina! When the first edition of the book totally ran out, Amazon cancelled all the outstanding orders (you should have gotten an email notification from Amazon). The second edition has been here since April, but you’ll have to create a totally new order. I’m not sure why Amazon did it this way–sorry for all the run around. You can find the book in B&N and other book stores.

    Wow I love all the ways you use vegetables and chocolate together and these muffins sound delicious. My favorite way to eat zucchini is definitaly grilled or made by my friends mom in her mutant sized zucchini bread because her zucchini comes straght from their garden. soooo goooood.     I love to use zucchini in cookies and bread. But…..mostly I just cut it up in salads. It also tastes fabulous in a sauce for pasta. So, I eat it all kinds of ways. Oh, and it takes ever so delightful in a blender based soy smoothy! Yummo!

    I love zucchini…my mom breaded and fried it in oil. Tasty but not exactly healthy. I love to just spiralize it and use it as pasta. I’m really not a muffin person…except for cranberry orange! Super tasty. I love sweet and tart combinations.

    My fave way to “fix” zucchini is by slicing it in 1/3 planks, tossing with EVOO, roasting at 400 for 20 mins, tossing with S&P and red pepper flakes. I think it’s pretty tasty, and my husband loves it! HH is an excellent blog, I’d love to win the cookbook! Thanks for all you do, Katie!

    My favorite use for zucchini as of late is to grate them in the food processor and add them to turkey burgers with italian herbs. It’s an easy way to make my hamburger-loving family eat a far leaner burger with a hidden veggie they’d never touch otherwise.
    Also, my favorite muffin flavor is bran. Boring, I know, but bran muffins are so good warm! Nutty, moist, and slightly sweet but not in that Otis Spunkmeyer heart attack muffin way.

    I definitely like making zucchini muffins! Well I like baking and general. And adding vegetables to it makes it strangely more fun, lol. My favorite muffin..depends on my mood XP I usually don’t like chocolate flavored muffins, but like muffins with chocolate in them. Otherwise, blueberry! or banana nut on occasion. I could never eat poppyseed, the texture weirds me out!

    Sweet potato blueberry muffins or rhubarb hands down! Zukes, lightly grilled or sauteed with leeks and summer squash with fresh basil and oregano, with Daiya mozz cheese lightly sprinkled on top!     coincidence -i just made a zucchini-eggplant-onion-cannelli bean stir fry for my mom and i today, we put it on top of rice pasta and it was pretty good! even though we undercooked the pasta and it was kind of crunchy…and i had the vegetables on the stove top too long and they shrunk hahaha

    There is a naturally vegan muffin that my mom makes without knowing it’s vegan. It has dates, walnuts, cardamum. It is so flavourful and middle eastern tasting and it’s chewy and moist. Im drooling just thinking about it. But chocolate zucchini muffins sound pretty darn good too.

    I’ve yet to use zucchini in muffins! Do they really change the taste that much? Or is it just to “hide” veggies? Anyway..my favorite muffin recipe is lemon poppyseed!! Classic 🙂 It reminds me of my childhood.

    i am usually a zucchini hater, but i love it in baked goods, especially zucchini bread!
    my favorite use though is at hugo’s tacos in studio city, ca. they make an amazing potato, soy chorizo, and zucchini filling that you can get in tacos, burritos, tortas, or pretty much anything else you can think of. so good!

    My boyfriend’s family steams zucchini and we put cheese over it. It is delicious. Zucchini bread is so good, too.

    It’s too hard to choose whether I love Lindsay or zucchini more! I love grilling zucchini for savory preparations but for sweet, nothing beats a warm slice of zucchini bread with chocolate chips and walnuts right from the oven mmmm 🙂

    Zucchini Rosemary soup is one of my favorites-‘tried it on a wine tasting tour in the Finger Lakes in NY and loved it. Zucchini grilled, in baked goods, and fritters are also great. I love that Lindsay’s style of vegan cooking is low or fat-free yet really delicious–the healthiest!
    I’ve gotta try that grasshopper pie!

