Blueberry Pie Pancakes – SUPER ginormous fluffy blueberry pancakes recipe… with over 200 positive reader reviews!

Blueberry Pie Pancakes Recipe

Pleasantly Plump.

One might use these words to describe the blueberries I recently purchased at Whole Foods. I’m always excited when summer rolls around and organic blueberries no longer cost an arm and a leg. And a pinky toe. Sadly, the lower prices don’t last forever, and I therefore make it my mission to eat as many blueberries as humanly possible while they’re available!

Here’s one of my favorites: Healthy Blueberry Muffins – soy-free / dairy-free / egg-free.

Today, however, I wasn’t feeling the muffin vibe. And so I spent the entirety of my run dreaming up new ways to incorporate blueberries into breakfast. Finally, I settled upon blueberry pie pancakes. Just think about it for a second… blueberry pie in pancake form. How could you possibly top that?!

  • 1/2 cup blueberries
  • 1/3 cup flour (ww pastry, white, spelt, or Bob’s gluten-free)
  • 2 tbsp rolled oats
  • 1/2 tsp cinnamon
  • 2/3 tsp baking powder
  • 1/8 tsp salt
  • 1/2 tsp pure vanilla extract
  • 1 tbsp sugar or 1 packet stevia
  • 1/3 cup milk of choice
  • Unless you like the taste of fat-free pancakes, add 1 tbsp oil and reduce milk by that amount.
Total Time: 10m
Yield: serves 1 person

Combine dry ingredients in a bowl, then add wet. Mix, but don’t overmix. Cook on an oiled (or sprayed) pan, on low-medium, flipping each pancake once. Top with syrup, powdered sugar, or Cashew Cream. Or you could even boil some more blueberries (with a bit of sugar, if you wish), and smash them, to make a compote.

Edit: Although I had not yet started including nutrition facts at the time of this post, the stats for this recipe should be pretty similar to the nutrition facts for my Pineapple Upside Down Pancakes.

I love big fat fluffy pancakes!

and Katie, these photos are beautiful, you are a PRO at photography now, aren’t you?

    1. LOL no no no! I wish! I still have to rely on the editing process a LOT! Someday…

  2. Holly @ pink runner says:

I love blueberries ! Those pancakes look soooooooooo good!

  3. Michaela says:

LOOOOOOOOOOOOOVE blueberries!! I absolutely adore them! I prefer eating them plain, but I also love them in muffins or pancakes. It is funny you are posting this recipe now, bc I made so many variations of your cookie dough pancakes, and one included blueberries instead of chocolate chips 😉 yummi! The only sad thing is that my supermarkets are currently out of blueberries 🙁

    1. Oh my gosh, that probably would’ve been even better… I think I like that cookie dough pancake recipe even more than this one. Haha you are much smarter than me. You should’ve told me! I wouldn’t have needed to experiment in making up a new recipe ;).

      1. Michaela says:

I´m sorry, hopefully it didn´t take you as long as creating the brownie bites! I created so many variations of those pancakes, even one with peppermint extract which turned out awesome, and also one with lemon juice and poppy seeds. You really can use the cookie dough pancake recipe as the base for EVERYTHING!

        1. Oh lol no, this one I got right on the first try, thank goodness! Those brownies were a pain! So many trials! I wasted so much cocoa! 😕

  4. Gloria says:

Those look delicious! I love blueberry pancakes.I can’t wait to make them for breakfast tomorrow morning 🙂

  5. Karen Faivre says:

Hot damn those look good! Now I know what to do with the package of blueberries I just picked up (beside using them in smoothies).

  6. liz says:

Those look amazing. Like seriously amazing.

I always freeze blueberries whenever I see them on sale, and just drop them into my smoothies. Less ice = more blueberry flavor.

  7. Mellie says:

I don’t really like cooked blueberries, but I like that these pancakes are fat. Our recipe we use is really good but the pancakes are thin, so I want to try this.

  8. Mowenackie says:

I’m not sure it’s legal to be from Maine and NOT like blueberries. I love them. The good thing is they freeze well, so you could stock up during the summer when they are cheap and still use them for baking in winter. Blueberry goodness year round! I love them on breakfast quinoa. And in smoothie popcicles. And just by themselves!

PS Have you ever had chocolate-covered blueberries? So good!
I bet you could make a healthy version! (hint hint…)

    1. This is going to sound crazy, but I actually don’t think I like chocolate blueberries! Probably because I don’t like dried blueberries. I was all excited to try the Endangered Species chocolate-blueberry bars, but I sadly didn’t like it at all!

  9. Vivianne says:

I LOVE BLUEBERRIES! I should really start stocking up!

And for the first time ever (!) I think I have all the ingredients to make these!

  10. Oh. My. Gosh. These look amazing!!! I’ve never had fat pancakes but I hope to have them soon! They look like the perfect Saturday morning treat!

  11. Sarah C says:

I am definitely an overachiever. Know why? Cause I already made these, that’s why! 🙂
How were they? Um I wish I could show you a photo of my empty plate! I licked it clean!
They made a delicious lunch! 🙂

  12. Stephanie @ StephSnacks says:

With tons of Syrup?? I’m game! Your creativity never ceases to amaze me!

  13. Nicky says:

Ahhh I am in LOVE with blueberries at the moment! And I recently tried my first pancakes and want to make more so you just gave me another recipe – I’m doing this ASAP! YUM!

  14. Holly @ The Runny Egg says:

I love blueberries — in breads, pancakes, muffins, in fruit salads, in salads, in anything. They are so good and so cute!

  15. Serena says:

These look delicious. I love blueberries. So much that when I was little I overdid it and actually go sick. 🙁 But that didn’t kill my love for blueberries. 😉
One of my favorite things to eat when I was a kid was blueberry bagels with a thick cream cheese spread. I also love cakes, pancakes, you name it. 😉

  16. Lenna says:

I love blueberries! They are great in veggie or fruit salads! And in smoothies and oats and cakes and yoghurt bowls…yeah, they are perfect everywhere 🙂 But they are so freaky expensive in my country, really much more expensive than any of the tropical fruits and blueberries actually grow here (whilst pineapples and mangoes don´t) so I don´t get it:(

  17. Freya says:

    They look like welshcakes 🙂
My mum is obsessed with blueberries – they’re her ‘thing’, which means if we ever get them (a rarity, they are soooo ££££!!), she gets them all! Bah.

  18. Emily says:

I dig the blueberry to flour ratio. That’s how all pancakes SHOULD be.
I love blueberry everything! Especially blueberry lemon desserts like cupcakes and muffins. My college also serves blueberry coffee. OMG.
Oh, and I know I say this everyday, but this is my favorite picture yet!

    1. Thank you so much, Emily! It’s one of my favorite photos too… but that’s not a testament to my skills. It’s just that blueberries are SO photogenic! (Much more so than dark, shadowy brownies. Ugh those are hard to photograph! :-?)

  19. O.C. says:

I loveeee blueberries! I put them oats, smoothies, pancakes, salads and pretty much anything else I can find an excuse to put them in! They are so yummy and so good for you too 🙂

  20. Faith @ lovelyascharged says:

I love any summer berries…I’m so excited to see the prices drop so I can eat them more! I found blackberries $4/4 the other day, and though I bought four boxes, I should have grabbed a few more to freeze. Oh well, lessons for next time!
