Can someone please invent the Ice Cream Diet?

Where you eat ice cream for breakfast, lunch, and dinner? A few of you told me there already is an ice cream diet. Why am I surprised? After all, there’s a grapefruit diet, a cabbage soup diet, even a No White Foods diet. So why not ice cream?

Hey, it can still be a healthy diet.

After all, there’s always this: Spinach Ice Cream.

Yay! We can now follow an ice cream diet and be healthy at the same time. So go ahead and embrace your new healthy ice cream diet right away, by devouring a gigantic serving of the following recipe for healthy mint chocolate chip ice cream. I guarantee that, by the time you finish your serving, you won’t feel hot anymore.

And if it happens to be cold where you live… please send some of your cold weather to me in Texas. I’ll happily mail you our hot weather in return!

Maybe I wouldn’t want to be on an all-ice-cream diet. I’d miss my pancakes and oatmeal too much! Not to mention salads, beans, and even spaghetti. But if I were to eat ice cream all the time, mint chocolate chip—my favorite, as a kid–would probably be the flavor I’d consume most often.

Healthy Mint Chocolate Chip Ice Cream

(Makes 1 huge serving)

  • 1/4 tsp pure vanilla extract
  • scant 1/16 tsp salt – don’t omit
  • pinch uncut stevia OR 1 tbsp sugar of choice
  • 1 cup milk of choice – See note below
  • 2 tbsp chocolate chips OR sugar-free chocolate chips (recipe on page 199 in the book)
  • 3-6 drops pure peppermint extract, or as desired
  • optional, I like to add 1 tsp cocoa powder
  • optional pinch spirulina or natural food coloring

*This ice cream has a very light texture when made with almond milk. For a creamier texture that’s more like real ice cream, use coconut milk–the kind that is full-fat and comes in a can, not a carton–or cashew cream. To make it look like real ice cream, scoop out with an ice cream scoop.

Mix the ingredients together, and pour into ice cube trays or 2 shallow containers. Freeze. Once frozen, pop the blocks out of the container and blend in your Vitamix. (If you don’t have a vitamix for vitamix ice cream, you’ll probably have to thaw longer, but you can still get a yummy ice milk. Or try this healthy ice cream in your ice-cream maker.) Feel free to add more chocolate chips, post-blending. But be sure to add the 1-2 tbsp before blending!

    Yup, peanut butter diet, I’d be all over that. But hey, if you stick to the mint-chocolate chip ice cream diet, you’re ALSO hitting up the no white foods diet–two in one! Gotta be a good thing, right?

            peanut butter-banana sandwiches are my favorite kind of sandwich 😡 It’s not even that weird-sounding..
            also, if anyone could stick to the ice cream diet, i could probably do it. i love ice cream and basically eat it every day (but not as a meal..). Mint chocolate chip was my favorite when i was younger too, but I’ve since grown to love other flavors..

    this looks heavenly with the weather we have right now too! I’d take sweltering heat over being cold any day though! I would invent the hummus diet. I eat it spoonful after spoonful all day anyways.

    Me, I’m happy with regular common sense. I just wish someone would invent a locking mechanism to put on chip bags, cookie boxes and brownie pans that only allowed you to remove a certain number of items each day before it locked solid for 24 hours.That would be VERY helpful.

      Actually there are now cookie jars that can lock you out until a certain time. I don’t have one but i wonder if that would be helpful.

    Hi Katie! Just wanted to say I LOVE your blog. it was one of the first blogs i followed. im 4 and im trying to live a healthy lifestyle ( its never too early). Most of my friends are junkies( most teens are), so its a challenge. But i think in the long run, i’ll be happy i did. You make it a whole lot easier- i mean blondies made with chickpeas that taste good, um..someone pinch me. Anyway, thank you so much for all you do and for introducing me to another fave of mine PBFingers!

    As of yesterday, you are my newest favoritest (not a word) person! Your creations are killing me because I am away from my kitchen and can’t start cooking until I return home. Also, my ADD personality is suffering as a result of clicking on link after link after link. Apparently, I start looking at one recipe and then somehow an hour later I have at least 10 windows open, all with delicious treats tempting me to sink my teeth into something sinful. I’m visiting my parents. While my parents’ pantry is never void of sweet treats, it is lacking in healthier options. I shall be brave and wait until I am safe in the warm embrace of my healthy kitchen! Can’t wait to try ALL of them out!

    That was honestly the first thing that came to mind! Though honestly, I definitely don’t believe in diets… Well, the “short-term” ones aimed at weight loss, anyway! Hopefully I’m not being too much of a party-pooper in saying that! But if it’s used to define what you eat every day, like a lifestyle, of course I’ll use the word, haha. Yours is definitely a chocolate-covered diet! 🙂 The best kind.

    So, a question that I’m sure has been asked before or in your other ice cream recipe post: if we don’t have a Vita-Mix, these ice cream recipes won’t turn out like ice cream but more like a slushie or something…? Of course I’m sure they’re still 100% insanely delicious, but just curious about how to achieve the right texture!

