Too many brownies!

Yes, there is such a thing.

On Thursday afternoon, I embarked on a quest to create a delicious-yet-healthy fudge brownie recipe. But that meant a lot of experiments.

The first batch was too dense, the second too gummy. And the third wasn’t chocolate-y enough.

There was even a fourth batch. Luckily I had Sarah to help.

You’d better believe we taste-tested them all! Sounds like a fun job… but by the fourth pan, neither one of us even wanted to look at another brownie! On the fifth try, we think we found a winner. You know those two-bite brownies?

I’ve never actually tried two-bite brownies. But Sarah has, and she says batch 5 of our brownies remind her of these. Maybe it’s because, tired of baking pans of brownies, we cooked them in mini muffin cups? I’ll get the recipe posted next week—maybe Monday or Tuesday. In the meantime, here’s a photo:

    Hey I love your sugar free recipes the best, since I can’t eat sugar and I am searching for a sugar free recipe for chocolate brownies… an avid follower of your blog but have noticed that a lot of your recipes recently have had sugar in them and I’ve not been able to make them sugar free! 🙁 …

        Yes, I’ve tried that, I love stevia and use it to sweeten everything, and have tried xylitol too but couldn’t get the texture right … as you know it can take a few tries, right? so I am still searching… closest I got to a good result was subbing stevia and pumpkin for a little bulk….. However success, I did try subbing stevia for the Agave in your raspberry chocolate yummy raw fudge bite thing and it was to die for… still got some in my freezer nom nom 🙂

    Mmmm these look so good, I love those little bite brownies! They are addictive. Whenever I get them from the store I can’t stop popping them in my mouth!

    Please, Katie: Open a restaurant already… or a dessert parlour.

    Hmm I have to say that there is such a thing as too much dessert, IMO… Too much of anything is bad. But in moderation everything is healthy, right?! So even though “too much” might not be good, “some” is definitely awesome. And if the “some” of that dessert is a recipe by you, all the better~ It’ll be guaranteed to be delicious and not only ten times tastier than traditional desserts, but ten times healthier too.

    This comment seems contradictory. D: Well anyhow… looking forward to the recipes!

    I can’t wait for all of the desserts to come. There is definately no such thing as too much dessert!… Well maybe there is but there’s definately no such thing as too much healthy dessert!

    NEVER! Brownies are one of those foods that I could eat forever. Although I’m sure after baking that long, I would be tired of them as well.

    ooh- i love the concept of 2 bite brownies! and the fact I can portion them in muffin tins makes it easy and fun too (and gives me an opportunity to decorate them and/ or “frost” them with peanut butter =) )
    cant wait for the recippe!

    I think you can have too many desserts. Some times too much sweet food can make you sick. For me, I crave salty food after too much sugar.

    The brownies look good. It is a good thing it only took 5 tries to get them right even though it sounds like a lot.

    Yum! I can’t wait for the recipe! But I know what you mean by being brownie-d out. That has happened to me before, with some of my favorite foods.You want to like them again, but you can’t

    mini chocolate lava cakes 😮 Those sound amazing. And in the case of taste testing, I do think there’s such a thing as too much because if it doesn’t taste right, eventually you’ll get sick of trying them because it won’t be as enjoyable. I don’t think there’s such a thing as too many good brownies like the ones in your teaser picture though!

    I MADE BROWNIES YESTERDAY TOO!! I knew we were secretly twins 🙂 I did have a bit of a brownie overload yesterda- something I never thought possible! 😛

    I can’t WAIT for the recipe though!! And for mini chocolate lava cakes?! What what they sound like the best thing EVER!! 😀

    Yes, definitely a thing as too much! I made chocolate cake yesterday (trying to come up with a sugar-free vegan chocolate cake recipe) and it was way too dry and bitter. Which means I have to keep testing…although I think if I crumbled it up and added a sweetener, I could use it as a perfect base for a chocolate cream pie for friends…Hmm…okay, back to the kitchen!

      Totally, me too, closest I got to success was a little bit of pumpkin puree and stevia, but it was still on the rubbery side, I’m going to try that again nonetheless except this time lower the oven temperature and maybe cook it slightly less long, it was so almost!

    Brownies are my favorite dessert! I can’t wait!!!!!!!!!!!!!!!
    But I totally know what you mean. I usually don’t even eat cookies on Christmas because I have taste tested at least 78 of each kind the week before.

    Mini-chocolate lava cakes…those sound tasty…along with everything else you ever mention!:) I wanted to let you know I tried fudge brownies with black beans. I used a recipe adapted from Happy Herbivore which called for bananas…I think next time I would leave out the bananas but we shall see. I think they are still post worthy, just not my fav…recipe to be further explored!:)

    I appreciate all the effort and money you put into this!!
    And yes, there can be such a thing as too much dessert or too many brownies. But having said that, I prefer savoury over sweet any time, although I like to have treats 🙂
    Did I mention I made Mint-Chocolate-Chip-Cookie-Pancakes for breakfast? Just added peppermint oil to the batter and they were divine!

    Ooohhh….i love mini things. I think it’s a thing you have when you’re a child…little dolls, miniature houses and little animals. Those muffins may be a god lunchbox option for next week 🙂

    There’s never such a thing as too many brownies…as long as there’s some vanilla ice cream to balance out the chocolate!

    Out of curiosity, how many times does it usually take you to perfect a recipe? Are there a great number of “not quiiiiite’s” that you go through?

      Usually I am lucky, and it’s good on the first try! I just throw a bunch of yummy-sounding things together and see what comes out. In this case, though, I had an idea of what I wanted… so even though the first two results were pretty good, they just weren’t what I’d imagined!

      Hey I must try that… baked your bitter chocolate cake already and love it… in fact, that and Katie’s raw chocolate-raspberry fudge cake and of course fudge babies are the only recipes I’ve made from blogs so far, since I started to get into baking after quitting sugar last year… And I’m not kidding, they are sooo to die for… thanks!

    In general, moderation is my approach to life but yes, I can O.D. on desserts and sweets even though I joke about there never being enough chocolate or sugar for me 🙂

    But yes, there can be. I feel especially icky if i eat too much sugar and sweets without eating plenty of fresh produce. And the funny thing is, when I am eating plenty of fresh, usually raw, produce, my sweet tooth craving is lower. So it all goes hand in hand.

    It takes a lot, however, for me to say, whoa that’s too much chocolate. I would have loved to help you be a taste tester 🙂

    I’ve done the same thing with cookies when recipe testing. Even when keeping the batters super small, there IS such a thing as too many baked goods! Especially when living alone and not having a boyfriend, dog, or family member to eat them.

    Sadly, I too have experienced “too many dessert” syndrome. It’s not the happiest place, but there is something pleasant about having an entire stomach filled with baked delights that makes the world seem a bit better 😉

    I love love love me some brownies! I was totally late waking up this morning & by the time I go to my favorite (vegan, gluten free, no sugar) dessert stand at the farmer’s market, the double fudge brownies were all gone! 🙁 THE HORROR!

    Unfortunately, I’ve learned by experience that there is a limit even with dessert. 🙁 Too much halloween candy + little ten year old body = very unhappy tummy. But that limit is very flexible, and brownies are oh, so good. 🙂

    Despite popular belief, I firmly believe that there is such a thing as too many brownies! I can attest, from brutal delicious brownie experience. Yeah…. 6 brownies? Not a good idea….

    It’s hard to go overboard on ice cream, (nondairy), but there is a limit (it’s when you can’t feel your tongue anymore, it’s so cold!)