    How to choose? I love the pickle relish my mother used to make, I also love it stuffed and baked and I love it with onion and mushrooms in a little olive oil or just grilled. How about in zucchini bread? All of this from a girl who never liked squash! Now it looks as if I will have to try some new ones!! Thanks for the inspiration!

    Ahhh I’ve made these before!!! Love this recipe! Chocolate zucchini is defintely one of my favorite muffin flavors. I know this sounds weird, but one of my favorite uses for zucchini is in tofu mousse. I add it to chocolate tofu mousse and it’s sorta like chocolate zucchini muffin batter. I know that’s a bit of a stretch, but it works for me!

    I’ve always found using zucchini for anything other than baked goods just lacked the flavor punch I want. Any tips? And favorite muffin flavor would have to be a warm, fresh lemon poppy seed with lemon icing….melt in your mouth deliciousness 🙂

    Oh you know I’m gonna try making this. I’m thinking to try upping the veggie count by adding cubed, steamed kabocha. Maybe top with sesame seeds. Mmm….. I just finished cutting a bunch of kabocha into fry and chip shapes for shorter prep, and I think a few pieces would be glad to make it into cupcakes!

    heck to the ya, chocolate and zucchini!! 🙂 my favorite thus far has been zucchini bread, but i’m thinking that would change if i were to try one of these muffins Lindsay has baked up. i think my favorite kind of muffin in general is a tie: a chocolate chocolate chip one, or a coffee cake style one with that crumbly stuff on top. that crumbly stuff is AMAZING!! 🙂 and CONGRATS, Lindsay on your cookbook! 🙂

    I’m a gardener…. so you know I must end up putting zucchini into EVERYTHING! Some days when I’m lazy I grill large slices. Then I layer them into a casserole to use for lasagna instead of noodles. It’s really good that way!

    I love zucchini many different ways. I love it roasted with other veggies like onion, tomato, eggplant, mushrooms, etc.

    I love it made into spaghetti noodles. I love it steamed with very little flavoring so I can taste the squash.

    I love any zucchini bread recipe. Zucchini is so versatlile, I’m so glad it’s one of those easy veggies to grow.

    And I do love Lindsay, her website and her recipes!

    My favorite muffin is probably blueberry.

    Honestly, my fav use for zucchini is a toss up between plain ol steamed (omg yummmmmmmers!) and maybe zucchini bread/muffins (tastes a lot like banana bead to me and gets yer veggies in at the same time!)

    My favorite muffin is cranberry orange.. or MAYBE, almond poppyseed.

    And I tested for Miss Lindsay for her upcoming HH cookbook – I love her too! I had so much fun testing for her, and actually found myself loving some recipes I never would have thought of… or thought I would have liked 🙂 Expanded my palate a bit, she did! 🙂

    My favorite use for zucchini is zucchini bread. It’s so flavorful and moist. Can’t beat it. My favorite muffin may be Cinnacrunch Muffins from the American Vegan Kitchen cookbook. Man! Those muffins are heavenly. I took them to work and no one guessed they were vegan. Even my sons, who do not eat a vegan diet, loved those muffins. 🙂

    I made these muffins this morning and they were delicious! I did NOT use the optional 1/2 cup sugar so they were barely sweet. I wanted just a touch more sweetness so I added a thin layer of chocolate frosting – I call it Minimalist Chocolate Frosting. Quick and easy. I’ve posted it on my website along with a photo of how great this muffin turned out!

    I’m not sure if this is still going, but I figure I may as well give it a try. I like to slice zucchini with a vegetable slicer, saute it with some onions, and sprinkle with pepper, salt, red pepper flakes, and parmesan cheese. Favorite muffin is most def blueberry. And I looove her cookbook title and the healthy spin!

    My favorite thing to do with zucchini is roast it. Slice it thick, toss on some olive oil, salt and pepper and put it in a 425 degree oven for 16 minutes (flipping halfway). Of course, in baking, zucchini bread it always nice.