      Yup, they’ll be more like a Wendy’s frosty or a slushie because you’ll need to thaw the frozen blocks longer to get your blender to handle it. But I’m actually working on a Frappuccino recipe that is PERFECT for a non-Vita blender specifically BECAUSE it is slushy :).

      I tried the other day Katie’s vanilla volume ice cream (which is made the same way, with almost the same ingredients) with my food processor, and it turned out good but a bit “grainy” and not very solid (pieces were falling apart as I tried to form scoops). But the taste was great!

    I don’t understand why the government keep rejecting my application for a subsidy to buy a Vitamix: I so clearly *neeeeeeeeeeeed* one, how can they be so cruel?

    Mint choc chip has always been my favourite flavour too! I actually made the raw mint shake yesterday, using kale instead of spinach (I had none and I usually knock back a Green Monster every day so it gave me no trouble – I love the flavour!), and it was so ridiculously yummy that I ate it in a kind of blissful trance – thank you! 😀

    You should make a separate section in your recipe page just for all your ice cream recipes. I still am yet to try them, but I can’t wait until I finally do!

    An ice cream diet would be amazing. People could add chocolate protien powder for chocolate ice cream or blend spinach in. It would totally be doable and healthy! I’m down for it.

    There already is a peanut butter diet, I think it’s through Prevention Magazine or something like that. I played with some of the recipes a couple years ago!

    I have a question Katie…when you say to use coconut milk in recipes to make milkshakes and ice cream taste creamier, do you mean the kind in a can? I have been trying that trick with the coconut milk you buy in a half-gallon milk container in the refrigerated section and it doesn’t seem to make things any creamier than using any other kind of milk. Then it dawned on me that you probably mean the canned kind?

    I am so grateful to the person who invented vegan icecream. I think it was a turning point to becoming vegan when I was veggie, and I don’t even like icecream that much! I think I thought ‘oh if they can do icecream they can do anything!!’

    Ice cream diet is totally feasable. For breakfast have a “banana soft serve” parfait! Got the idea from Angela @ Oh She Glows. You just have to puree frozen bananas with whatever add-ins you want! Add in all your fabulous recipes and others floating around… I don’t think we would have to repeat a meal for MONTHS! Haha!

    I hate mint but I’d go on an ice cream diet anytime. I actually do it sometimes when I crave ice cream so often that buying small packages just isn’t worth it. I buy a huge box and eat mostly ice cream until I see the bottom 😀 .

    I just got an ice cream maker for Christmas and when thinking about what I wanted to make I remembered that you’ve had posts about ice cream! Have you ever tried it in an ice cream maker/do you know of anyone that has? I don’t know if it would work the same. I’ve been looking at all different recipes online and some have people combine different ingredients together and let them sit before mixing all of them together (and chocolate chips last). I’m just hoping to be able to try some of your recipes since they sound the best! And since my dad is blaming my recent baking/cooking endeavors for his holiday weight gain! =)

      Michelle: If you read the comments, yes others HAVE made this recipe.
      As for what could’ve gone wrong with yours, did you use a Vita-Mix? And what kind of peppermint extract did you use? There’s a big difference between pure and immitation!

    I love this recipe!! It’s my new favorite after dinner snack. I have been using vanilla instead of peppermint (because I don’t have any) and I don’t blend it. I put it in the freezer about an hour before I plan to eat it and it ends up being more slushy than ice cream but it does the trick!

    So I started looking around your web site. Love it!

    Just one little note! This Mint CC ice-cream saddened me that you had to put coloring in it just for the photo shoot! I think it would be just as beautiful without the green coloring! Because I am an all naturalist it really made me unhappy to see that. Would love to see the one you make without the coloring. Coloring in food actually looks very unappetizing!

    This is AWESOME ! I absolutely positively DETEST bananas, and it makes me so angry because they are so good uber good for you!! I have tried dozens of ways to incorporate bananas into things, so I can get the benefit of their goodness without having to taste the banana flavor. Until now, I have not had any success at all. However, I am now happily sitting here sipping a chocolate mint shake, with the benefits of banana AND spinach, and cannot taste the banana one single little bit! Thank you soooooooo much!!!     I have a question…do you know if you’re able to make a big batch and store this in the freezer, or must you serve it right away? There is an ice cream making technique I read about recently (that does not use an ice cream maker) that is very similar to what you do here – make the ice cream base, pour it into a container or freezer bag, then break it up and process until smooth in a food processor or blender. But then, instead of serving right away, you pour it into a container and pop it back in the freezer and freeze until firm. I’ve only seen this done with dairy ice cream bases, but I’d love to be able to do it with almond milk. It’s almost exactly the same technique, so I don’t see why it wouldn’t work – unless there is a significant chemical difference between dairy versus nondairy milk that might cause it to emulsify differently in the blender. Any thoughts? Thanks!! <3

    1: when it freezes, does it become really icy? I really want creaminess!! 😀
    2: can i use a blender?

      Oh never mind I just read the comments. I made this the other day and even though it wasn’t all the way frozen I took it out of the freezer when it was a little slushie but I couldn’t wait to eat it! And it was so good!!!!

    Why do you freeze before putting in the Vita MIx? Can you put all ingredients in the Vita MIx and make ice cream that way?

      What Katie said. 🙂 The Vita Mix isn’t an ice cream machine, just a high-powered blender. You can do this recipe in an ice cream maker (I have), but if you don’t have one you need to freezer the mixture first and then put in the Vita Mix to get the texture of ice cream. Hope that helps!

    I love you for this recipe! When I was pregnant I craved mint chocolate chip ice cream all the time!!! I live in Guatemala though and I’m not sure if I can get peppermint extract but I can get fresh mint. Any ideas on how I could use fresh mint or make my own extract

    Love your site Katie! Just a question for you…i’ve tried to make a few of the ice cream recipes and i use a vitamix…but as soon as i start to blend, it just immediately turns to ice chips/grainy slushy consistency no matter how long i blend. i have been using almond breeze almond/coconut milk..and that’s the only different ingredient than you that i used. any tips? thanks so much in advance and thnx for all these great recipes!

    Silk products DO have a form of ‘soy’ in them!!! Namely: d-alpha tocopherol is soy! ……..(‘dl’ -alpha tochopherol is the synthetic form, ‘d’ is the soybean oil or wheat germ form).

    Chocolate-Covered Katie, I think I just fell in love with you… I am lactose-intolerant, I don’t have an ice-cream maker, I have 4 siblings who eat ice-cream all the time… and I just sit there and watch, dying a little inside each time.. I LOVE ice-cream… (and chocolate) !
    And your recipes are AWESOME!! I never knew making ice-cream was so easy! I have become totally obsessed with your website!     I love this! It is one of my go to snacks. Mint chocolate chip was my favorite ice cream when I ate ice cream. As soon as I get an ice cream maker, I will try yours! In the meantime, this is delicious

    These actually all exist! My fave is the chocolate diet.

    They fall under mono diets and can help you drop up to 7 pounds in a week but you shouldn’t use it longer than a week. Basically the idea is that you eat one food and one food only for a week. I’m not sure if mint choco ice cream would work, you’re supposed to use as few additives as possible. i.e. The chocolate diet includes Hershey’s bars but not Reese’s cups.

    What about adding in a small amount of spinach to make it green instead of food colouring. I’m made a banana based chocolate chip mint ice cream which has spinach in it and its delish. Can’t taste the spinach at all. Just got a Vitamix so definitely going to try this recipe thanks 😀

    Hi, Katie!

    I recently drove past a McDonald’s and saw their sign for the seasonal shamrock shake, which I used to loooooove when I was a kid. So I came to your site to find a yummy alternative and found this page.

    Question: when you’re using your Vitamix to blend the frozen mixture, do you use your tamper? Or start on a low setting and blend it, and then increase the speed, or blend and then turn it off and scrape down the sides and blend some more, or …? I’m just wondering because I tried doing the blending part tonight and it got stuck under the blades very quickly. I’m new to the Vitamix so maybe I did it wrong? The taste is still VERY yummy, but I had trouble getting it to blend as nicely as yours looks. Instead it looked kind of “crumbly” if that makes any sense?

    Any advice for how I can do it better next time?

      Yes, definitely use the tamper! And process on HIGH. It should definitely not get stuck, and if absolutely necessary you can turn the Vitamix off and use a spoon to mix it, then reblend until it is all processed in the machine. 🙂

    Hi there. I am 50years old with a husband and 2 boys. I have followed a healthy lifestyle for most of my life, my family feels a little too rigid at times. I started following you about a year ago. Saving your recipes making them. Fooling friends and family. Most of my photos on my phone are of your recipes. The other day I asked myself what am I doing. I owe it to this beautiful young lady to purchase her book. It’s the least I can do. And so I did. It arrived. I love it.
    My question to you is if all the recipes you post are from the book or are they new and do I need to continue clicking with my camera.

      Aw hi Pamela! Thank you so incredibly much! Most of the recipes on the blog are different from the ones in the book to ensure people who buy the book get their money’s worth 🙂

      My newer recipes have print options, and I’m working on a more user-friendly site so hopefully the old ones will soon have a print option too!

    Has anyone actually tried making this? It doesn’t taste like anything to me and is hard as a rock. I used an ice cream maker and coconut milk (from a can). What am I doing wrong?

      What sugar did you use, and what brand of coconut milk and peppermint? I love this recipe and the plain coconut ice cream recipe, so it definitely is good when it works.

    Can I use Peppermint Leaves instead of peppermint Extract? If so how manny peppermint leaves should I use so that I can taste the flavor?
